Samosa is a stuffed pastry popular in Hyderabad. It is generally fried in triangular shape with a savory filling. The stuffing includes the potatoes, onions, peas, coriander etc. The samosa often served with tamarind chutney or curd.Onion samosa, popularly known as Irani samosa is a stuffed pastry and popular in South Asia, Southeast Asia, Central Asia, Arabian Peninsula, Southwest Asia, North and South Africa. It is generally fried in triangular shape with a savory filling. The stuffing includes the potatoes, onions, peas, coriander etc. The samosa often served with tamarind chutney or curd. Ingredients 1 cup Atta (Wheat Flour) 1/2 tsp chatmasala. 1 tsp chilli powder 1 bunch coriander leaves 1/2 tsp cumin powder 3 number green chillis 1 cup maida to fry 0 Oil 1 cup onions 1 cup poha as needed 0 salt as needed 0 water Directions ● Take a bowl add maida,atta,salt, 1 tsp oil mix well then add water to make a soft dough rest it for 10min. ● Now in another bowl,take onions chopped,poha,chilli powder,cumin powder,green chillis chopped,oriander ,chat masala mix well. ● In a small bowl add 1tsp of maida mix with some water and make a paste keep a side. ● Now take the dough make a thin chapaties and take a pan slightly cook the chapatis both the sides do not cook more. ● Once chapaties are ready cut the chapati sheets into long triangle shape. ● Now apply maida paste one side of the sheet make a cone shape stuff the mixture in the cone then close the edge. ● In a pan add oil to deep fry, first half fry and remove then after 5min fry again till golden colour . Samosa Bites (Potato Pinwheels) : Quick & Easy Indian Vegetarian Snacks and Appetizers Recipes
Samosa is one of the most favorite Indian snack. Try these Samosa Bites (Potato Bhakerwadi) which taste like Samosa but this recipe is much easier than Samosa recipe. This vegetarian appetizer dish is an ideal snack for breakfast or in evenings snack and parties.This is one of the most easy way of making Indian starter,appetizer or snack.These crispy bites are easy n quick to prepare. They are so yummy that you can't resist them. It's an ideal party starter. See step by step instructions on how to make these Samosa Bytes in this recipe video. For detail recipe see the description down: Ingredients: Boiled mashed potato: 1 cup, All-purpose flour: 1 cup, Garam masala: 1tsp, Cumin (jeera powder): ½ tsp, Dry mango (amchoor or khatai) powder: 1tsp, Cumin (zeera): ½ tsp, Fennel (saunf): ½ tsp, Red chilly powder: ½ tsp, Salt, Oil for frying Water: ¼ cup and 2 tsp, Method: 1. For making the dough add all-purpose flour, oil and salt in a bowl. Mix everything together. Add little water at a time and kneed smooth but hard dough. Now take some oil, rub it on the dough and kneed it for some more time. Wrap the dough in plastic wrap and let it rest for 15 minutes. 2. For stuffing- mix together all the spices, potatoes and little salt. 3. After fifteen minutes take a handful of dough, roll it to a smooth ball, dip it in flour and roll it (little thicker than regular chapatti). Put the stuffing on it and spread evenly leaving the ends. Apply some water to the ends and roll it from one side to another. Seal both the ends and all the open surfaces carefully. Press and roll it on the board. Transfer it on chopping board roll it with a roller pin once again and cut it in 1 inch thick pieces. Press each piece gently to make them flat. 4. Heat the oil at medium low heat and deep fry these bytes till they become little brown. Once they are little brown increase the heat to medium high and fry them till they become golden brown in color. Enjoy them with any dip or chutney. Here are some tips to be successful with this recipe: - Use only white or yellow potato. - Don't leave the potatoes in a water once they are boiled otherwise they will absorb excess water which is not good for deep frying. - Make sure to seal all the corners and surfaces of the roll before cutting it. - First fry them at medium low heat then slowly increase the heat.- published: 30 Nov 2013

Baked Samosa Recipe: PREP TIME: 30mins, SERVING SIZE: 4-6 Ingredients 1 cup bowl whole wheat flour 2 tbsp Saffola oil 1 tsp salt 1 tsp carom seeds Water as required 1 tsp Saffola oil 1 tsp chopped ginger 3 tbsp chopped coriander 1 tbsp water 1 cup split Bengal gram 1 tsp dry mango 1 tsp coriander powder Salt to taste 1 tsp red chilli powder 1 cup boiled potatoes 1/4 cup paneer 1 cup chopped spinach Method In a mixing bowl add flour, oil, salt, carom seeds, water and make a dough. Rest the dough in the refrigerator for 1/2 hour. For the stuffing Heat oil in a pan. Add ginger, coriander, water, split Bengal gram, dry mango powder, coriander powder, salt, red chilli powder, potatoes, paneer, spinach and cook for 3 to 4 mins. Roll the rested dough into a disc and cut at the center to make two halfs and apply water on the edges. Shape the dough into cones and stuff it with the vegetable mixture and seal it. Basement Jaxx vs. Metropole Orkest - HEY U
While going through spotify one day 8 weeks ago, I came across the new Basement Jaxx album. I've always been a fan of their dance music, but hearing their tracks being composed by the metropole orkest just blew my mind.
While listening to the album, the 'Hey U' track in particular caught my attention and ideas came flooding in of a parade of exotic animals performing the track. I felt compelled to animate something and here is the finished project.

