One of the best buys I've found lately are the large cans of sliced pineapple, packed in 100% juice, for $1 at Walmart. I dehydrate the pineapple slices and make the delicious juice into jelly or syrup. This is so much better than any dried pineapple I've ever had. The kind you usually buy has been treated with and oil, and been sugared. I don't like that at all...the taste is not appealing to me. The kind I'm showing you here is in a class of it's own. It fresh tasting and not sugary like the commercially prepared kind. I hope you'll try it and like it as much as we do. PINEAPPLE JELLY 3 1/2 cups pineapple juice 4 1/2 cups sugar 1 (1.75 ounce)package dry pectin Bring juice and pectin to a boil. Add sugar. Return to a hard boil for one minute. Remove from heat. Ladle into sterile jars. Wipe rims of jars and place hot seals and bands on. Process in boiling water bath for 15 minutes. Remove from bath onto towel lined kitchen counter, away from drafts. Let cool completely. Remove rings. Wipe jars and store in a cool dark place until ready to use. For syrup: reduce pectin to half a package. Enjoy!

Think you can only dehydrate fruits, meats and veggies? Think again. I just dehydrated a #10 size can of eggs. 1.) These are precooked, so the chance of salmonella is eliminated. 2.) It cost me less than 9 dollars after I figured it out, whereas a #10 can with S&H is about 22-28 dollars, depending on where you purchase. 3.) The FDA says it should be avoided, so, I figure that's my cue to figure out how to do it and get it done. 3 dozen of these eggs were cooked with margarine in the frying pan, and that is NOT something you want to do for a several year shelf life. Fats will just make the powder rancid after an extended period. Are these wasted, then? No. So long as I keep them in a freezer, they will be fine up to a year. Room temperature- meh...maybe 4 or 5 months, possibly six. These will get used for camping trips over the summer and fall. From now on, when I make these, I know to use *no* fats to cook them. Then i can use the seal-a-meal and an oxygen pack to give them a 5 year room-temp shelf life. That will be nice. And cheap. Hope this helps. Thanks for watching. :)

With the warmer weather approaching and talk of much more camping and backpacking in the air, it seemed a great time to begin preparing food ideas for the months ahead. Dehydrated foods are great for hiking and packing in that they need no special care, such as refrigeration. If a meal is not used one week, it is good for the next. Initially, some weight might be saved, but water, either carried or obtained along the way is a necessity. We cooked up excess spaghetti and meat sauce, left it sit overnight in the fridge. Dehydrated for about 6 hours and put it up in vacuum seal bags. Some of the bags we perforated by the hard sharp noodles, so next time we will put it in a small sandwich bag first, then the vacuum bag. Within days, we were on the Appalachian Trail and had an opportunity to cook that batch on a homemade alcohol stove. The first round was ever so slightly wet, but had good texture and taste. In this video we share some thoughts on making a homemade chili meal. Throughout the process, there are options, vegetables used, this pot had onions, green peppers, and lots of diced tomatoes. Meat was another choice, this batch had chicken breast. This chili had 2 types of beans, light kidney and pinto, the combinations on beans alone are plentiful. What seasonings to use? To your own taste. The dehydration process for the meals was 7 1/2 hours at 125-130 degrees. The bowls lost between 12-17 ounces of water in weight. More than we had anticipated. Fortunately, this is cooking, and extreme accuracy is not needed :) Keep in mind, that after dehydrating the chili, many dry ingredients can still be added.
