Nyama choma, roasted meat, is one of the most beloved things to eat in East Africa. Read more deliciousness here: http://migrationology.com/2013/09/mbuzi-nyama-choma-tanzanian-food/
Every Time I arrive back to East Africa, which is usually Kenya or Tanzania, it doesn't take long for me to get the craving for some proper nyama choma. Nyama choma means roasted meat, and you can usually order beef, chicken, or the most common meat: goat (also known as mbuzi choma Kiswahili). Though I ate plenty of nyama choma in Kenya during my growing up years, this video, and my most recent article and experiences are from Tanzania, in the Dar Es Salaam area.
On one lazy Sunday afternoon, we decided to hit-up one of the truly local style nyama choma joints in the outskirts of town. This restaurant is actually not really a restaurant at all, but it's literally just someone's home who opens up their yard as a communal meat devouring and relaxing place. Every Sunday, they decide to hold goat roasts, or nyama choma feasts. There's a pen with live goats in the yard, and when there are enough customers, they slaughter one of the goats, and hang the fresh meat in the butchery. When customer begin to arrive, they select the chunks of meat that they wish to partake of, and the butcher will then slice it right off the goat carcass and throw it onto the grill. Eating nyama choma is a culture of its own. Most of the customers are men, and they go to a nyama choma restaurant with their friends to relax, normally drink plenty of beer, and chow down on free range and freshly cooked meat.
So I arrived on Sunday afternoon, my mouth already watering to get a taste of that roasted goat, the smoke pouring over the entire yard in meaty goodness. We chose a 1 kilo section of meat off the goat leg and the butcher chopped it ferociously with his machete and threw it on the grill with nothing more than a handful of salt and MSG. Don't expect your nyama choma, or any other food you order in East Africa, to come quickly. Eating nyama choma is more of a leisure experience; You sit around and wait for 1 or 2 hours until the meat is finished cooking. Our meat took about 1.5 hours or so, until it was done through and through.
When your nyama choma is finished cooking, the butcher then grabs his big knife, places your hunk of meat on a chopping board, and slices through the goat meat like it's butter. He cuts it all up into bite sized pieces, puts it on a plate, and it's served with little more than a pile of salt on the side of the plate, some chili peppers, and lemon wedges on the side. Nyama choma is one of the great East African dining experiences. The goat meat is definitely on the chewy side, but you can just taste that incredible natural and free range flavor from the meat. I'm a huge fan of East African nyama choma!

Last weekend, all roads led to La Palisse Nyandungu for the mouth watering Nyama Choma Festival in Rwanda. The festival brought together meat lovers for a day of fun, music and socializing. Festival goers were treated to a variety of sumptuous grilled meats from chicken, goat, fish and beef as well as great entertainment by local DJs. However, when the festival was trying to get some life at around 7:45PM, Police stormed the venue and ordered the event closed because of playing loud music.

Choma is a market town in the Southern Province of Zambia, lying on the main road and railway from Lusaka to Livingstone. It is home to a small museum dedicated to the cultural heritage of the Tonga people of southern Zambia. The population of Choma is said to be about 40,000 people and it serves as the commercial hub for the central region of the province. The Nkanga River Conservation Area lies nearby.
Choma is also the headquarters of a district of the same name. Most of the district lies at 1400 metres above sea level. It has the typical climate of southern Zambia with temperatures between 14°C and 28°C and sunshine ranging between 9 and 12 hours per day. The highest temperatures occur between the beginning of October and the end of December. Once the rains start, temperatures tend to fall, partly because of the rain and partly due to the often heavy cloud cover. The lowest temperatures are usually recorded in June and July.
The rains generally start in the middle of October and continue through up to the beginning of April. Rainfall reaches its peak around January after which it diminishes slightly up to the beginning of April when usually it ceases entirely. Choma has an average rainfall of 800 mm of which 369 mm falls in January and February. There are variations in total rainfall and rainfall patterns from year to year and even in a particular season. These variations can have a major impact on crop yield. Humidity falls to about 33% until the onset of rains in October after which it skyrockets to about 77% in February. Humidity nosedives once the rains cease in April. The wind is predominantly from the east and south-west, and to a lesser degree from the north-east. The strength of the wind from these directions can be comparatively strong.

