Akara (Fried bean cake ) is a Nigerian breakfast recipe made with ground dehulled brown or black-eyed beans. It is a very popular snack that can be eaten anytime of the day. Although Akara is popular as a breakfast meal, it can also be eaten as a snack or taken with Pap(ogi), custard or Agidi(eko) as a light dinner.
Nigerian Akara Recipe and Ingredients
- 1 cup of brown or black-eyed Beans
- 2 scotch bonnet or habanero peppers(atarodo)
- 1 small onion bulb
- 1 table spoonful ground crayfish(optional)
- 1 stock cubes(knorr or maggi)
- Salt to taste
- Vegetable Oil for frying
Preparation for Frying Directions for Nigerian Akara
**First, you need to soak the beans in water for 3 hours and then wash the beans and peel of the coat. Let the peeled beans soak in clean water for an extra two hours, to help soften it a bit.
**Pour the beans into a powerful blender;add crayfish, stock cube,onions and pepper. Blend the mixture, until you get a smooth but thick consistency.You can add just a little water to the blender, to help it blend easily.Make sure to blend in batches, so that you wont get granules and bean lumps.
Now to prepare the Nigerian Akara....
*Pour the blended beans mixture into a bowl, taste for salt and add a little if needed.Mix thoroughly and set aside
*Pour the vegetable into a deep pot or frying pan; the oil shoud be deep enough to cover an egg, that's like 3 inches deep.
Heat up the oil until hot,but not extremely hot, so that the Akara does not just cook on the outside without cooking on the inside.
* Using a tablespoon, Scoop the blended beans mixture and drop it gently into the hot oil.
You can drop a little of the beans mixture into the oil to test the heat;If it browns instantly, then the oil is too hot, but if it sizzles and still has a white colou , then it is at the right temperature.
*Fry the Akara until brown and make sure you flip it over so that both sides brown at the same time.
Transfer the Akara into a sieve lined with paper towel, to help absorb the excess oil.

Black Eyed Peas Fritters are (Akara) a very delicious, vegetarian friendly meal eaten in most parts of Africa. Though it's origin is from the yoruba tribe of Nigeria but somehow it has found it's way to the hearts of other African countries and even beyond.

Mama's Instructions:
"You can ground it with onion and pepper ... then you add salt and then you fry ... but make sure the oil is not very hot so it will cook nice."
Make sure you roll the beans into a ball shape before throwing into the oil. There's no real time limit for cooking - just brown each side well well and then drain the oil and serve!
Akara comes in all different shapes and sizes but should cost about 10 Naira.

** Akara Recipe Tips **
The following are all you need to know about how to make akara:
1. Do use freshly washed beans if you can. Akara made with these taste better than those made with beans flour. Refrigerated or frozen beans is a no-no. I tried it and everything spattered in the vegetable oil.
2. Do use a mortar and pestle to smoothen the beans puree and evoke the gas that will act as a leavening agent in the Akara. This helps the Akara float in the oil and stay together during frying.
3. Do add salt just before you fry the Akara. If you add salt too early and leave the beans puree to sit, it destroys the leavening property of the beans and your Akara will spatter once it hits the hot oil.
4. Do add as little water as possible when grinding the beans. You have the opportunity to add more water after smoothening with the mortar and pestle. The thicker it is at the time of smoothening, the better. In Nigerian markets, the operators of the heavy duty blenders do not even add water to the beans. But with a home blender, this is not possible but add water sparingly.

Acarajé [akaɾaˈʒɛ] (
listen) is a dish made from peeled black-eyed peas formed into a ball and then deep-fried in dendê (palm oil). It is found in Nigerian and Brazilian cuisine. The dish is traditionally encountered in Brazil's northeastern state of Bahia, especially in the city of Salvador, often as street food, and is also found in most parts of Nigeria, Ghana and the Republic of Benin.
It is served split in half and then stuffed with vatapá and caruru – spicy pastes made from shrimp, ground cashews, palm oil and other ingredients. The most common way of eating acarajé is splitting it in half, pouring vatapá and/or caruru, a salad made out of green and red tomatoes, fried shrimps and home made hot sauce. A vegetarian version is typically served with hot peppers and green tomatoes. In Nigeria, it is commonly eaten for breakfast with gruel made from millet or corn.
Akara (as it is known in southwest and southeast Nigeria) was a recipe taken to Brazil by the slaves from the West African coast. It is called "akara" by the Igbo people of south-eastern Nigeria and in the Yorubaland of south-western Nigeria, "kosai" by the Hausa people of Nigeria or "koose" in Ghana and is a popular breakfast dish, eaten with millet or corn porridge.

