Eric talks about Whiskey, but specifically how Bourbon is a Whiskey, a little bit sweeter whiskey than a Rye, Scotch, Irish Whiskey or Tennessee Whiskey. The name Bourbon came from The House of Bourbon of France in honor of France when Bourbon County, Kentucky adopted the name because they helped in the Revolutionary War. Bourbon is a Whisky specifically made in Kentucky... 51% corn, to qualify it as Bourbon, the rest are Rye and Barley Malt. The grains are cooked with limestone filtered water, go through a fermentation process, strained and distilled, then distilled again to remove all impurities well. it goes through a process which filters the liquid through extra virgin wool and finely chopped sugar maple charcoal, which takes days for drops of it to go through. It's called the "Charcoal Mellowing Process". What stays is a high octane alcohol to be aged, sometimes up to 25 Years or more.

Glenfiddich is a smooth whisky made by malted barley. Klinq: What are the differences between Whisky's? MB: Well like I say, Whiskey can be made anywhere in the world. It can be made from any ingredient. Let's take India for example. Indian whisky is some of the biggest selling in the world, made from molasses. When we're talking about Bourbon, Bourbon can be made anywhere in the US; has to have at least a make up of 51% corn in the make up of it. When we're talking about Single Malt Whiskey, it can only be malted barley that we use and obviously made and matured in Scotland. With blends, we can also use different types of grain in there as well. So a typical makeup of a blended whisky will be 60% grain to around about 40% single malt. Klinq: What about the Irish? MB: We talk about the Irish being the first ones to start off the whisky category. We believe it started in Ireland and then came to Scotland in 1494 but Irish whiskey's are fantastic. Within our portfolio, we recently acquired Tullamore dew and we're looking at building a distillery in Ireland for the first time in about 30-40 years. But for me, the main difference when we talk about Irish and Scottish whisky is that Irish tends to be a little bit lighter. If our videos with drinks legend Dave Broom have whetted your appetite to try whisky, then the next question will be: where do I start?
Dave helped develop the Malt Whisky Flavour Map, and you'll find it in most supermarkets, or easily online. It divides the basic flavours of whisky into four categories: smoky, delicate, fresh and rich - and plots whiskies onto a graph for these four.
But those four flavours are applicable to wine as well, so as Dave explains, if you like a zing fresh Riesling you'll like a Cardu or Linkwood for example - all detailed on the maps.

Para don Paco Vigo era o lugar do mundo no que desexaba estar. Lembraba con nitidez a guerra civil na que vira morrer tanta xente amiga e o seu regreso a unha Compostela hostil onde non se podía incorporar ó seu posto de profesor na Facultade de Dereito ó ser inhabilitalo para impartir docencia. El vestira un uniforme que non lle asentaba nin no corpo nin na alma, só para salvar a vida, o único que lle quedaba ó rematar a contenda. A Compostela que o miraba, que o sinalaba, xa non era un lugar para el. Nada lle quedaba alí, na fría lousa deixaba as pegadas, os recordos, o tempo da república, do Seminario de Estudos Galegos, do Partido Galeguista, das ilusións, do laciño negro ó pescozo dos tempos de galán e marchaba co fardel cargado de roupa e libros, con mil pesetas nun peto e no outro moita tristura, incertezas, pero tamén optimismo, ese optimismo radical do que sempre me falaba. En Vigo fíxose señor da inmensidade atlántica, pasou fame con Maside na taberna La Mundial, na que comían unha vez ó día un guiso de carne ou peixe e tres anaquiños de pan con barolo e para baixar o manxar un vasiño de auga, co que lle prestaba a don Paco unha cunca de bo viño! No Berbés pasou fame, pero coa axuda de Valentín Paz Andrade e doutros amigos e coa súa vontade de ferro saíu adiante. Casou e a primeira vivenda do matrimonio tamén estivo en Vigo, prestoulla Ramón Ovella, un piso céntrico no que antes estiveran de inquilinos a criada do médico e as súas galiñas. Non eran tempos para esixencias, contábame poñendo un sorriso!
Don Paco cambiara o mar de Foz, onde veraneaba na súa infancia, polo de Vigo, non só para percorrer a praia de punta a chicote nos longos paseos de verán, senón para facelo seu. Parece que o estou vendo á hora de xantar preguntándome o nome científico dos peixes, cando aprendía un deseguido subía o nivel para requirirme a familia á que pertencía. Un día agasalloume cunhas folliñas coas especies e o seu nome en latín. Aprendín uns poucos, os daqueles máis comúns na súa mesa, pero faltábame a súa bagaxe ó fronte das revistas Industrias Pesqueiras e Industria Conserveira, faltábame

Dende Vigo proxectou a reconstrución política do galeguismo, fanada pola situación de represión establecida, e executou a maxistral idea de Xaime Illa, a fundación da Editorial Galaxia. Exerceu de ponte co exilio, tanto exterior coma interior, recuperou figuras para as nosas letras, encouzou ríos perdidos coma o de Cunqueiro e sumou novos afluentes para así aumentar o océano creador galego, fixo por vez primeira unha escolma de cincuenta poetas galegos cun criterio lingüístico, inventou o Día das Letras Galegas, modernizou a Real Academia Galega, en definitiva, traballou arreo para levantar o país. Se xa estaban agradecidos na metade do século pasado, cómo teremos que estar na actualidade, por ser o capitán da dorna, por saber bolinar ante tódalas tempestades e por saber deixar o temón ós novos con tanta xenerosidade. A Vigo agasallouno coa súa biblioteca e a súa pinacoteca, entregoulle a súa vida á Fundación Penzol sen recibir un só peso, a tódolos investigadores que pasaron por alí axudounos, guiounos e abriulles as portas da institución. A min entregoume tantas horas como eu quixen, tantas conversas, tanto agarimo, tantas leccións e ata un libro inédito. Era un carballo rexo, coas raiceiras profundas, coa savia sempre rexuvenecida, ergueito, firme, vizoso. Ó seu carón a vida era máis doada, nesa sombra acolledora podías crecer con sabedoría, amparo e moito afecto. Era un virtuoso, un home recto, incorrompible, un maniático da orde e da puntualidade. Todo o mundo o sabía, por iso eu sempre chamaba á súa porta cando o reloxo da colexiata tocaba, á hora en punto. Creo que este feito foi definitivo para gañar a súa simpatía, pero un día díxome que a súa casa non era un cuartel