The Swahili phrase ‘Nyama Choma’ translates to barbecue meat. In Kenya it means much more than that, it brings friends, family members and communities together celebrating good times no matter the occasion. On one lazy Sunday afternoon, we decided to hit-up one of the truly local style nyama choma joints in the outskirts of town. This restaurant is actually not really a restaurant at all, but it's literally just someone's home who opens up their yard as a communal meat devouring and relaxing place. Every Sunday, they decide to hold goat roasts, or nyama choma feasts. There's a pen with live goats in the yard, and when there are enough customers, they slaughter one of the goats, and hang the fresh meat in the butchery. When customer begin to arrive, they select the chunks of meat that they wish to partake of, and the butcher will then slice it right off the goat carcass and throw it onto the grill. Eating nyama choma is a culture of its own. Most of the customers are men, and they go to a nyama choma restaurant with their friends to relax, normally drink plenty of beer, and chow down on free range and freshly cooked meat.
So I arrived on Sunday afternoon, my mouth already watering to get a taste of that roasted goat, the smoke pouring over the entire yard in meaty goodness. We chose a 1 kilo section of meat off the goat leg and the butcher chopped it ferociously with his machete and threw it on the grill with nothing more than a handful of salt and MSG. Don't expect your nyama choma, or any other food you order in East Africa, to come quickly. Eating nyama choma is more of a leisure experience; You sit around and wait for 1 or 2 hours until the meat is finished cooking. Our meat took about 1.5 hours or so, until it was done through and through.
When your nyama choma is finished cooking, the butcher then grabs his big knife, places your hunk of meat on a chopping board, and slices through the goat meat like it's butter. He cuts it all up into bite sized pieces, puts it on a plate, and it's served with little more than a pile of salt on the side of the plate, some chili peppers, and lemon wedges on the side. Nyama choma is one of the great East African dining experiences. The goat meat is definitely on the chewy side, but you can just taste that incredible natural and free range flavor from the meat. I'm a huge fan of East African nyama choma!

Festival goers were treated to a variety of sumptuous grilled meats from chicken, goat, fish and beef as well as great entertainment by local DJs. However, when the festival was trying to get some life at around 7:45PM, Police stormed the venue and ordered the event closed because of playing loud music.

Nyam Chom, as it sometimes fondly referred to, is consumed without using any cutlery, it is traditionally served on a wooden chopping board with a small pile of salt, and an almost ritualistic washing of hands precedes partaking of the meat.
Kenyans accompany this popular dish with ‘ugali’, a dense corn flour cake, and ‘kachumbari’ salad, a refreshing mix of tomatoes, onions, chili pepper and coriander. The only seasoning used for authentic nyama choma is salt and pepper, but if you prefer, you can first marinate your meat in a mixture of minced onions, minced garlic, ground ginger, hot pepper flakes and a little lemon juice.
In Kenya, any gathering is an excuse for eating nyama choma. From the finest restaurants to smoke-filled roadside shacks, grilled meat is served and enjoyed by all, and is often washed down by Tusker, Kenya’s national beer.

