Texas (
i/ˈtɛksəs/) (Alibamu: Teksi ) is the second most populous and the second most extensive of the 50 United States, and the most extensive state of the 48 contiguous United States. The name, based on the Caddo word "Tejas" meaning "friends" or "allies", was applied by the Spanish to the Caddo themselves and to the region of their settlement in East Texas. Located in the South Central United States, Texas shares an international border with the Mexican states of Chihuahua, Coahuila, Nuevo León, and Tamaulipas to the south, and borders the US states of New Mexico to the west, Oklahoma to the north, Arkansas to the northeast, and Louisiana to the east. Texas has an area of 268,820 square miles (696,200 km2), and a growing population of 25.7 million residents.
During the Spanish colonial rule, the area was officially known as the Nuevo Reino de Filipinas: La Provincia de Texas. Antonio Margil de Jesús was known to be the first person to use the name in a letter to the Viceroy of Mexico in July 20, 1716. The name was not popularly used in daily speech but often appeared in legal documents until the end of the 1800s.

I think I'll wrap up my Road Trip USA series with this fun little video clip of a great band I bumped into on Frenchmen Street in New Orleans. How can you not just love street music like this. And check out the washboard talent! I had to buy their CD and it came not in a jewel box but wrapped in newspaper. By the way, thanks for traveling with me across this fun, friendly, and full-of-wonder country of ours. I'm sure I'll do it again sometime soon. But now... it's back to Europe. I'm flying to Portugal end of next week. Stay tuned. -

I'm just too busy in Colorado to write a blog entry today. Napping here on a rocky crag in Colorado National Monument surrounded by a vast canyon, red rocks, and winded from breath-taking drives over 10,000 feet passes, I've got piles of notes but no time to write. After my Rocky Mountain nap, we're heading to Colorado Springs. Driving by Vail and Breckenridge on such a gorgeous day makes me wonder "what was I thinking" not to schedule a day for skiing. I'm just too busy in Colorado to write a blog entry today. Napping here on a rocky crag in Colorado National Monument surrounded by a vast canyon, red rocks, and winded from breath-taking drives over 10,000 feet passes, I've got piles of notes but no time to write. After my Rocky Mountain nap, we're heading to Colorado Springs. Driving by Vail and Breckenridge on such a gorgeous day makes me wonder "what was I thinking" not to schedule a day for skiing. Anyway, forgive my Facebook blog laziness. Tomorrow I'll share the full scoop.

Ozarks Arkansas Motorcycle Road Trip
The ride starts in Clarksville AR and heads north up through Jasper (where we eat at the Ozarks Cafe) and west to Lost Valley Park. We didn't have time to go on HWY 123 (which was recommended by several locals for its scenery and very twisty roads). Video was shot with the new Gopro Hero 2 camera. Lots of the video is sped up 300%. -

Recipe: Texas Red Chili
1 ½ lb. Top Sirloin
1 lb. Strip Steak
3 Large Poblano Chili’s
5 Jalapeno Peppers
2 Medium Onions
16 oz. Tomato Paste
2 Cups Bourbon
2 Cups Water
4 Tablespoons Olive Oil
3 Cloves Garlic Fine Minced
3 Tablespoons Chili Powder
1 Tablespoon Cumin
1 Tablespoon Cayenne
2 Tablespoons Paprika
Salt To Taste
Using high heat such as a gas stove burner, gas grill, propane torch or very hot broiler scorch the skins on the chili’s so they blister. Wash off scorched chili’s to remove all the skin. Remove seeds and crowns on chili's, Cut Chili's into small dice and set aside. Chop the onions into small dice and set aside.
Slice meat to fit into grinder and do a medium or large grind mixing the two cuts of meat as you go or have your butcher do it for you.
Place the meat, diced onions and olive oil into a large pot and place over high heat, stir these ingredients together as you cook them. Cook until the meat is starting to brown and the onions have turned somewhat translucent. Before meat has fully browned add the chili's and two teaspoons of salt and stir in well, continue cooking use a cover on the pot and stir frequently. Cook until the meat is cooked through and the onion and chili's are soft about 15 to 20 minutes. Add the tomato paste to the meat and thin with the bourbon and water add the spices and stir in well. Bring the mixture to a boil then reduce heat to low and simmer, stir about every ten minutes. During the simmer adjust your seasoning by adding salt to taste, usually another two teaspoons will do, also add some water to compensate for moisture loss during simmering. Allow the chili to simmer for one hour. After simmering allow chili to rest for about 30 minutes before serving
If you would like you can add some cooked pasta or beans, this is helpful when stretching ingredients for large families.
Top with some cheese and thin sliced onion after serving.

I cant find a link for the ratcheting crimper I use, I got it in a case for vintage motorcycle connectors.
This set-up only regulates the AC voltage put out by the Stator, it does not rectify it to DC.
I use a battery powered bicycle light for the tail light (rear red light is all that's required in my state for a Moped which is how this is registered) - Which I prefer as if the engine stops, I lose power and the headlight. This way I still have a rear light so hopefully I don't get hit if I stall it on the road.
The low beam is plenty bright enough. The high beam that has both lights on seems to be too much for the Stator (90 Watt output, light is 70 Watts on high) as it reduces the brightness of the low light too. I may have to switch to a DC Regulator/Rectifier so I'm not wasting power when the AC regulator shunts anything in excess of 13.8V to ground.
