Supercooled water
This is a demonstration of how normal water can be cooled below 0 C and was recorded in Ben Murray's research lab at the University of Leeds (UK).
Ice melts at 0 C, but water does not necessarily freeze at 0 C. There is no trickery and no added salt in the water, just pure mineral water straight from the shop. The bottled mineral water is cooled down in the low temperature bath to -8 C and it clearly remains liquid, this water is referred to as being supercooled. When it is poured into the bowl it freezes! The thermometer shows that the water in the bottle was actually at -7 C. In the Earth's atmosphere water droplets remain liquid right down to -37 C before freezing if the atmosphere is very clean. This is important for cloud formation where pieces of dust can cause ice to form at much higher temperatures (http://www.atmos-chem-phys.org/11/4191/2011/acp-11-4191-2011.html).
Supercooled water droplets can cause problems for aircraft since it freezes on their wings and fuselage. This can be disasterous and has caused crashes in the past. Supercooled water is also thought to be important in the build up of ice in aircraft fuel systems which has also cause aircraft to crash (see http://planetearth.nerc.ac.uk/news/story.aspx?id=813).

Relatively pure water cooled slowly below the freezing point may remain liquid (supercooled). It may then crystallize into ice quickly by some catalyst: here, strong vibrations, and seeding by an ice crystal.
And no -- for those who have seen sodium acetate and don't understand supercooled liquids -- this is NOT sodium acetate; it is just pure drinking water. Don't even bother suggesting otherwise; this issue has been covered completely in the comments.

This water is super cooled to somewhere around -10 degrees celsius. Since the water is nearly pure, it does not freeze at 0 degrees. However, upon adding a small piece of ice, crystals form and spread throughout the bottle, freezing the water within seconds. Blah blah..