Indian round roti, known as baati chokha, are a popular street food to eat in Varanasi and other parts of North India. What exactly is a baati chokha? Well to be honest with you, when I stopped by this street food vendor I had absolutely no idea what they were - and that's exactly the reason why I felt compelled to stop and try some. Though the vendor's mouth was packed full of paan mouth chew, I could make out him telling me that they were round rotis. Jonny here, right now I am at Borana Ranch, high on the Laikipia Plateau, in the lee of Mount Kenya. And in this short film I am going to talk about tourism in Kenya.
If I asked what's the first thing you think about when turning your mind to travel in this colourful East African country, you'd almost certainly say wildlife. And of course you'd be right as over 80 percent of holidays here will have a wildlife element.
From the Marsabit National Park in the north, to the Masai Mara and Amboseli National Parks in the south, the planes of Kenya are teeming with wildlife or all shapes and sizes offering, along with its neighbour Tanzania, the best place in the world to view game. And if you throw in Mount Kenya and the Aberdares, the Laikipia Plateau and the Matthews Range, the Lamu Archipelago and the rest of the Kenyan coast, and some of the most spectacular and evocative accommodation anywhere on earth, then here in Kenya you have a true world class travel experience.
The Masai Mara is probably the most famous national park. Covering more than 500sqm, the Mara is universally renowned for its exceptional populations of lion, leopards, cheetahs, elephants, buffalo and giraffe and for the famous migration of wildebeest that takes place every year from July to October.
But the Masai Mara is by no means the only show in town. Further to the east you have Amboseli National Park with its epic views of Kilimanjaro, to the north you have Samburu, Marsabit and Meru National Parks, and here on Laikipia, in the Lewa conservancy, where the savannah is awash with elephants, giraffe, the quirky Grevy zebra and a new and burgeoning population of black rhino.
And as for the accommodation, well that is quite simply out of this world. Yes, to get the best you're going to pay, but in our opinion the experience you'll enjoy and quality of service you'll receive -- plus of course the game you'll see -- does make this value for money. There is simply nothing else like it on earth. Among many amazing places to stay, my personal favourites are Else's Kopje in Meru, Saruni in Samburu, Richard's Camp or Serian in the Mara, and either Sabuk or Borana here on the Laikipia Plateau.
But tourism in Kenya is not only about wild animals. The Kenyan Coast, stretching all the way from Diani Beach in the south the Lamu archipelago in the north, with its white sand beaches and gentle turquoise seas -- particularly when the trade winds are blowing in the right direction from November through to March -- again coupled with some fabulous accommodation, combine to make this a truly world class beach experience.
And if you like to meet the people -- an important factor in most Wild Frontiers adventures -- there are plenty of opportunities, particularly at Sarara, in the Matthews Range, at Il Ngwesi north or Mount Kenya and here at Borana.
To get around there is are great quality land cruisers, a brilliant air service, either in scheduled flights or on private charters, a classic bi-plane, or if you really want to push the boat out and get to places few others can reach, a truly amazing helicopter service, run by our friends at Tropic Air.
A classic African safari is a travel experience like no other, and one that all travellers should do at least once in their lives. And for that, in my opinion, there's nowhere better than Kenya.

When you taste the combination of injera, with meat and vegetables, you'll be in love!
What is Ethiopian food? The first thing you have to know about the cuisine is the staple, known as injera. Injera is sort of like a spongy pancake, but it's airy and made from an ancient grain known as teff. This grain is really only used in Ethiopia and Eritrea, and apart being eaten by Ethiopians and Eritreans, it's not eaten by really any others around the world. Anyway, the teff flour is ground into a flour, made into a batter, and then fried into a huge circular pancake.
When you eat Ethiopian food in Ethiopia, you are always served on a large platter that is first covered by a huge circle of injera that coats the bottom of the pan. You can then order whatever sort of dishes you want, either meat based dishes or vegetarian curries, and they will be dumped into the middle of your injera. Ethiopian cuisine is communally eaten, so whoever you are eating with, you share the same communal plate with them. In this particular video, I was eating alone, as my wife had already eaten, so I polished off the entire thing myself.
Tipped off an article from Addis Eats (http://addiseats.com/2013/03/19/its-that-time-of-year-again/), I decided to go out one day in Addis Ababa to an area of town known as Chechnia to eat at a restaurant known as Grand Restaurant. It took a while to find, but we eventually stepped into the restaurant. The front is more of a dark room and a bar, but if you continue to the back of the Ethiopian restaurant you'll find a kind of makeshift table and chair area that's sort of like a canopy. The roof of the restaurant is covered in Ethiopian traditional paintings like coffee ceremonies and livestock. At Grand Restaurant you sort of eat what's available for the day. I ordered the meat mahberawi, which is basically a platter of injera topped with whatever meat and veg dishes are available that particular day.
For this Ethiopian food meal, my mahberawi included key wat, a spicy Ethiopian beef curry, another curry that included potatoes, shiro wat, and an amazing tomato salad. The key wat was absolutely amazing, full of berbere spices and with just the right amount of oil so it was amazing but not overly greasy. The shiro wat, a stew made from ground chickpeas flour mixed with berbere spices and Ethiopian butter, was one of the best I had in my entire time in Ethiopia. Shiro wat is one of the most popular Ethiopian food dishes, and at Grand restaurant it is amazing. Finally, the tomato salad was also excellent to go with the other curries. The mix included slices tomatoes and onions seasoned with lemon juice, jalapenos, and a touch of salt and pepper. After polishing off all the dishes on the first round, I was still hungry so I decided to order another bowl full of the key wat, but this time I think it was lamb... though I'm not totally sure? Anyway, that drumstick of meat was excellent, the meat literally slid off the bone with ease and the flavor was outstanding.

