Tunisian Food: Jerbian Rice (steamed rice and vegetables)
Jerbian rice(روز جربي) Ingredients: 1. 2cups of rice 2. 2cups of parsley 3. 2pounds of shopped spinach 4. 1 shopped onion 5. 2 tbsps. of tomato paste 6. 2 tbsps. of olive oil 7. 1 clove of garlic 8. 1 tbsp. of Tabil(Tunisian spice : typically coriander, caraway, dried garlic, dried onion and dried chili ) 9. ½ tbsp. Paprika 10. ½ tsp black pepper 11. 1tbsp of Harissa 12. ½ pound of lamb meat 13. ½ pound of lamb liver If you are vegetarian you can dismiss the lamb meat and liver. I have also made this rice with: chick peas, green peas, carrots, potato and Chard. I usually start by mixing from 4 to 13 let the mixture sit while chopping the other ingredients (15 to 30 minutes )then mix the whole thing together , meanwhile I would have my water boiling on the stove , once all the ingredients mixed , I steam cook it for 45 to 1 h or until meat is cooked . Healthy and cooked from scratch every time. 'Taïm is not your average Middle Eastern joint' say Chef Einat, co-owner of NYC's most popular falafel eatery. With a truck, 2 Taïm locations, Balaboosta and another eatery on the way, Stefan and Chef Einat are bringing a fresh and different twist to the cuisines they serve. At Taïm, they're well known for their flavored falafels:
Green: with parsley, cilantro, mint (traditional)
Harissa: mixed with Tunisian spices (mild spicy)
Red: mixed with roasted red peppers
I got the Falafel Sandwich with Green Falafel after we did the interview/filmed and have been hooked ever since. Def. a must try if you're in NoLita, the West Village or can track down their truck (@TaimMobile)

"Cooking Quick & Simple" - Lablabi (لبلابي) (a Tunisian dish) with Slim K
Slim Khezri cooks Lablabi (لبلابي) : a Tunisian dish based on chick peas, small pieces of bread and a thin cumin-flavoured soup. It is commonly eaten in cheap restaurants. Partially-cooked egg is often added to the mix, along with olive oil, harissa, capers, olives, and sometimes tuna, garlic and vinegar. A traditional, but rarer, version, hergma is made with cows' trotters.
In Assyrian cuisine there is also a chick-pea based dish called lablabi. The version in Iraqi cuisine is boiled chick peas with some lemon juice, mainly eaten during winter as it is served hot.
Ingredients:
Servings: 8
2 cups dried garbanzo beans or 2 cups canned chick-peas
4 -6 garlic cloves, minced
1 tablespoon harissa
1 tablespoon cumin
salt, to taste
1 lemon, juice of
6 tablespoons olive oil
3 slices of day-old bread, preferably day-old French bread, broken into small pieces
Directions: Prep Time: 10 mins - Total Time: 50 mins
1 Wash chickpeas and soak overnight (if using dried).
2 If desired, rinse them again. In a large soup pot, cover chickpeas with water, bring to a boil, and cook until tender (ten to twenty minutes). ? Or start with two pounds of canned chick peas, drained and rinsed, and heated in four cups of water.
3 Add garlic, harissa sauce, ground cumin, and salt. Simmer for ten minutes. Immediately before serving: add lemon juice, olive oil, and bread crumbs. Serve hot.