Preap Sovath (ព្រាប សុវត្ថិ) (also spelled Preap Savat) (born May 25, 1975) is a singer in Cambodia. He records for Cambodian production company Rasmey Hang Meas.
Preap Sovath performs the style of music known as "Khmer Karaoke", the name derives from the fact that most sales are of VCDs rather than CDs and all VCD film clips come with karaoke-style subtitled lyrics.
Preap Sovath generally eschews strictly traditional Khmer songs and musical styles, instead his music is modern style for Cambodia's youth. He performs on many televised anthology-style live concert programmes and holds residencies at Phnom Penh's nightclubs. He has also released a compilation album Do Re Mi with Kim Leakhena.
Best of the Best: Live Concert is a concert performed annually since 2004 at a football(soccer) stadium by Cambodian singers including Raksmey Hang Meas and Preap Sovath. The concert is free to the public; the sales of the DVD or CD cover the costs.
MTV EXIT Concert Preap Sovath took part in MTV EXIT Concert in Phnom Penh on December 12, 2008. The concert is part of a campaign to raise awareness to end exploitation and human trafficking in Asia.

Akara made with these taste better than those made with beans flour. Refrigerated or frozen beans is a no-no. I tried it and everything spattered in the vegetable oil. 2. Do use a mortar and pestle to smoothen the beans puree and evoke the gas that will act as a leavening agent in the Akara. This helps the Akara float in the oil and stay together during frying. 3. Do add salt just before you fry the Akara. If you add salt too early and leave the beans puree to sit, it destroys the leavening property of the beans and your Akara will spatter once it hits the hot oil. 4. Do add as little water as possible when grinding the beans. You have the opportunity to add more water after smoothening with the mortar and pestle. The thicker it is at the time of smoothening, the better. In Nigerian markets, the operators of the heavy duty blenders do not even add water to the beans. But with a home blender, this is not possible but add water sparingly. Akara (Fried bean cake ) is a Nigerian breakfast recipe made with ground dehulled brown or black-eyed beans. It is a very popular snack that can be eaten anytime of the day. Although Akara is popular as a breakfast meal, it can also be eaten as a snack or taken with Pap(ogi), custard or Agidi(eko) as a light dinner.
Nigerian Akara Recipe and Ingredients
- 1 cup of brown or black-eyed Beans
- 2 scotch bonnet or habanero peppers(atarodo)
- 1 small onion bulb
- 1 table spoonful ground crayfish(optional)
- 1 stock cubes(knorr or maggi)
- Salt to taste
- Vegetable Oil for frying
Preparation for Frying Directions for Nigerian Akara
**First, you need to soak the beans in water for 3 hours and then wash the beans and peel of the coat. Let the peeled beans soak in clean water for an extra two hours, to help soften it a bit.
**Pour the beans into a powerful blender;add crayfish, stock cube,onions and pepper. Blend the mixture, until you get a smooth but thick consistency.You can add just a little water to the blender, to help it blend easily.Make sure to blend in batches, so that you wont get granules and bean lumps.
Now to prepare the Nigerian Akara....
*Pour the blended beans mixture into a bowl, taste for salt and add a little if needed.Mix thoroughly and set aside
*Pour the vegetable into a deep pot or frying pan; the oil shoud be deep enough to cover an egg, that's like 3 inches deep.
Heat up the oil until hot,but not extremely hot, so that the Akara does not just cook on the outside without cooking on the inside.
* Using a tablespoon, Scoop the blended beans mixture and drop it gently into the hot oil.
You can drop a little of the beans mixture into the oil to test the heat;If it browns instantly, then the oil is too hot, but if it sizzles and still has a white colou , then it is at the right temperature.
*Fry the Akara until brown and make sure you flip it over so that both sides brown at the same time.
Transfer the Akara into a sieve lined with paper towel, to help absorb the excess oil.