Indian round roti, known as baati chokha, are a popular street food to eat in Varanasi and other parts of North India.
What exactly is a baati chokha? Well to be honest with you, when I stopped by this street food vendor I had absolutely no idea what they were - and that's exactly the reason why I felt compelled to stop and try some. Though the vendor's mouth was packed full of paan mouth chew, I could make out him telling me that they were round rotis. So imagine a roti, which is similar to a tortilla, or just a blob of dough, rounded up into a small ball about the size of a golf ball and grilled. Within the ball were a mix of spices called garam masala. And if that doesn't already sound tasty enough, it was served with an outstanding green chili sauce, a slice of green chili, and a wedge of red onion.
To eat a baati chokha (round roti), you simply tell the vendor how many of the little guys you want and he will place them right off the grill onto your plate. From there he added a scoop of unknown sauce which happened to be delicious, and the extra few condiments. I was actually surprised at just how good these little roti balls were - partly it was the garam masala sauce and partly it was the delicious sauce. Anyway, I really enjoyed these baati chokha's so much that I ended up eating a few of them, amazed at the flavors from such a simple filling treat.
This little Indian street food vendor in Varanasi is located right along the main burning ghat funeral lane. Though I didn't know at first, as soon as I ordered and started to eat, a funeral procession came marching down the lane as I ate. It was quite an exciting and unique street food snack to be eating while funerals marched past every few minutes.
If you visit North India, you should by all means try to sample some round roti baati chokha. They are filling and delicious, and I think they make a fabulous snack or even would be a wonderful breakfast.

In Nungwi we stayed at Ras Nungwi Beach Hotel, located on the East side of the village of Nungwi. The resort is located on a private stretch of Indian Ocean beach and offers extreme peace and quiet with great views of the ocean.
Our room faced the ocean, and we could sit on the patio and enjoy spectacular views. The rooms are set up with a little local Zanzibari flavor, and packed with comforting amenities. The Zanzibar style bed in the room at Ras Nungwi Beach Hotel, was indeed one of the most comfortable beds I slept in while on the island. Our room was also equipped with a fridge and mini bar, a hot water heat (useful because I love to sit around all day and drink coffee and tea), and a safe deposit box where I could put our valuables, and it was also big enough to fit my laptop when we'd go on an outdoor adventure.
On the east coast of Zanzibar, the high and low tides are drastically different, but both tides are beautiful in their own respect. At high tide, the water comes all the way up to Ras Nungwi Beach Hotel, crashing against the rocks. At low tide, the water declines way down the beach, creating a good opportunity to put on some reef walking shoes and explore the little pools of calm water.
Here are a few more thoughts about Ras Nungwi Beach Hotel: Incredibly quiet, Stunning views of the ocean, Beach is beautiful, but not the best for swimming, Staff are extremely helpful and service is outstanding, Everything is available on facility (self contained) - so if you wanted, you could do just about everything from Ras Nungwi - stay, eat, drink, dive, spa, tennis etc., there's also a pool table, ping pong table, foosball, and darts. Wi-fi is available only in the communal lounge, not in rooms, While security is very good at the hotel and on the beach in front of the hotel, if you wander in either direction (like towards Nungwi village), you've got to be careful of your belongings - only bring a little cash on you and a small camera. Ras Nungwi Beach Hotel caters to those looking for peace and relaxation, beautiful views of the ocean, and top notch service. It's the type of place you'll want to rotate from eating to reading a book to taking a swim - and repeat - and no one's going to say you're being lazy!

