Spring is a special time of year for turkey hunters. With calling and strategic decoy placement, these lucky hunters double up on two mature Georgia gobblers. After harvesting the game, it is time to prepare them. Here is a great way to prepare your next wild turkey! •2 tablespoon vegetable oil •1 small onion, finely chopped •1 jalapeno, seeded, deveined, and minced •1 clove garlic, crushed •1 and 1/2 pounds ground turkey •2 large eggs, lightly beaten •1/4 cup ketchup •1 tablespoons soy sauce •1 teaspoon salt •½ teaspoon black pepper •1/3 cup breadcrumbs, •4 slices bacon, cut in half Prepare the Egg to cook indirect at 350°. In a medium skillet over medium heat, heat the oil. Add the onion, jalapeños, and garlic and cook, stirring occasionally for 5 minutes or until the onion begins to soften. Remove from the heat. Transfer to a plate and set aside to cool. Crumble the turkey into a large bowl. Add the eggs, ketchup, soy sauce, salt and pepper. Using your hands, mix well. Add the cooled onion mixture and mix well. Add the breadcrumbs and mix well. Divide the mixture among 4 mini meatloaf pans. Top each loaf with two half slices of bacon. Place the loaves on the Egg and cook for 45 minutes or until they reach an internal temperature of 160°. Remove from the heat and let rest for 5 minutes.
