What on Earth Happened to the Acadians/Cajuns?
What on Earth happened to the Acadians, better known in most of the United States as the Cajuns? Hundreds of years ago, there was a distinct territory and culture that developed in North America that was a product of French imperialism, located in what is now modern day Canada. However, after conflicts with the British, their descendants had one of the most dramatic and interesting tales of trials and tribulations seen in any community in the US or Canada.
In today's video we're going to be discussing the history of the Acadians and what happened to their modern day descendants, such as the Cajuns, and how and why they ended up where they did, with many of these Acadian refugees ending up all across the globe. Thanks for watching!

This Cajun Restaurant Has a Year-Long Waiting List
In an unassuming building in Galliano, Louisiana, Alzina Toups makes some of the best food you’ll ever eat. But while her Jambalaya, fried shrimp and other garlic-laden Cajun staples are sure to bless your tongue and break your heart, they aren’t so easy to come by. Alzina doesn’t take walk-ins, and reservations—which book up a year in advance—can only be made by reaching her by landline.

Give us 25 minutes, and we will give you 350 years of history. Although there are three parts to this series, In part one, we move from France to Nova Scotia and eventually Louisiana. *Note: Within the first few minutes of this video, Dr. Barry accidentally says that Poitou, France is located on the Eastern side of France. Poitou is located on the Western side of France*. This was an honest mistake and could not be removed from the film due to technical difficulties. Thank you for your understanding.
This documentary covers over 300 years of history concerning the migration and development of modern day Cajuns. Our story starts in Poitou, France where persecution caused a group of French settlers to travel across the ocean to Nova Scotia, Canada. Here they established a new life for themselves and became known as the Acadians. Many years later as a result of English rule over the region, the Acadians were once again persecuted and forced to leave their homes and travel to many destinations. Several ended up in South Louisiana. Still known as Acadians, they thrived for many years in Louisiana until WWII. As a result of leaving the region to fight in the war, many for the first time met people outside of the Acadian community. The war galvanized the Acadians with Americanism. Now identified as Americans many returned home and slowly left the farms they were raised on to marry individuals outside of the Acadian culture. This led to the current race known as Cajuns. Although Cajuns are located throughout the world now, many still associate South Louisiana with the Cajun culture where the bulk continue to reside. This documentary in no way represents all of the events that helped shape the current Cajun culture. It is rather a synopsis of events that occurred which were part of the evolution of a culture which would become known as Cajun. I am sincerely appreciative to the three teams of multimedia students that contributed to this project. I would also like to thank the academic professionals, historians, trappers, and musicians that graciously contributed to this volume of work. Finally, I would like to thank the Target Corporation which provided the equipment to film and produce the film. My sincere hope is that you gain an appreciation of the Cajun people and that you come to understand the many aspects of the culture that are slowly fading such as; speaking French and living off the land as trappers, fisherman and farmers.

Louisiana - The US Explained
Among the swamps and bayous, marshes and forests, that sit at the mouth of one of the largest river systems on earth, sits a state unlike any other. It’s a cultural melting pot, sitting in the Deep South, home to one of the largest Black populations in the country, and more culturally connected to and shaped by France than any other state in the US. Its culture, history, geography, and society is vastly different from anywhere else in the country, and a world away from even its neighbors, it occupies an outsized role in the American imagination. Ten Commandments MUST be displayed in Louisiana schools
Starting Jan. 1, 2025, all public elementary, secondary and post-education schools in Louisiana must display the Ten Commandments in every classroom.
Critics vowed to challenge the law in court, calling it unconstitutional and warning that it will lead to religious coercion of students.
“The First Amendment promises that we all get to decide for ourselves what religious beliefs, if any, to hold and practice, without pressure from the government,” the Louisiana chapter of the American Civil Liberties Union, the Freedom From Religion Foundation and other groups said in a joint statement Wednesday. “Politicians have no business imposing their preferred religious doctrine on students and families in public schools.”

Steps -
Soak dried beans overnight or use drained canned beans.
Chop onions, celery, bell peppers, and andouille sausage.
In a medium-high pan, cook the sausage for 4-5 minutes or until seared and browned.
Remove the seared sausage from the pan and sauté onions and garlic in the same pan until fragrant with butter. Add the bell peppers and celery, and cook until they soften.
Add flour and cook until the flour is gone. Season and mix until well combined. Reintroduce the andouille sausage and add chicken broth with bay leaves.
Bring the pan to a boil, then add the beans and, if desired, smoked turkey. Reduce the heat to low and cook for 2 hours and 10 minutes, or until the beans and turkey are tender and the liquid thickens into a rich sauce. If the mixture becomes too thick, add more water or broth. Taste and adjust the seasoning as needed. Garnish with parsley and green onions, and serve with rice for a complete meal!
Tip - For a creamier texture, mash some of the beans against the side of the pot using the back of a spoon.

Does everyone in Louisiana drink all the time?

And does EVERYONE in Louisiana have a laissez faire attitude?
We’ll go over those tidbits, plus a whole lot more! So all yall grab a daiquiri and some crawdaddies, we’re going to unbox the state of Louisiana.

They love their crawfish here. Just like they love nature and their culture.
But Louisiana is much more than swampy crawfish stew. It’s actually a REALLY super diverse state, with lots of tough folks and there’s some real issues, too. It’s kind of like a foreign country within the United States. In order to really get to know the state of Louisiana, we have to look at the whole state and explore each and every area.
This is Louisiana. Now as you can see there’s a lot of different regions in this state. In fact, this might be the most diverse state when it comes to region by region differences. First off, they don’t use counties here. They’re called parishes. And just about each parish has its own distinct culture, and way of life and even accent. If you moved here, you’d likely be a little overwhelmed with the differences from region to region.
We’re gonna begin up here in Northern Louisiana.

The law requires a context statement to accompany the commandments, positioning the text as “a prominent part of American public education” from the late 17th century through the late 20th century. Schools have to use donated posters or spend donated money, rather than public funds, to purchase the displays.