Nagaland is a state in India located in the very northeastern part of the country, just to the west of Myanmar. I was excited to visit a friend in Nagaland, and before I arrived, I had no idea how important pigs were in the Naga diet. Soon I was dining on delicious pork cooked with dry bamboo shoots, rice, dal, and lots of different chili paste sauces.
But then I had an opportunity to roast and eat fresh pig intestines with my friend's grandfather - and what a fantastic idea that was! He sliced down some fresh banana leaves to use as a plate. He then took the pig intestines and sliced them into pieces. In order to roast over fire, grandfather then took bamboo and make slivers used for skewers, sharpening them to a point. He skewered each of the intestines and then prepared them to be immersed into the flames. They aren't grilled, they are roasted in Nagaland.
The grease from the pig intestines even caught on fire, as grandpa quickly blew out the flames. The result was flame charred pig intestines. They were actually quite delicious, like naturally sausage that just oozed with porky grease and flavor. I actually overall preferred the small pig intestines which were a little less oily and were slightly crunchy!
Anyway, I had an incredible time visiting Nagaland, India, and roasting pig intestines the local Naga way, should be high on anyone's priority list for a great time!

Thailand is an absolutely amazing country to visit and it happens to be very famous for it's cuisine. There is Pad Thai, soup noodles, coconut milk curries, stir fries, and then there's the notorious bug carts! That's right, makeshift motorcycles prowl around and vend a bunch of edible insects that are fried up and ready to be served as your next snack!
So in this episode of Migrationology Food TV, I decided to head over to a little stall selling insects, worms, and bugs and give nearly everything a try. This is not my first time to sample these bugs, I've had them a number of times before.
This particular cart had a selection of bugs and insects that included grasshoppers, giant water bugs, crickets both huge ones and small ones, silk worms, and bamboo worms. A small bag of the Tha bugs costs just 20 Thai Baht but I chose a huge bag for 100 Thai Baht, and let me tell you, it was way more than actually necessary. Anyway, after I chose the bugs I wanted in my bag, the vendor sprayed them all with a mist of soy sauce and added a dash of pepper to the entire mixture. She then handed my big snack of insects in Thailand! Yumm!
What to edible bugs, worms, and insects taste like? Well since they are all fried until pure crispiness and then heavily salted, they honestly taste kind of just like crunchy salty snacks - with a bit of a bug flavor to them. The grasshopper was fried to a complete crunch and when I bit into it, it just complete crunched down like a Cheeto would. The giant water bug is a bit of a funny creature, and you do not eat the wings which are simply too hard to eat. You pull apart the body and then kind of work to suck out the juices from the body first, which taste quite similar to scrambled eggs with a flavor of anise or black licorice, and then you dig out the head meat which tastes remarkably similar to mush crab that's gone bad. Next up, there were two different kinds of crickets. The big cricket which appeared to have gone wild, was extremely sharp. When I bit into it, it nearly cut the side of my cheep with its razor sharp claws. It wasn't my favorite. The smaller crickets are alright but give one's mouth a little dryness. As for the worms, the silk worm was not entirely crunchy and I could almost detect a hint of peanut in the body. It was soft consistency wise and was actually quite flavorful. The bamboo worms on the other hand literally almost tasted like popcorn. If your eyes were closed, you would not even know you're eating a bug or worm, but you'd honestly think you were at the movies munching on a bag of salted popcorn!
What is the best edible bug or insect on the Thai insect cart? Well, they all don't have a lot of flavor, but I'd have to say that my favorite of everything is grasshoppers. They are funny to look at and they are also really good to eat. After the bamboo worms, grasshoppers are probably the most crispy of all the creatures consumed in this video (if you heard the crunch!).

짐바브웨에서 결코 놓칠 수 없는 코끼리 사파리.. 오전 7시. 야생 코끼리를 타고 야생의 공원을 누비는 색다른 체험이다. 보츠와나와 더불어 세계 최대 코끼리 서식지인 짐바브웨는 아프리카 코끼리 사파리의 원조 코끼리 등은 생각보단 훨씬 불편하고 균형 잡기가 쉽지 않았다. 도대체 이곳에선 사람이 야생동물을 보러 온 건지 그들이 사람을 구경 나온 건지 구분이 가질 않는다. 총을 들고 가는 가이드 모습에서 비로소 이곳이 야생 공원이라는 실감이 난다. “이 총의 용도는 무엇인가요? 이곳은 위험한 장소인가요?” “사파리을 즐기는 관광객들의 안전을 보장하기 위함입니다.” 이곳은 무리에서 버림받거나 혹은 사람들에게 피해를 본 야생 코끼리를 보호하고 훈련시키는 곳이다. “이곳 원주민들은 매일 코끼리와 접촉하고 살고 있는데 서로에게 최대한의 배려를 하며 살기를 바라고 있죠.” 코끼리의 음식 씹는 소리가 마치 과자를 먹는 소리와 비슷하다. 처음 해보는 특별한 경험에 모두의 입가에 환한 웃음이 번진다. 야생 코끼리의 천국 짐바브웨와 보츠와나는 현재 늘어나는 코끼리 무리 수와 사람들과의 접촉에 대해 고민하고 있지만 여행자에겐 매우 특별한 곳으로 기억될 것이다.

