Me and CG have been cooking up yuca with garlic and onion for years, inspired by our favorite Cuban restaurants in Florida. Cassava cake ingredients
500 grams/1/2 kg fresh Cassava
200 ml evaporated milk/fresh milk
4 tablespoons white sugar
How to make cassava cake
Peel the cassava then scrape it.
Remove cassava juice
In a bowl, combine grated cassava, 2 tbsp sugar and evaporated milk. Mix well then set aside
In a mold/tin, put in 1 tbsp sugar. Set over heat until melted and golden in color.
Allow to cool down and harden.
Pour the mixture into prepared mold/tin
Steam in a pan for about 40-45 minutes
Remove from pan, allow to cool down
Turn steamed cake over on a plate
Cut in desired shape
Serve and enjoy the delicious cassava cake

Ingredients for this Cuban-Inspired Yuca Recipe
YUCA (about 1 lb.)
1 Lg ONION (diced)
5-10 cloves GARLIC (finely chopped)
OIL for sauteing the onion and garlic
RED PEPPER FLAKES to taste
2-3 Tbsp CUMIN
½ cup OLIVE OIL
juice of 1 LEMON and zest
SALT to taste
CUMIN SEEDS (1 tsp, optional)
…I’ve got lots of yuca, so in the video I’m doubling this recipe
How To Cook Yuca Recipe
Using a sharp knife, cut the yuca into manageable sizes and carefully cut away the outer skin of the yuca root. The skin is inedible and should be discarded.
Place yuca pieces into a pot of water and bring to a boil. Yuca should never be eaten uncooked.
Reduce heat and simmer 15-20 minutes or until yuca root can be pierced easily with a fork. Do not overcook!
Yuca pieces should not be mushy. Drain yuca and cool with water.
Remove fibrous stem from center of root and cut into 1 inch chunks.
Heat oil in a skillet.
Add garlic and onion and let simmer for a several minutes.
Add red pepper flakes, cumin, and salt to taste.
Add yuca.
Mix and allow all to simmer for 5 minutes. Give the yuca an occasional stir. Add a bit of water if needed, but not too much.
Remove from heat and add lemon juice and zest.
And that's it!
Yucca is an excellent substitute for potato. It goes great with any meat entree, and makes a great vegetarian meal when paired with stuffed peppers and a crisp green salad.

Tapioca is not keto-friendly. Another name for cassava is yuca. Cassava or yuca is not keto-friendly.
Cassava also contains very small amounts of vitamin B1 (thiamine). This is a problem because anytime you have something with a lot of carbs and low vitamin B1, you can create a vitamin B1 deficiency. This happens because it takes vitamin B1 to metabolize carbs.

In 2009, Nigeria was producing over 45 million tonnes, almost 19% of global production, making Nigeria is the largest producer and grower of Cassava in the world.

According to some statistics - 90% of Nigerian households consume some type of cassava product every day - and we can believe it!
We all eat cassava is various forms - garri, starch, amala, cassava flour, roasted, fufu, and tapioca - everyday without knowing how it's actually grown and processed.
Cassava in Nigeria agriculture originally came from South America and introduced into sothern Nigeria during the slave trade. In the 19th century salves began to return to Africa and introduced new processing techniques.
Cassava farming in Nigeria is the main staple for foods across Nigeria and West Africa. And in many small villages this type of small scale agriculture and farming is the main means of earning a living.
"Cassava production is the major profession in this village," explains one your woman. "I had to join them in cassava production just to earn money."
Throughout the village, men and women farm the plants, peel and process (washing and soaking the cassava for two to three days), grinding, and then the cassava is pressed in clean bags for the water to dry. If you want garri, the cassava is then fried. Young children load the tubers into trucks for sale. It's not as easy as it looks, as Folly finds out: she manages to peel just one tuber to the other ladies ten.

But every part of the cassava plant is used, whether the peelings are fed to livestock, or the flower used in soups or health and hair products.
"We employe people to peel the cassava for us," says one young woman. "It must be peeled on time, and we pay 50 Naira per basket."
"They're seriously trying," explains Folly, BattaBox presenter. "This is hard work."
