Juglans regia - Van den Berk on Trees
Has been cultivated for many centuries and grows to become a large tree approx. 30 m tall. The almost round crown consists of heavy branches. The old trunk is light grey with deep, irregular vertical grooves. The imparipinnate leaves grow to a length of 20 - 30 cm and have 2 - 4 (6) opposing pairs of leaflets. The leaf segments are ovoid to oval, approx. 8 - 12 cm. After the appearance of the leaves the large male catkins (approx. 7 cm) and the smaller female flowers appear, the latter in groups of 2 or 3. The green, almost round fruit has a smooth husk that has short gland-like hairs at the beginning. The light brown nut is grooved. Very tasty. Cracking Butternuts or White Walnuts Juglans cinerea
Quick breakdown of how I crack butternuts, which is similar to black walnuts. These are a delicious, buttery nut that are actually illegal to harvest in Minnesota, but legal in Wisconsin, which is because of the trees being protected as they're attacked by butternut canker.
Butternuts fall earlier than black walnuts, and I harvested these in September, where black walnuts I might get in October up here in the NorthI. After harvesting I dried them a couple layers deep in cardboard boxes in the garage. Keep the squirrels away from them.
After a month or two they were dry enough to crack. It took me a few tries, but this is the best method I found so far. Take a hammer, do it on a sturdy surface, I'm using a table here, but it's not ideal, get outside and do it on a rock, or some other su...

Black Walnut (Juglans nigra) trees were planted all over rural Idaho because they are cold hardy, drought tolerant trees that produced edible nuts. They seeds were also easy to transport in the covered wagons that pioneers used. The meat of the nuts is hard to get , but some tricks evolved overtime to help speed up the processing.
I am demonstrating what was taught and explained to me by many older people I have talked with. Sadly, black walnuts are viewed mostly as a nuisance trees now days, that clutter the landscape with their dropped walnuts. Instead of being viewed as food, most of the nuts are discarded.

Juglans regia - Van den Berk over Bomen
Juglans regia is al vele eeuwen in cultuur en kan uitgroeien tot een forse boom van circa 30 m hoogte. De vrijwel ronde kroon is opgebouwd uit zware takken. Wanneer de boom volwassen is, is de oude stam lichtgrijs met diepe, onregelmatige verticale groeven.
Het oneven geveerde blad wordt 20 - 30 cm lang en heeft 2 - 4 (6) jukken. De deelblaadjes zijn eirond tot ovaal, circa 8 - 12 cm. Ná de bladontwikkeling verschijnen de groene, mannelijke katjes (circa 7 cm) en de kleinere vrouwelijke bloemen die in groepjes van 2 of 3 bijeen staan.
De groene, bijna ronde, vrucht heeft een gladde bolster die in het begin nog kort, klierachtig behaard is. De lichtbruine noot is gegroefd. Bijzonder smakelijk. Noten verschijnen pas bij circa 15 jarige exemplaren. Wortelt zeer diep en heeft liefst goed d...

Quick breakdown of how I crack butternuts, which is similar to black walnuts. These are a delicious, buttery nut that are actually illegal to harvest in Minnesota, but legal in Wisconsin, which is because of the trees being protected as they're attacked by butternut canker.

After the nuts are cracked, I use a snips to spot-treat the shells to reveal whole halves, which is a great trick Sam Thayer showed me (Sam discusses these nuts in his first book, The Foragers Harvest).