짐바브웨에서 결코 놓칠 수 없는 코끼리 사파리.. 오전 7시. 야생 코끼리를 타고 야생의 공원을 누비는 색다른 체험이다. 보츠와나와 더불어 세계 최대 코끼리 서식지인 짐바브웨는 아프리카 코끼리 사파리의 원조 코끼리 등은 생각보단 훨씬 불편하고 균형 잡기가 쉽지 않았다. 도대체 이곳에선 사람이 야생동물을 보러 온 건지 그들이 사람을 구경 나온 건지 구분이 가질 않는다. 총을 들고 가는 가이드 모습에서 비로소 이곳이 야생 공원이라는 실감이 난다. “이 총의 용도는 무엇인가요? 이곳은 위험한 장소인가요?” “사파리을 즐기는 관광객들의 안전을 보장하기 위함입니다.” 이곳은 무리에서 버림받거나 혹은 사람들에게 피해를 본 야생 코끼리를 보호하고 훈련시키는 곳이다. “이곳 원주민들은 매일 코끼리와 접촉하고 살고 있는데 서로에게 최대한의 배려를 하며 살기를 바라고 있죠.” 코끼리의 음식 씹는 소리가 마치 과자를 먹는 소리와 비슷하다. 처음 해보는 특별한 경험에 모두의 입가에 환한 웃음이 번진다. 야생 코끼리의 천국 짐바브웨와 보츠와나는 현재 늘어나는 코끼리 무리 수와 사람들과의 접촉에 대해 고민하고 있지만 여행자에겐 매우 특별한 곳으로 기억될 것이다.

When I traveled to Ethiopia, I first stayed in Addis Ababa. I wasn't sure if I'd be able to get to Lalibela, a destination I had dreamed of visiting, because I didn't really have the time to take the bus, and I didn't think I could afford the flight. But one day, I decided to drop by the Ethiopian Airlines office in downtown Addis, and they gave me a quote for a roundtrip flight to Lalibela at just over $100. I took it, and I'm so glad I was able to visit this incredible little town.
Lalibela, Ethiopia (ላሊበላ) is one of the most important and holy cities in all of Ethiopia for followers of the Ethiopian orthodox church. Under control of King Lalibela, the goal was to turn the small town into a the second Jerusalem. Building rock churches and setting his holy city up in the same design and layout as that of Jerusalem, the King aimed to make his capital city a spiritual homeland.
The churches of Lalibela are on the list of UNESCO world heritage sites, with 11 of the churches qualifying. When you buy an entrance ticket, you can then tour all 11 of the churches. Many of them are connected and in there are three main clusters of churches. The first and ultimately most important of the churches in Lalibela (and show first in this video) is the Church of Saint George. This is the best preserved and it stands all alone, carved into the giant red stone. When I was there, it was a good morning because there was a small ceremony going on, and lots of local Ethiopian pilgrims had come to pay respect and worship at the church. To get down to the bottom of the church there's only a single entrance, through a trench leading to the bottom.
After walking around the Church of Saint George we proceeded on to the other churches of Lalibela including the House of Golgotha, House of Emanuel, and the House of the Saviour of the World, all of which were incredibly stunning. One of the most amazing aspects of the churches is that they are rock hewn, cut from single blocks of stone, and literally carved out by hand. So the builders had to begin from the roof, carving down until they had the shape of a church, and then start carving the church out to create a structure that could be used. After the construction of the rock churches of Lalibela, they were then decorated and painted with beautiful colors. Seeing the churches is such an impressive site!
If you have the chance to visit Ethiopia, definitely make a point to stop by the rock churches of Lalibela, especially if you enjoy either history or architecture. The attractions are still no overcrowded with foreign tourists, and mostly cater to local Ethiopian pilgrims.
