FILMING DATE & TIME : 19 November 2013 around 8am IST COMMENTARY : Bengali & English Languages by Professor Apurba Bandyopadyay, DESCRIPTION : The raw palm sap has been boiled (not including time for heating up) for around THIRTY minutes, and a proportion of the batch is now removed as NOLEN GUR. The timing given above and in Terminology is based on the video timestamps and should therefore be accurate. Boiling times given in the video commentary are NOT accurate. 'Jaggery' is a very general term, and is interchangeable with the generic 'gur' (any sort of raw sugar), whereas this is specifically KHEJURGUR ( Bengali Palm Sugar ). TERMINOLOGY : Khejurgur or Khejur Gur is Bengali for palm sugar or palm candy produced from a specific palm tree ( Phoenix sylvestris ) in the winter season ( November - February ) Nolen Gur : Liquid form of khejurgur, obtained after heating palm sap for around 30-40 mins Patali Gur : Solid form of khejurgur, obtained after heating palm sap for around 60 mins and then working the syrup with a spatula or similar implement in a process akin to conching chocolate, to produce a liquid crystal structure that is of a very pleasing, smooth texture. Around 8Kg of solid gur is produced daily, another 5-6 Kg may be sold as liquid gur, and a semi-solid form where liquid nolen gur is mixed with solid patali gur (before it has been rendered solid). A factor that surely contributed to this product quality, is the general cleanliness of this site, and the fact that these palm trees are on a very minor road. FILMING DATE & TIME : 14 November 2013 around 2:30pm IST COMMENTARY : Bengali & English Languages by Professor Apurba Bandyopadyay, DESCRIPTION : This film was made between 4-5pm, The time when the pre-smoked earthenware pots are hung on the palm trees to collect the sap overnight. To induce sap flow, the pre-prepared tapping zone is cut such that two flat faces meet at an angle, and the sap is guided by this ridge into the bamboo collection spout beneath. It looks as if this palm tree is receiving it's SECOND CUT, as quite a lot of material is being removed, and there is no evidence of a previous cut that looks like the SECOND CUT. Unfortunately, we do not know for sure.
