Madeira is a fortified Portuguese wine made in the Madeira Islands. Madeira is produced in a variety of styles ranging from dry wines which can be consumed on their own as an aperitif, to sweet wines more usually consumed with dessert. Cheaper versions are often flavoured with salt and pepper for use in cooking. The islands of Madeira have a long winemaking history dating back to the Age of Exploration when Madeira was a standard port of call for ships heading to the New World or East Indies. To prevent the wine from spoiling, neutral grape spirits were added. On the long sea voyages, the wines would be exposed to excessive heat and movement which transformed the flavour of the wine as the wine producers of Madeira found out when an unsold shipment of wine returned to the islands after a round trip. Today, Madeira is noted for its unique winemaking process which involves heating the wine up to temperatures as high as 60 °C (140 °F) for an extended period of time and deliberately exposing the wine to some levels of oxidation. Because of this unique process, Madeira is a very robust wine that can be quite long lived even after being opened. Some wines produced in small quantities in Crimea, California and Texas are also referred to as "Madeira" or "Madera", although those wines do not conform to the EU PDO regulations. In conformance with these EU regulations most countries limit the use of the term Madeira or Madère to only those wines that come from the Madeira Islands.

Beef Wellington is a preparation of filet steak coated with pâté (often pâté de foie gras) and duxelles, which is then wrapped in puff pastry and baked. Some recipes include wrapping the coated meat in a crêpe to retain the moisture and prevent it making the pastry soggy.

A whole tenderloin may be wrapped and baked, and then sliced for serving, or the tenderloin may be sliced into individual portions prior to wrapping and baking. Many spices may be added to enhance the flavour; some examples are curry, allspice, any grilling mix or ginger.

The origin of the name is unclear. There are theories that suggest that beef Wellington is named after Arthur Wellesley, 1st Duke of Wellington. Some theories go a step further and suggest this was due to his love of a dish of beef, truffles, mushrooms, Madeira wine, and pâté cooked in pastry, but there is a noted lack of evidence supporting this. In addition to the dearth of evidence attaching this dish to the famous Duke, the earliest recorded recipe to bear this name appeared in a 1966 cookbook. Other accounts simply credit the name to a patriotic chef wanting to give an English name to a variation on the French filet de bœuf en croûte during the Napoleonic Wars. Still another theory is that the dish is not named after the Duke himself, but rather that the finished filet was thought to resemble one of the brown shiny military boots which were named after him.

Gordon James Ramsay, OBE (born 8 November 1966) is a British chef, television personality and restaurateur. He has been awarded 13 Michelin stars in total and currently holds 12.

Ramsay is known for presenting TV programmes about competitive cookery and food, such as the British series Hell's Kitchen, The F Word, Ramsay's Best Restaurant, and Ramsay's Kitchen Nightmares, along with the American versions of Hell's Kitchen, Kitchen Nightmares, and MasterChef.

Gordon Ramsay was born in Johnstone, Renfrewshire, Scotland, and raised in Stratford-upon-Avon, Warwickshire, England from the age of 5. Ramsay is the second of four children; he has an older sister, Diane, a younger brother, Ronnie, and a younger sister, Yvonne. Ramsay's father Gordon (died 1997) was, at various times, a swimming pool manager, a welder, and a shopkeeper; his mother, Helen Cosgrove, and Yvonne have been nurses. Ramsay has described his early life as "hopelessly itinerant", as his family moved constantly due to the aspirations and failures of his father, who was violent. In 1976, they finally settled in Stratford-upon-Avon where he grew up in the Bishopton area of the town. In past public interviews, Ramsay has declined to describe his father as an alcoholic; however, his autobiography, Humble Pie, describes his early life as being marked by abuse and neglect from this "hard-drinking womaniser". At the age of 16, Ramsay moved out of the family house into a flat in Banbury.
