It's a true sweet cloud, very difficult to resist. But let's see together what ingredients we'll need: • 2 cups (480 g) of egg whites that is the whites of about (12 extra-large eggs) • 1 big pinch of salt • 1 ¼ cups (250 g) of sugar • ½ tbsp (5 g) of cream of tartar, a leavening agent • 1/8 tsp (1 sachet) of vanilla powder or 1 tsp of vanilla extract • 1 1/5 cups (150 g) of flour Let's make together the angel food cake: First of all, take the egg whites out of the fridge and keep at room temperature or, if you're short of time, bring them to 110°F (45°C) in a bain marie, stirring with a whisk, but without beating. Now it's time to beat the egg whites until stiff, so use a planetary mixer, or a common electric beater, and let it run. As soon as the egg whites turn white, add the cream of tartar, then the sugar and the vanilla, one third at a time. To get this result, beat the egg whites for 10-15 minutes at medium speed. What would Valentine's Day be without something for your sweet-tooth? And since boxed chocolates are a little too risky for comfort, (you never know what's in those things) I can't think of anything better than a fluffy angel food cake with whip cream and strawberries...yumm. Angel food cake can be intimidating to approach when making it gluten free, but it's actually not that difficult! And we found a couple of tips that might help. Angel Food Cake 1/2 cup cornstarch 1/3 cup potato starch 1/2 tsp xantham gum 3/4 cup sugar 1/2 tsp salt 1 1/4 cup egg whites (I ended up using the whites from 9 large eggs) 1 Tbs water 1 tsp cream of tartar 2 tsp vanilla flavoring 1/3 cup sugar Tip: You want superfine sugar for this recipe; it will help make the cake lighter and fluffier. We used regular table sugar and ran it through a food processor for about 2 minutes to get it extra fine. Preheat oven to 350°. In a bowl, combine cornstarch, potato starch, xantham gum, 3/4 cup sugar and salt. In a separate bowl, combine egg whites, water, cream of tartar and vanilla. Using a mixer, beat until frothy. While beating the egg mixture, slowly add the other 1/3 cup of sugar. You'll continue beating the mixture until stiff peaks form. It should look glossy, and the peaks should stand up on their own. Then fold in the flour mixture and make sure you get out all the lumps. Tip: Be very gentle when you fold in the flour! You want the egg white mixture to keep as much of its airiness as possible <b>...</b>

Angel Food Cake: 1 1/2 cups of powdered sugar, sifted twice 1 cup cake or all-purpose flour, sifted twice 1 1/2 cups of egg whites (roughly 11 or 12 eggs) 1 1/2 tsp cream of tartar 1/4 tsp salt 1 tsp vanilla extract 1 cup sugar Sift powdered sugar and flour together. Mix egg whites, cream of tartar, salt and vanilla extract together in large bowl until soft peaks form. Add sugar two tablespoons at a time to egg mixture and beat until stiff peaks form. Sift 1/4 of the flour mixture over the egg mixture and fold in gently. Repeat until all flour mixture is blended. Pour into greased pan. Bake on lowest rack at 350 degrees Fahrenheit for 40 minutes. Cool completely before removing from pan. Filling: 1 package instant vanilla pudding 1 can crushed pineapple (undrained) 1 cup thawed Cool Whip Mix pudding powder with pineapple. Add Cool Whip and stir gently. Preparation: Cut cake into layers. Add filling between each layer and to top. Add berries of your choice to top and sides.

Originally aired as part of the "Dinner Party 3" episode on the Food Network, July 16th, 2005. Ingredients: • 1 (15-ounce) can mandarin oranges in light syrup • 1 (16-ounce) box angel food cake mix • 1 teaspoon orange extract • 1 tablespoon orange zest • 1 (8-ounce) container whipped topping Directions: Preheat the oven to 350 degrees F. Move a rack to the bottom position. Drain the mandarin oranges and reserve the liquid. Measure the reserved liquid and add enough water to equal 1 1/4 cups. Measure out 1 cup mandarin oranges, reserving the remaining oranges for garnish. In a large mixing bowl, combine angel food cake mix, mandarin water, orange extract and orange zest. With an electric mixer, beat on low speed for 30 seconds. Scrape down sides of bowl and beat on medium for 1 minute. Pour into angel food tube pan. Carefully place 1 cup of orange segments around top of cake batter. Bake for 35 to 45 minutes, or until top of cake is cracked, dark golden brown, and not sticky. Remove cake from oven and invert onto glass bottle to cool. Frost cake with whipped topping and garnish with reserved orange segments. Cook's Note: Excessive stirring will cause whipped topping to become watery.
