The last time we visited Hua Hin, Thailand, I had no intention to eat a lobster. But then it happened, and I couldn't resist. There are all sorts of the usual vendors that sell t-shirts and jewelry, and little snacks to nibble on.... and then, there are the epic seafood vendor that try to lure you in for a lobster, monstrous prawns, fish, and everything else delicious from the sea. So with no intention of actually eating a lobster on this fine evening in Hua Hin, we got sucked and I felt the irresistible pull to order a monstrous 1.1 kg lobster - but I wasn't complaining! Has that ever happened to you? Anyway, we sat down at Lung Ja Seafood Restaurant (ร้านลุงจ่า), a restaurant I would recommend as one of the top restaurants in Hua Hin. It's located right along the street within the Hua Hin night market, and they have a nice selection of seafood and some very nice staff as well. We chose our lobster with precision and then it to the table to wait as they prepared it. The lobster is first blanched before being tossed on the grill. The chef had informed us that that is the way to cook it for maximum flavor and to ensure the lobster isn't rubbery, but rather soft and tender and juicy. Along with out monster 1.1 kg lobster in Hua Hin, Lung Ja Seafood Restaurant (ร้านลุงจ่า) also served an award winning plate of fried morning glory vegetable and a wonderful plate of khao pad boo (crab fried rice). Both of the sides dishes were excellent, but they were dwarfed by my anticipation of the lobster. The lobster arrived on a massive plate, covered in a number of different sauces. Order again, and I would have gotten it with the sauces on the side, to be able to really taste the unique flavor the the lobster, but that being said, the sauces were pretty good and didn't overpower the meaty flesh. In this video I show you how to prepare a fried seafood platter, just as it is done up and down the southern states along the Gulf of Mexico! Growing up, my family would occasionally go to some of the best restaurants on the Biloxi beach here in Mississippi, and I would always order the seafood platter, because it had some of everything, and I loved it all, as so many people do. Go over and check out "The Root Boy Cooks" here: http://www.youtube.com/user/rootboyslim https://www.facebook.com/smokyribs1?ref=hl https://twitter.com/SmokyRibs French Fries: Ingredients: 6 russet potatoes 4 tablespoons of white sugar 2 tablespoons of light corn syrup Salt to taste Directions: Cut potatoes into fries, and let soak in cold water for 10 minutes and rinse. This will remove much of the starch. Now heat enough water to cover fries, to a boil. Turn off heat, and stir in sugar and corn syrup until dissolved. Now let fries soak in this mixture for 10 minutes. Drain water well, and deep fry for 2 minutes. Drain fries on paper towels, and place on a rack, and place into the freezer for 20 - 30 minutes. Now remove fries and deep fry until golden brown at 350 degrees F Hush Puppies Ingredients: 1 box of Jiffy corn muffin mix 2 eggs ¼ cup of all purpose flour 1 teaspoon of garlic powder 1 teaspoon of onion powder ¼ teaspoon of sea salt ¼ teaspoon of cayenne pepper About 3 tablepoons of chopped green onions Directions: Mix all ingredients, but don't over mix. Heat oil up to 350 degrees F, and take a couple of spoons and spoon a small amount into the hot oil. Repeat until all the batter is used. Cook until golden brown, and flip as needed Fried Fish Ingredients: Seasoned corn flour Oil for frying (350 degrees F) Directions: I used Zatarains fish fry in this cook, and I have always used it. Coat your fish fillets with a light dusting of the corn flour, and then fry until golden brown. The fish will normally float when done. Fried Shrimp & Scallops For the Shrimp & Scallops, I used a combination of milk and buttermilk (50/50) and seasoned the milk with a cajun seasoning. I always use Essence of Emeril on fried seafood. Great flavor! A place all the shrimp into the milk mixture, and then one at a time, I will coat with a seasoned self rising flour (also seasoned with Essence of Emeril) then deep fry at 350 degrees F until golden brown. Note: All seafood taste even better, if you use cottonseed oil! Plus it will hold up to the heat better than most oils, and it has no flavor of it's own, to impart into the seafood, like vegetable oil will do. Fried Oysters Ingredients Oysters 1 egg ½ cup of beer Seasoned self rising flour Directions: Mix the 1 egg with the beer, and now dip each oyster into this egg beer mixture, and then lightly coat with the seasoned self rising flour, and fry until golden brown at 350 degrees F. Drain on paper towels and enjoy! Crab Cakes Ingredients: 1 pound picked crab meat 1 chopped onion 3 stalks of celery 1 clove garlic, finely chopped 3 springs thyme 3 springs parsley 1/4 teaspoon of red pepper flakes 1 cup of bread crumbs soaked in milk Butter Directions: Heat a saute pan with a tablespoon of butter added and when hot, add the vegetables, chopped fine, and the seasonings. Saute for 10 minutes, the remove and let cool. Add the crab meat and the bread crumbs (squeeze to remove most of the milk) mixing gently so as not to break up the crab meat to much. Form into cakes and deep fry until golden brown. Note, they may take on a darker color than most seafood. Darker than golden brown. "Music courtesy of Audio Network"- published: 26 Oct 2013

