Cappelletti, burro salvia, sugo di arrosto, parmigiano (se si vuole usare il tartufo non si mette il parmigiano).
Per 4 persone:
400 gr di cappelletti
50 gr di burro
Salvia
qbSugo di arrosto
qb Parmigiano
Farcia cappelletti
500gr di prosciutto crudo
300 gr di mortadella
1 kg di vitello
1 kg di maiale
1 kg di pollo ruspante o faraona o cappone ( cosce )
20 spicchi di aglio
6 rametti di rosmarino
3 rametti di salvia
Vino bianco qb
Uova qb
Panna da cucina 300gr circa
600gr di Parmigiano 5 anni
½ Noce moscata circa
1 limone grattugiato
100gr lardo
Burro qb
Midollo di bue qb
Rosolare bene le carni tipo per tipo aggiungendo l'aglio il rosmarino(legato a mazzetto con lo spago) e la salvia ,bagnare con abbondante vino (quasi a coprire). Far evaporare tutto il vino e mettere la carne a scolare dall'olio. Deglassare bene le padelle di cottura con dell'acqua far ridurre e mettere da parte. Fare un fondo tipo potacchio con le carcasse del pollame. Macinare per due volte il prosciutto la mortadella e tutti i tipi di carne ben puliti da aglio e rosmarino. Mettere in planetaria aggiungere tutti i grassi e gli aromi ed il midollo ed impastare bene.
Per il Fondo di arrosto
4 carcasse di piccione
4 fegati di piccione
4 cuori di piccione
200 gr di brodo di ceci
300 gr di vino rosso
1 cipollotto
2 spicchi di aglio
1 rametto di timo
70 gr di olio extra vergine
100 gr di aceto di vino rosso
100 gr di aceto balsamico
200 gr di fegato grasso di anitra
1l litro di acqua
200gr di burro freddissimo
Rosolare le carcasse nell'olio, aggiungere il cipollotto, l'aglio, il timo, il fegato grasso, i fegati di colombaccio e i cuori.
Rosolare per due minuti e aggiungere i liquidi composti dal vino e dagli aceti.
Evaporare e unire il brodo di ceci e 1 litro di acqua.
Far bollire e ridurre della metà.
Filtrare il sugo premendo bene sulle carcasse e ridurre ancora se fosse necessario.
Montare con del burro ben freddo e aggiustare di sale e di pepe.
Per il brodo di ceci
2 kg di manzo da brodo
2 carote
1 cipolla
1 costa di sedano
100 gr di olio evo
1 porro piccolo
2.5kg di coda di manzo
2 kg di ceci bagnati
29 gr di sale
3 gr di pepe in grani
6 l di acqua
Saltare la carne in padella con un poco di olio e far raffreddare.
Mettere tutti gli ingredienti in un tegame capiente e far sobbollire per circa 12 ore molto lentamente.
Passare allo chinoix e ridurre ancora della metà.
Pasta per cappelletti
700 farina
300 semola
350 uova intere
250 tuorli
Impastare e far riposare per un giorno.
Stendere la pasta a 10 e tagliare in quadrati da 4,5cm di lato. Chiudere i cappelletti come nel video.
Cucinare i cappelletti in acqua salata, condirli con burro e salvia, un filo di sugo di arrosto, parmigiano. Servire.

la ricetta di oggi sono i Cappelletti alla Romagnola (I Caplèt), un piatto tipico della Bassa Romagna. Questa è una delle tantissime varianti che in Romagna è molto diffusa, ma si possono trovare anche con ripieni differenti.

Per 4 persone:
400 gr di cappelletti
50 gr di burro
Salvia
qbSugo di arrosto
qb Parmigiano
Farcia cappelletti
500gr di prosciutto crudo
300 gr di mortadella
1 kg di vitello
1 kg di maiale
1 kg di pollo ruspante o faraona o cappone ( cosce )
20 spicchi di aglio
6 rametti di rosmarino
3 rametti di salvia
Vino bianco qb
Uova qb
Panna da cucina 300gr circa
600gr di Parmigiano 5 anni
½ Noce moscata circa
1 limone grattugiato
100gr lardo
Burro qb
Midollo di bue qb
Rosolare bene le carni tipo per tipo aggiungendo l'aglio il rosmarino(legato a mazzetto con lo spago) e la salvia ,bagnare con abbondante vino (quasi a coprire). Far evaporare tutto il vino e mettere la carne a scolare dall'olio. Deglassare bene le padelle di cottura con dell'acqua far ridurre e mettere da parte. Fare un fondo tipo potacchio con le carcasse del pollame. Macinare per due volte il prosciutto la mortadella e tutti i tipi di carne ben puliti da aglio e rosmarino. Mettere in planetaria aggiungere tutti i grassi e gli aromi ed il midollo ed impastare bene.
Per il Fondo di arrosto
4 carcasse di piccione
4 fegati di piccione
4 cuori di piccione
200 gr di brodo di ceci
300 gr di vino rosso
1 cipollotto
2 spicchi di aglio
1 rametto di timo
70 gr di olio extra vergine
100 gr di aceto di vino rosso
100 gr di aceto balsamico
200 gr di fegato grasso di anitra
1l litro di acqua
200gr di burro freddissimo
Rosolare le carcasse nell'olio, aggiungere il cipollotto, l'aglio, il timo, il fegato grasso, i fegati di colombaccio e i cuori.
Rosolare per due minuti e aggiungere i liquidi composti dal vino e dagli aceti.
Evaporare e unire il brodo di ceci e 1 litro di acqua.
Far bollire e ridurre della metà.
Filtrare il sugo premendo bene sulle carcasse e ridurre ancora se fosse necessario.
Montare con del burro ben freddo e aggiustare di sale e di pepe.
Per il brodo di ceci
2 kg di manzo da brodo
2 carote
1 cipolla
1 costa di sedano
100 gr di olio evo
1 porro piccolo
2.5kg di coda di manzo
2 kg di ceci bagnati
29 gr di sale
3 gr di pepe in grani
6 l di acqua
Saltare la carne in padella con un poco di olio e far raffreddare.
Mettere tutti gli ingredienti in un tegame capiente e far sobbollire per circa 12 ore molto lentamente.
Passare allo chinoix e ridurre ancora della metà.
Pasta per cappelletti
700 farina
300 semola
350 uova intere
250 tuorli
Impastare e far riposare per un giorno.
Stendere la pasta a 10 e tagliare in quadrati da 4,5cm di lato. Chiudere i cappelletti come nel video.
Cucinare i cappelletti in acqua salata, condirli con burro e salvia, un filo di sugo di arrosto, parmigiano. Servire.
