Mujaddara (lentejas libanesas)
Delicioso y fácil de hacer, este platillo se encuentra en la lista de las 5 mejores recetas en la oficina de Salud es Vida. Las lentejas y el arroz son por su propia cuenta maravillosos y llenos de sabor, pero la adición de la cebolla sofrita como guarnición lo convierten en un inolvidable plato gourmet.
Ingredientes:
Lentejas y arroz :
4 tazas de agua
1 cucharada de aceite de oliva extra virgen
1 taza de cebolla picada
½ taza de arroz integral sin cocer
1 taza de lentejas marrones sin cocer y enjuagadas
1 cucharadita de sal
una pizca de pimienta de cayena
Cebolla sofrita :
1 cucharada de aceite de oliva extra virgen
3 cebollas grandes a la juliana
una pizca de sal
Instrucciones:
1. Lentejas y Arroz: En una olla grande de fondo grueso, saltee la cebolla picada en aceite de oliva hasta que esté ligeramente dorada. Añada las lentejas y el arroz a la cebolla y saltee unos minutos más. Agregue el agua, la sal y la cayena a la olla, tape la olla y cocine a fuego lento durante aproximadamente 1½ horas. Revuelva la mezcla de vez en cuando y añada agua según sea necesario. Prepare la cebolla caramelizada mientras que las lentejas y el arroz se cocinan.
2. Cebolla sofrita: Caliente un sartén grande a temperatura media-alta. Añada el aceite, la cebolla y la sal, revolviendo constantemente hasta que esté translúcida y muy suave y dorada, esto puede tardar hasta 30 minutos. Si las cebollas se adhieren a la parte inferior del sartén, añada una cantidad muy pequeña de agua y agite vigorosamente.
3. Para servir: Aderece las lentejas y el arroz con las cebollas sofritas y sirva caliente, a temperatura ambiente o fría.

Delicious and easy to make, this makes the Top 5 list in the Life and Health office. The lentils and rice on their own are wonderful and full of deep flavor but the addition of caramelized onions lacing the top of the dish turn it into a gourmet, hard-to-forget meal.
Ingredients:
Lentils and Rice:
4 cups water
1 tablespoon extra-virgin olive oil
1 cup onion, diced
½ cup brown rice, uncooked
1 cup brown lentils, uncooked and rinsed
1 teaspoon salt
pinch of cayenne pepper
Caramelized Onions:
1 tablespoon extra-virgin olive oil
3 large onions, julienned
pinch of salt
Instructions:
1. Lentils & Rice: In a large, heavy bottomed pot, sauté 1 cup of diced onions in olive oil until they’re slightly browned. Add both lentils and rice to the onions and sauté a few minutes longer. Add the water, salt, and cayenne pepper to the pot, then cover the pot and simmer over low heat for about 1½ hours. Stir the mixture from time to time and add water as needed. Prepare the caramelized onions while the lentils and rice simmer.
2. Caramelized Onions: In a separate pan, prepare the onions. Heat the olive oil to medium-high temperature in a large pan. Add the onions and salt to the pan, stirring constantly until they’re translucent and very soft, nearly melting consistency—it may take up to 30 minutes. If the onions stick to the bottom of the pan, add a very small amount of water and stir vigorously.
3. To Serve: Top the lentils and rice with the onions and serve hot, at room temperature, or cold.
Cooking Time: 30 minutes / Inactive Time: 1 hour 30 minutes
Makes 6 main servings
