Beef Shank 2 kg
Beef Tripe 2 kg
Veg
Onion x 2 chop
Carrots Few chop
Spring Onion x 2 chop
Ginger Chop some slice
Coke or Water 2 little
Guinness 300mm
Shao Hsing Rice Wine or Sherry 300 ml
Red Sugar 1 tablespoon
Dark SoySource 3 tablespoon
5 Spice ( or you can buy Lu Bao (滷包)Strew Package in any Chinese Super market )
Cinnamon Stick x 2
Clove some
Sichuan Peppercorns some
Peppercorns Some
Step 1. Prep a Strew Stock , cook the Veg till golden , place sugar while cooking , and add all the coke, Guinness , Dark Soy
Step 2. Heat up and pan and brown the Beef , and deglaze the pan with Shao Hsing Wine
Step 3. Place Beef in the Strew Stock add water if need to cover the beef , Gas 180 c for 2 and half hour, and move it about during cooking.
Step 4 , 2 and half hours up , take it out and rest for 30-45 minutes and it is ready to serve.
