Wives of officers of Tamil Nadu House, New Delhi cooking delicious Pongal dish in earthen pots. Pongal is a popular rice dish in all South Indian states, and Tamil-speaking areas of Sri Lanka. Pongal is common in Tamil cuisine. In Dravidian languages the root word pong or pongu means to " boil over" or "spill over". There are two varieties of pongal, namely, sakarai pongal(Tamizh) or chakkera pongali (Telugu) which is a sweet and the other variety isven pongal (Tamizh) or nethi Pongali (Telugu) which is made from scarified butter. The rice boiled with milk and jaggery during the Pongal festival is also called pongal - this is sweet pongal made specially in earthenware pots with a wood fire. Pongal is a harvest festival celebrated by Tamil people at the end of the harvest season. Pongal is a four day festival which usually takes place from January 13 to 16 in the Gregorian calendar i.e., the last day of the Tamil month Maargazhi to the third day of Tamil month Thai. Kolam is a form of painting that is drawn using rice powder/chalk/chalk powder/white rock powder often using naturally/synthetically colored powders in Tamil Nadu, Karnataka, Andhra Pradesh, and most parts of Kerala and some parts of Goa, Maharashtra, Indonesia, Malaysia, Thailand and a few other Asian countries. A Kolam is a geometrical line drawing composed of curved loops, drawn around a grid pattern of dots. In South India, it is widely practised by female Hindu family members in front of their homes. Kolams are regionally known by different names in India, Raangolee in Maharashtra, Hase and Raongoli in Kannada in Karnataka, Muggulu in Andhra Pradesh, etc. The second of the four days i.e., first day of the Tamil month Thai is the second and main day of the festival and this day is known as Thai Pongal. This day coincides with Makara Sankranthi which is a winter harvest festival celebrated throughout India. The day marks the start of sun's six-month long journey northwards or the Uttarayanam. This also represents the Indic solstice when the sun purportedly enters the 10th house of the Indian zodiac i.e. Makara or Capricorn. It is one of the most important festivals celebrated by the Tamil people in the Indian state of Tamil Nadu, the Indian Union Territory of Puducherry and Sri Lanka. In Tamil, the word Pongal means "overflowing" which signifies abundance and prosperity. On the day of Pongal, at the time of sun rise there is a symbolic ritual of boiling fresh milk in a new clay pots and when the milk boils over and bubbles out of the vessel, people shout "Pongalo Pongal!". The saying "Thai Pirandhal Vazhi Pirakkum" meaning "the commencement of Thai paves the way for new opportunities" is often quoted regarding the Pongal festival. Thai Pongal is mainly celebrated to convey the appreciation and thankfulness to the Sun as it act as the primary energy behind agriculture and a good harvest. It is the Surya Mangalyam. Tamilians decorate their homes with banana and mango leaves and embellish the floor with decorative patterns drawn using rice flour. Pongal is a harvest festival widely celebrated at harvest time by Tamil farmers in the southern Indian state of Tamil Nadu as well as in Sri Lanka to give thanks to the sun god for the abundance of their harvest. Pongal, which also marks the first day of the Tamizh (Tamil Calendar Month) month, means "boiling over or spill over" in Tamil. The expression refers to the preparation of Pongal rice, a porridge dish unique to Tamil cuisine and traditionally prepared for the festival. According to the ritual, rice is boiled with milk and other ingredients in a new clay pot over an open fire. The milk is allowed to boil and spill over the pot to symbolize overflowing abundance and future prosperity for the family. It comes in two varieties. Sakkarai Pongal (Sweet Pongal) and Ven Pongal (Spicy Pongal). Ven Pongal is a popular breakfast fare. Here, Naseema Banu, spouse of Dr. Jauhar Ali, a scientist in the Plant Breeding, Genetics, and Biotechnology Division at the International Rice Research Institute (IRRI; http://irri.org ), and a pharmacist herself (she is a life member of the Indian Council of Pharmacy), gives her recipe for this scrumptious snack. Ingredients: (Good for four persons) • Rice (uncooked) : 1 cup • Milk : 1 cup • Grated coconut: ½ cup • Jaggery (unrefined brown sugar): 300 grams • Green gram mungbean dhal: 50 grams • Cashews and raisins: 20 grams • Cardamom (crushed) : 4 pieces • Butter: 2 tablespoons • Water: 3 cups Cooking directions: Combine the uncooked rice, milk, and dhal in a pressure cooker. Add 3 cups of water and boil for 20 to 30 minutes until the rice and dhal mixture is cooked. Mash the ingredients thoroughly. Set aside. Mix jaggery with ¼ cup water in a heavy-bottomed saucepan and heat in a low flame until the sugar melts completely. Strain the syrup to remove any impurities. Combine the cooked rice and dhal mixture and the brown sugar syrup while stirring slowly. Add the grated coconut and crushed cardamom. Allow to boil for a few minutes. Set aside. Heat 1 tablespoon of butter in a pan over medium-high heat. Fry the cashews followed by the raisins. Use the fried cashews and raisins as garnishing.- published: 21 Jan 2014

Pongal, also in Tamil Language, literally means "boiled rice" (a rice and lentil dish) but metaphorically means prosperity. The Pongal festival also represents celebration of "fertility and renewal" and is observed either for three days or four-days, after the end of the monsoon season and rice (paddy) crop is harvested. According to a legend linked to Mattu Pongal, god Shiva sent his bull Nandi (mount of Shiva and his gate keeper) from heaven to the earth to give his message to people that they should have an oil bath every day and eat once a month. Instead, Nandi wrongly advised people to take an oil bath once a month and eat every day. Shiva was annoyed with this advice related to food and in fit of rage, banished Nandi to permanently live on earth and help the farmers to produce the extra food crops needed for people to eat every day.
