Sucrose is broken down into glucose and fructose. Despite all the debate around fructose, what has been shown is that fructose inhibits the release of insulin by glucose. In people with impaired insulin function/sensitivity fructose can be beneficial as it stimulates the enzymes needed to bring sugars into the cells. According to Ray Peat, PhD, Potassium plays a vital role in delivery of glucose into the cell without causing a drop in blood sugar, that happens when insulin alone is used to perform this function. Fructose has the ability to by-pass fatty acid inhibition of glucose metabolism leaving it available for oxidation when glucose is not. The metabolism of diabetes involves the oxidation of fatty acids instead of glucose, suggesting that the ingestion of fructose would be appropriate in the management of metabolic dysglycemia. Instead Diabetics are encouraged to eat whole grains, beans and "complex carbs" (glucose) and avoid sugars. Ray Peat suggests that it is the fructose and sucrose that should be used instead because they will not cause the cascade of hormonal problems that glucose will. Fructose doesn't just increase glucose metabolism, but increases the whole metabolism. Some experiments have shown a 50% increase in metabolic rate. Honey and table sugar are also sources of sucrose. Other roles of fructose: Produces uric acid - uric acid is considered to be one of our main antioxidants! Fructose will increase cholesterol which is an important anti-oxidant in the body, is used to regulate insulin and important for cellular metabolism and the production of steroidal hormones. The primary sugar involved in reproduction, in the seminal fluid and the intrauterine fluid and in the developing fetus. The placenta turns glucose from the mother's blood into fructose. Glucose can move from the fetus back into the mother's blood, fructose cannot, resulting in high concentrations of fructose in the amniotic fluids Catalyzes the oxidation of glucose to carbon dioxide, helping cells use energy more efficiently.- published: 10 Feb 2012

This video animates a roll of stickers, it expresses the notion of loop that marks the beginning and end of a cycle, such as the day of the shooting from sunrise to sunset. The price tags of the roll are used like frames of a film. They tell the fictitious story of a little girl trapped in a void where she plays in a sequential and metamorphic manner. The backdrop of stickers is a real photo documentary of a beach in Tunisia, where the drawings of the stickers were shot. This system of window within a window allows to play on another dimension.

unedited classroom lecture 2-3-14 for BIO105....here is a little more detail on alpha and beta glucose: Here is a conversation I had with my mother-in-law Dr. Barb Gaddis, who is an organic chemistry professor at UCCS: Hi Barb, I was talking about alpha and beta glucose tonight to show the difference between cellulose and digestible starches, and to review more chemistry of course. I have always communicated alpha and beta folding in terms of proteins but had never really discussed it in terms of carbohydrates. I said that since the functional groups in the alpha glucose do not alternate along the chain of 6-carbon rings, the macromolecule is like a long, coiling chain that ends up forming a spherical shape like the starch granules we saw in the microscope in lab. The beta, in contrast, is set up like a fabric of straight strands connected into a sheet by hydrogen bonding. I showed them how this creates cellulose, which is not digestible by humans, and not even breakable by the plant itself. In other words, once cellulose is created, it can never be used as an energy source. I also mentioned that alpha and beta terms for bonding are common to many molecular arrangements. I used the example of y=mx+b, i.e. everyone knows what mx or b represents. Likewise in biochemistry, alpha and beta conjure a consistent meaning no matter what biological molecule you are investigating. Does that sounds good to you? Would you add anything to this? This is not something I normally talk about but it struck me for some reason this time. I am just not well-practiced in discussing it. Thanks, Maggie Hi Maggie, It sounds like a fun discussion. To me, this is a really neat demonstration of how a relatively small change can make a big difference. In alpha D-glucopyranose, the anomeric carbon is axial so the bonding with another glucose molecule at the oxygen on C-4 creates a coiled structure....a really neat demonstration for the presence of starch (alpha-glucose linkages) is to put it in solution and add a little bit of elemental iodine I2....the iodine is linear and it intercalates into the middle of the coil and turns blue-black.....really cool. The only difference with a-D-glucopyranose is that the anomeric bonding carbon is in an equatorial position, not an axial position. It bonds to the oxygen at the very same carbon (C-4) but because it is in an equatorial position it forms a long chain rather than a coil.... One relatively small difference -- difference in shape—difference in function and ability to use as a food source.....just think about how much food we would have if we had enzymes that could digest cellulose. If I didn't answer what you wanted, ask again.....I tend to go off on tangents because I think the relationship between structure and function is very cool. bg- published: 04 Feb 2014
