Cajun cuisine (French: Cuisine Acadienne [kɥizin akadjɛn]) is the style of cooking named for the French-speaking Acadian or "Cajun" immigrants deported by the British from Acadia in Canada to the Acadiana region of Louisiana, USA. It is what could be called a rustic cuisine — locally available ingredients predominate, and preparation is simple. An authentic Cajun meal is usually a three-pot affair, with one pot dedicated to the main dish, one dedicated to steamed rice, special made sausages, or some other seafood dish, and the third containing whatever vegetable is plentiful or available. Ground Cayenne & Fresh Black Pepper are used often.

The aromatic vegetables bell pepper (poivron), onion, and celery are called by some chefs the holy trinity of Creole and Cajun cuisines. Roughly diced and combined in cooking, the method is similar to the use of the mire poix in traditional French cuisine — which blends roughly diced onion, celery, and carrot. Characteristic aromatics for the Cajun version may also include parsley, bay leaf, green onions, and dried cayenne pepper.

Cajuns ( /ˈkeɪdʒən/; French: les Cadiens or les Acadiens, [le kadjɛ̃, lez‿akadjɛ̃]) are an ethnic group mainly living in the U.S. state of Louisiana, consisting of the descendants of Acadian exiles (French-speakers from Acadia in what are now the Canadian Maritimes). Today, the Cajuns make up a significant portion of south Louisiana's population, and have exerted an enormous impact on the state's culture.

While Lower Louisiana had been settled by French colonists since the late 18th century, the Cajuns trace their roots to the influx of Acadian settlers after the Great Expulsion from their homeland during the French and Indian War (1754 to 1763). The Acadia region to which modern Cajuns trace their origin consisted largely of what are now Nova Scotia and the other Maritime provinces, plus parts of eastern Quebec and northern Maine. Since their establishment in Louisiana the Cajuns have developed their own dialect, Cajun French, and developed a vibrant culture including folkways, music, and cuisine.

Malcolm Jenkins (born December 20, 1987) is an American football safety for the New Orleans Saints of the National Football League (NFL). He was drafted by the Saints 14th overall in the 2009 NFL Draft. He played college football at Ohio State.

Jenkins played high school football at Piscataway Township High School in Piscataway Township, New Jersey, where he helped lead his team to three consecutive state championships. He played both wide receiver and defensive back. He also excelled at track, winning the state title in the 400 metres as a junior.

Considered a three-star recruit by Rivals.com, Jenkins was listed as No. 61 cornerback prospect in the nation in 2005.

During his freshman season at Ohio State Jenkins spent most of his time at nickelback. He finished the season with 37 tackles in 10 games. In 2006 he started all 13 games at corner and was a consensus first-team All-Big Ten. He finished '06 with 55 tackles and four interceptions. As a junior in 2007 Jenkins recorded 47 tackles and four interceptions and was named a first team All-American by Pro Football Weekly and a first team All-Big Ten for the second consecutive year. As a senior in 2008 he won the Jim Thorpe Award, which is given to the nation's best defensive back, after recording 57 tackles and three interceptions.

Tony Spinner (born June 9, 1963 in Cape Girardeau, Missouri), is an American rock and blues singer and guitarist who toured with Toto from 1999 until their break-up in 2008. Spinner was personally selected by David Paich as a backup guitarist and backing vocalist and would perform lead vocals on the song "Stop Loving You," originally performed by former Toto member Joseph Williams. When Toto reformed in 2010, Spinner was not part of the touring band.

In fall 2010, Tony Spinner joined Paul Gilbert on his "Fuzz Universe" European tour.