Ah Ou Bangrak (ร้านอาอู๋ บางรัก) is a street food restaurants in Bangkok that's known for their Chinese street food. Get all the details here: http://wp.me/p4a4F7-2sI One evening in Bangkok, we decided to go to an area of Bangkok known as Charoen Krung, a bit south of Saphan Taksin, to eat at a restaurant known as Ah Ou Bangrak (ร้านอาอู๋ บางรัก). When my wife told me they served Chinese street food in Bangkok, and specialized mostly in seafood dishes, I knew we had to go immediately. The restaurant opens up at about 5 pm in the evening, and in order to take advantage of the good light, and also to beat the main dinner crowds (this restaurant can get really busy), we arrived as soon as they pretty much opened. Ah Ou Bangrak (ร้านอาอู๋ บางรัก) specializes especially in Chinese food, and lots of seafood. The menu included a huge range of different dishes, and they all looked and sounded amazing. One of the things I noticed that nearly every table eating at this restaurant in Bangkok ordered was something known as hoy jaw (หอยจ้อ), which are sort of like deep fried pieces of dim sum. I think it was a mixture of crab and shrimp and pork, all encased in a small wrapper and then deep fried to a crisp on the outside. They are extremely popular at Ah Ou Bangrak (ร้านอาอู๋ บางรัก). I myself, didn't like them extremely much because the texture was a little on the mushy side. So the hoy jaw (หอยจ้อ) was probably my least favorite dish of the meal. Moving on to bigger and better Chinese street food dishes, we ordered a nice spread of seafood when we ate at Ah Ou Bangrak (ร้านอาอู๋ บางรัก). Probably my favorite dish of the meal was kra por pla pad haeng (กระเพาะปลาผัดแห้ง), or fish maw stir fried dry with shrimp, egg, and bean sprouts, and a few other random ingredients. It was absolutely fantastic, the fish maw was sort of spongy in texture, but it was soft and not chewy. All the flavor was soaked up by the fish maw - you have to order this dish if you eat here. Next we also tried tao hoo nam daeng (เต้าหู้น้ำแดง), which is Thai Chinese style tofu in gravy. The tofu was deep fried first, so it had a nice skin on it, then submerged in a flavorful gravy that included nice bits of seafood like shirmp and crab. It was also fantastic. It's really rare that I get to eat razor clams in Bangkok, especially when I'm eating street food, but we ordered pad nor mai farang (เป๋าฮื้อเส้นผัดหน่อไม้กุ้งสด), razor clams with asparagus. The razor clams were so meaty and so delicious and paired with mushrooms and the fresh and crisp asparagus, it was extremely tasty. Finally to wrap up our Chinese Thai street food Bangkok feast we ordered mee Hong Kong pad haeng (หมี่ฮ่องกงผัดแห้ง), Hong Kong style fried noodles. This dish at Ah Ou Bangrak (ร้านอาอู๋ บางรัก) was also spot on. The noodles were fried dry, and not too oily. They were slightly crispy, perfectly salty, and just complimented all the other dishes on the table. This was for sure one of the better plates of stir fried Chinese style rice noodles that I've had in Bangkok in a long time. Overall I thought the food at Ah Ou Bangrak (ร้านอาอู๋ บางรัก) was superb. It's a street food restaurant in Bangkok, but they serve high quality food and delicious seafood dishes. I would highly recommend this restaurant. An alternative suggestion is that the name originates from two Thai words, phu (mountain) of ket (jewel), and this is said to be recorded in a Thai chronicle. The region was formerly referred to as "Thalang," (ถลาง) derived from the old Malay "Telong" (Jawi: تلوڠ) which means "Cape". The northern district of the province, which was the location of the old capital, still uses this name. The island of Phuket was originally named Jung Ceylon on European navigation charts, a corruption of the Malay Tanjung Salang meaning Cape Salang. One of the main shopping malls in the town of Patong in Phuket is accordingly thus named. Phuket is the biggest island in Thailand, located in the Andaman Sea of southern Thailand. The island is mostly mountainous with a mountain range in the west of the island from the north to the south. The mountains of Phuket form the southern end of