Choumicha : Tourte à la crème pâtissière - Gâteau Basque

Ingrédients Pour la pâte : 300 g de farine 180 g de sucre semoule 1 sachet de 7 g de levure chimique 200 g de beurre à température ambiante 3 jaunes d'œuf 1 œuf entier 2 pincée de sel Pour la crème pâtissière : 4 jaunes d'œuf 50 g de Maïzena 1 sachet de sucre vanillé Le zeste d'un citron râpé 50 cl de lait 60 g de sucre Pour la dorure : 1 jaune d'œuf 2 gouttes de vinaigre Pour le décor : 1 c. à soupe de sucre glace Préparation : Travailler le beurre et le sucre pour avoir un mélange crémeux. Rajouter les jaunes d'œuf et l'œuf entier et mélanger. Incorporer la farine, la levure chimique et le sel en travaillant tous les ingrédients pour avoir une pâte homogène. Diviser la pâte en 2 boules (une boule doit être un peu plus grosse que la deuxième). Étaler les deux boules de pâte entre deux feuilles de papier sulfurisé et les placer au réfrigérateur pendant 30 mn. Tapisser un moule à tarte avec la grande abaisse de pâte. La garnir de crème pâtissière et la recouvrir avec la 2ème abaisse de pâte. Appuyer avec les doigts sur les bords du moule pour enlever l'excédant de pâte. Mélanger le jaune d'œuf avec les deux gouttes de vinaigre et en enduire la surface de la tourte. Pratiquer un trou au milieu de la tourte pour permettre à la vapeur de s'échapper pendant la cuisson. Décorer la tourte avec les pointes d'une fourchette. Cuire la tourte au four préchauffé à 180°C pendant 45mn environ. Sortir la tourte du four et la laisser refroidir complètement avant de la démouler. Saupoudrer de sucre glace avant de servir. Bon à savoir : Pour préparer la crème pâtissière : faire chauffer le lait avec la moitié du sucre. Mélanger les jaunes d'œuf avec le sucre restant, le sucre vanillé, le zeste de citron râpé et la Maïzena. Rajouter le lait aux jaunes d'œuf en mélangeant pour obtenir une préparation homogène. Faire cuire à feu doux et en remuant jusqu'à épaississement.