In 1988, 9 year old Manrique “Chano” Soriano, along with his brothers and sisters, had come back to El Espino to go to school. They walked seven and a half kilometers to get to school, across wilderness and waste, around land mines of different sorts placed there by both sides in the war. They then took three hours of lessons and walked the same seven and half kilometers on the return. Tomorrow they would do it again. Why did they do it, facing such danger? Why would a father let them do it? Chano went because it was important to his father. His father said, “We have no idea when the war will end, but when it does the children will need a better life, and they will not get it as illiterates.”
After rebuilding their school, Dicxon Valderruten revisits El Espino after 22 years.
This documentary visits the family decades later to get an inside perspective of their life and a chance to share their story. It's about following through with your dreams, about the courage and responsibility that a child was forced to have. It's about family bonds and reflection on a revolution.

Samosas Part 1 (How To Make The Samosa Pocket)
Simply put, a samosa is a savory fried or baked triangular shaped pastry that has a filling. In Kenya and Tanzania, this dish was introduced by Arab traders centuries ago. www.stellasmeza.blogspot.com SERVING SIZE: Makes 24 samosas SPECIAL EQUIPMENT: -"Tawa" pan or crepe pan or any wide, flat pan. -Rolling pin. -Knife. -Measuring Spoons. -Pastry brush. -Floured baking sheet or baking sheet covered in silpat. -Clean cloth. -"Wok" pan or any deep pan (for frying the samosas). INGREDIENTS FOR PASTRY: -2 Cups sifted all-purpose flour. -1 teaspoon garlic powder (not garlic salt). -1/4 teaspoon salt. -2 tablespoons vegetable oil (for making the dough). -3/4-1 cup water (for making dough). -1/2 cup vegetable oil in a bowl. -1/4 cup water (for making paste). -1/4 cup all-purpose flour (for making paste). -Medium bowl filled with 1/2 cup all-purpose flour (for rolling out dough). -3-4 cups of vegetable oil for frying the samosas (I use canola). INSTRUCTIONS FOR MAKING THE PASTRY DOUGH: -Mix all the dry ingredients-Flour, salt, garlic powder. -Add the vegetable oil and mix again. -Slowly add the water a little at a time, kneading constantly for 10-15 minutes until dough is soft, but not sticky. -Let the dough rest for 15mins-1 hour in a lightly greased and covered container. -After the dough has had a chance to rest, remove it from the container and shape it into a ball. -Lightly flour your work surface. -Flatten the ball of dough into a thick disc using your rolling pin and divide the disc into two equal parts using a knife. -Further divide the two pieces into three equal parts and roll these parts into balls. -Place these balls on the baking sheet and cover them with the cloth to prevent them from drying (all of them except the one you're working on ). ***HEAT YOUR TAWA/FRYING PAN ON MEDIUM HEAT AT THIS POINT**** -Roll out each ball into a flat circle that's 8 inches in diameter and 1/8 inch in thickness. Roll the balls of dough from the center out, and rotate as you do this. This will ensure that the thickness is even throughout. -Dip your pastry brush into the bowl with the oil and gently brush it on the surface of the rolled out dough (about 1/2 teaspoon per circle of dough). -Lightly sprinkler the oiled surface of the dough with some flour. -Roll out another ball of dough and repeat the two steps above, then stack the rolled out dough circles on top of each other. Repeat this until all the 24 rounds of dough have been stacked on top of each other. Do not apply oil or flour on the topmost round of dough. -Lightly push down on the edges of the stacked dough (be careful not to seal the edges together, or it will make it hard to separate once cooked). -Use your rolling pin to further roll out the stacked dough to around 10-12 inches in diameter. -Gently drape the 12 inch stacked round of dough over your rolling pin (it will be heavy), and transfer it over to the pre-heated tawa/frying pan. -Let each side of the dough cook for 11/2 minutes until it starts to look transparent, but not burnt. Make sure you apply gentle pressure on the edges of the dough as it cooks so that the edges will be easier to separate. -Transfer the cooked round of dough to your work surface and gently begin to separate the layers of dough apart. -Re-stack the cooked rounds of dough, making sure to line the edges so that you can quarter it into equal sizes. -Use your knife to quarter the stacked dough. You should have a total of 24 parts when done. ***AT THIS POINT, MIX THE 1/4 CUP OF ALL-PURPOSE FLOUR WITH THE 1/4 CUP WATER TO FORM A PASTE*** -Use the clean cloth to cover the dough quarters except for the one you are using .This will prevent them from drying. -To form a samosa pocket, place a quarter of dough on your work surface with the pointy tip of the dough quarter facing away from you. -Starting on the side of the dough closest to you, take one corner of the quartered dough and make a fold half-way towards the pointed tip that's facing away from you and make a fold as shown on the video. -Use your finder to apply some paste over that fold as shown in the picture. -Then take the opposite corner of the dough that you folded and fold it over onto the pasted side (make sure not to fold all the way to the edge or you will make your samosa pocket too narrow, making it hard to fill). -At this point, your samosa pocket will resemble a triangle with a flap over it (unfolded). -To fill the pocket, use a teaspoon to stuff the pocket (I used 11/2 teaspoon), then tuck the front flap of dough into the pocket to secure the stuffing (as shown in the video). -Apply some paste on the remaining top flap and fold it over tightly. Make sure there are no holes in your pocket or your samosa will come apart while frying or the oil will seep into the stuffing. Greasy samosas are not gross :-/ -Keep stuffing all the pockets and cover them with the cloth until they're all filled. ******SEE PART 2 FOR FILLING RECIPE*****- published: 08 Jan 2013