the Phuket mountain range, which ranges for 440 kilometres (270 mi) from the Kra Isthmus. Although some recent geographical works refer to the sections of the Tenasserim Hills in the isthmus as the "Phuket Range", these names are not found, however, in classical geographic sources. In addition, the name Phuket is relatively recent having previously been named Jung Ceylon and Thalang. The highest elevation of the island is usually regarded as Khao Mai Thao Sip Song (Twelve Canes), at 529 metres (1,736 ft) above sea level. However it has been reported by barometric pressure readings that there is an even higher elevation (with no apparent name), of 542 meters above sea level, in the Kamala hills behind Kathu waterfall. Its population was 249,446 in 2000, rising to 525,018 in the 2010 decennial census, the highest growth rate of all provinces nationwide at 7.4% annual, some 600,000 people reside in Phuket currently,[12] among them migrants, international expats, Thais registered in other provinces and locals. The registered population, however, includes only Thais, and the end of 2012 was 360,905 people.[13] It is estimated that Phuket has a total area of approximately 576 square kilometres (222 sq mi) (including the province's other islands). Phuket is approximately 536 miles (863 km) south of Bangkok, and covers an area of 543 square kilometres (210 sq mi) excluding small islets. Other Islands are : Ko Lone 4.77 square kilometres (1.84 sq mi), Ko Maprao 3.7 square kilometres (1.4 sq mi), Ko Naka Yai 2.08 square kilometres (0.80 sq mi), Ko Racha Noi3.06 square kilometres (1.18 sq mi), Ko Racha Yai 4.5 square kilometres (1.7 sq mi), and the second biggest, Ko Sire 8.8 square kilometres (3.4 sq mi) (It is also the 2nd most popolated in Mu Ko Phuket. Before I went to the wholesale area of the market, I ate a sashimi rice bowl at one of the famous restaurants. My belly was very satisfied and I then walked around the wholesale fish market for a couple of hours before heading to the outer edge of the market - which by the way has a lot of awesome restaurants and Japanese street food things to eat around there too. I thoroughly enjoyed walking around outside market, but then we spotted something that looked truly remarkable, and we had to make an impulse purchase. It wasn't cheap at all, but it sure was amazing. I could hear the blowtorches from a ways away, and that's what first caught my attention. The vendor first took a giant scallop, cut it up with a pair of scissors, and then added a medley of different seafoods to the shell. There was an oyster, sea urchin, and the scallop of course, and then there was a white looking thing that I had never seen before. I really had no clue what it was, but I was about to find out. So I waited in line for a few minutes, and then paid, and got my beautiful fresh seafood Japanese street food treat. Though it was cooked for just a few seconds with that blowtorch, it was completely hot, and just smelled of complete freshness. Being a seafood lover, I couldn't wait to start digging in. There wasn't any seating, but there were a few styrofoam boxes where you could actually set your shell down and start diggin in. I started with the scallop first, which was amazing, incredibly soft and sweet and fleshy. The oyster was equally marvelous, meaty and big and juicy. The uni sea urchin was also quite good, tasted a little bit like a ripe cheese, with a slight burn on the top to give it some nice flavor. Since I didn't know what the white stuff was on my show, I decided to try that as the last thing. It was definitely a little bit on the slimy side, and it actually kind of tasted like cream cheese but even creamier. It actually didn't have a lot of flavor other than cream cheese. I proceeded to finish my entire Japanese street food seafood shell, and it was sensationally delicious. It was definitely only for you if you love seafood, and if you like seafood you'll for sure love this. Everything was extremely fresh and straight from the market itself. And again just like all Japanese food, this seafood wasn't overcooked at all, but just lightly cooked and it remained nice and juicy and flavorful. When I returned to my hotel that evening, we did some quick research, and discovered that the mysterious white thing on my shell was known as shirako, which translates to cod sperm. Apparently during the winter season in Japan, shirako is quite the delicacy. I've got to admit, it wasn't my favorite thing on my shell, but it wasn't bad, and I would definitely eat it again. If you visit the Tsukiji fish market and need an awesome little treat, you'll find the number of vendors selling these scallop treats. At 800 JPY ($7.81), this wasn't the cheapest street food snack, but it sure was worth it.
