The story follows Dusty, a yoga instructor from Colorado, who is on a desperate rescue mission to save her crazy brother Derek, a conspiracy theorist who is convinced 'Osama bin Laden' (qv) is still alive, despite having been buried at sea. Turns out Derek is not so crazy after all, and that Osama has returned from his watery grave and is making an army of zombie terrorists. Brothers Mike and Tim McCall own a large ranch in Arizona, using the surrounding lands for grazing cattle. Stanley Cox and LeRoy Stanton sell this land to settlers who arrive to find it bone dry, as a dam on the McCall ranch controls the water. Among the settlers are John Dawson and his daughter Connie. The latter goes to the nearest town to take action, but Sheriff Ball tells him there is nothing he can do. Tim falls for Connie but Mike is unimpressed with her charms. While returning from a town dance, Tim discovers Stanton trying to dynamite the dam, and is killed in the ensuing gunfight. Stanton later sends his men to stampede the cattle while he and Cox blow up the dam. Despite the efforts of Mike and Sheriff Ball, the cattle are wiped out and Mike races to the dam and kills Stanton in a gunfight.

Maker's Mark, which I started drinking in high school, has a lot of wheat as its flavor grain. It's softer, sweeter. It's a lot easier. Four Roses, absolutely classic, Lawrenceburg, Kentucky. Four Roses makes an incredibly approachable, very, very easy drinker. Jim Beam where we used to go by the handle in college. My life has a history of alcohol. It's either a book I'm going to write or what you're going to write on my tombstone. There's a lot of ways you can get in, but, you know, ask your bartender. It never hurts. You know, I want to see somebody try new things and I will give them something that's going to be soft. It's not going to hurt. So, you can start a lot of different places, but that's a good place to start for whiskey for beginners.

What is bourbon? Bourbon is the classic American spirit, not the cigarettes, the actual whiskey itself. Bourbon is a corn based liquor with its own controlled methods of production that are legally classified in America and in other countries as well. Basically, bourbon is a corn liquor. It's a minimum of 51 percent corn in the mash bill which goes into the fermenter before it goes into the distillation process. It's made in America. It goes into new charred oak barrels. The different levels how heavily charred it is on the inside give the notes of caramel and vanilla which hapens when you toast oak. It spends a minimum of two years in the barrel. It comes off the still at a given proof and is then put into barrels at a different proof. It spends a minimum of two years to be called bourbon, and six years to be called Kentucky straight bourbon whiskey which means it's also barreled and bottled in Kentucky. A lot of people think it comes only from Bourbon County, in Kentucky, which ironically is a dry county. But, no, it can be made anywhere in America. It can be made in upstate New York or it can be made in Florida as long as it follows the actual legal regulations to be called bourbon. It's one of the largest selling whiskey categories. It's the biggest growing segment both in terms of mass producers and microdistilleries. It is a lot of people's introduction into drinking fine spirits, because it's easy. Well, it can be easy. It can be soft, sweet, and floral. Or it can be sharp, aggressive, and high proof. You can find really great examples of it for 20 or 30 dollars a bottle. It's a growth segment in our market. It's definitely something where you can have anything from your simple big producers - Jim Beam, Four Roses - all the way up through hand distilled micro tiny bottles that sell for 50 dollars for a 375. It was my first love in a lot of ways, and I'm very sorry to every woman that I've ever loved for being compared to liquor. It's definitely an easy spirit, straight forward, and when you need a whiskey sometimes nothing else will do but bourbon.

Cask strength, barrel strength, proof. What do all these things mean? Excellent question. Proof is a measurement of alcohol by volume in America. It's generally double. The proof is double the alcohol by volume. So a liquor at 80 proof is 40 percent alcohol by volume. A 100 proof is 50 percent alcohol by volume. Proof originated from the British Navy during the ages of empire, where you would have gunpowder and rum in the same hold. If the rum barrel breaks, your gunpowder is going to be more or less useless, but over a given percentage of alcohol, 57 percent alcohol, 114 proof, you can still ignite the gunpowder even though it's wet. There's enough alcohol in there that it starts off a reaction, and, you know, your gunpowder still burns. Your pirates still go down. So proof really only exists to this day in America. Some English and Scottish distilleries still use it, but generally people measure it in terms of alcohol by volume for the sake of international sales, and it's a lot less confusing. So a lot of stuff comes off at 80 proof. That's your standard. You know, that's your vodka proof, straightforward, easy-drinking. But there's a more interesting, you know, I mean more is more, so why stop at less? What we have is bonded whiskey. It comes off at about 100 proof, actually exactly 100 proof. And the proof system is still used for legal calcifications and classifications for bourbon. It has to come off at a given proof from the still and be barreled at a different proof. But bonded whiskey is a fascinating concept. Essentially it's kind of a tax evasion scheme. The tax man still gets his. Don't worry, but what it does is it allows you to defer paying your taxes down the line. What you do is you put it into barrels. You put it in a U.S. government bonded warehouse for the years it takes to mature your product. And you don't pay taxes on it until it comes out of the warehouse rather than when it's made. So to be bonded, it's going to come off at 100 proof, sit in the barrel four years. But you can also have, again more is more, higher proof whiskeys. This one, for instance, is 133.5 proof, which is 66.75 percent alcohol. It burns like the clap, and it's delicious. It's a very high proof liquor. You can smell it right away, you know, when you open the bottle. Even with this little whiskey in the bottle, I'm getting just the smell of alcohol all the way up. It comes out hot. Generally, you do want to dilute it a little bit or put it on ice. Put it on a rock. Proof is a measurement of alcohol by volume, and the cask strength generally just means that it hasn't been watered down to proof. That's the strength at which it came out of the barrel. It's usually going to be hot. It's usually going to be aggressive, and if you have a taste for that sort of thing, it's a delicious thing. And those are the basic facts about alcohol by volume or proof.

So when we talk about single and blended malts, we're talking about barley whiskeys. Single malts come from one area, single process, and then put directly into the barrel. Blended malts will take different expressions of different whiskeys made in different areas and blend them together to get a consist or unique taste. Single malts can be made anywhere, not just in Scotland, although most people think of Scotland when they think of single malt whiskey. It's something that really expresses the Teruya, the local flavor and character of where the crops are grown and the process by which you distill them. You can make single malt whiskey anywhere. There are American single malts, there are Japanese single malts, there are Indian single malts. The difference between the two is a question of the grower's art and the distiller's art. The single malt is going to reflect the place where it's grown, the method by which it's produced, whether it's put in a column still or an Olympic copper still, whereas a blended whiskey happens after everything has been made, after everything has been distilled. It is then blended to taste and can be aged afterwards. This whiskey, the Hibiki twelve year blended, is blended from a variety of different Japanese single malts and then is put into barrels for twelve years to sort of marry and intermingle. Whereas this single malt, from upstate, is grown in the Hudson Valley, distilled there. It expresses notes of smoke, stone and earth, whereas the Hibiki is a lot lighter, softer, a little more floral, reflecting the different barley's that it is grown from in Japan. In essence, the difference between single malt and blended is manufacturing technique. They're both aged, one's as good as the other depending on the quality of the ingredients that go into it. But really when you're talking about single malt and blended, you're talking about barley whiskeys, scotches, things like that. That's a quick rundown of blended versus single malt. [music]
