The best oversized triple choc chunk cookie.

All of us have a food thing; that weird, strange and sometimes ugly food hang up or quirk that often shouldn't be witnessed by others. For me it's a fear of missing out. And, just to clarify, missing out on dessert. Oh the torture. Or in the words of Kim K "it gives me real (as opposed to fake Kimmy?) anxiety".

Go to dinner with me and it's a spoons drawn at dusk type scenario; your dessert is my dessert, it's fair game or the angst ensues. So this is perfect. Its nothing particularly fancy, far from it. It's a humble, is-what-it-is dessert.

One big ass triple choc chunk cookie warm from the oven heaped with a crown of melting ice cream that deserves you, your friends (just the good ones I suggest) and multiple spoons. Or you could skip all others and just help yourself, it's big enough you could safely rest your head on the leftovers and call it a day.

Serves 8-12

Ingredients

430g plain flour, sifted

 1 ½ tsp bicarbonate soda

pinch of salt

250g butter, unsalted, at room temperature

230g light brown sugar

200g caster sugar

2 eggs

1 tsp vanilla bean extract

200g chocolate (I used a mix of white, milk and dark coverture)

Ice cream and many spoons to serve

Method

Preheat the oven to 180C.

In a bowl whisk together the flour, bicarbonate soda and salt and set aside.

Cream the butter and sugars together until pale and creamy. Add the eggs and vanilla. Gently add the flour mix and stir until just combined. Fold through the chocolate chunks and ensure the dough has come together.

Grease a baking dish, I used a 25cm based dish but use whatever you have on hand, if smaller you may need to cook longer to account for thicker dough. Add the dough to the base of the dish and gently push out to flatten.

Place in the oven and cook for about 30 minutes, you want the cookie to be crisp on top and just cooked through – it will be thick and dense so keep an eye on it.

While still warm, scoop generous amounts of vanilla bean ice cream (or whatever flavours you choose) on the centre. Place in the middle of the table with plenty of spoons and enjoy.
