The Tia Maria Demo (aka Storm in a shot-glass)
Another one of my favourite physics demonstrations, and a great bar-trick, it shows an effect known as solutal convection, which is similar but different to thermal convection. Some of you will spot that the 'simple' explanation is wrong, because when the mixture rises to the top and loses alcohol it becomes more cream and should stay floating on the top and not drop back down - True, which is why there's more to it. If you're curious, an excellent account of the true physics of this demo (known as Benard-Marangoni convection) can be found in JHE Cartwright et al., Physica A, vol. 314, p. 291, (2002). This demo is quite safe, so feel free to try it, and if you use clean glassware, you can even drink it afterwards (providing you're of legal age for drinking alcohol, of course.) Nigella's Quick Christmas Cake with Chocolate & Tia Maria.
Quick, Simple & Tasty - Try it! Recipe Here... 350g - Chopped Dried Soft Prunes 250g - Raisins 25g - Currants 175ml - Honey 125ml - Tia Maria or similar favourite 2 Oranges - Zest & Juiced (I use less, 2 can make it soggy & too orangey) 1 teaspoon - Mixed Spice 2 tablespoons - Good Quality Cocoa 175g - Softened Unsalted Butter 175g - Dark Muscovado Sugar 3 - Free-Range Eggs, Beaten 150g - Plain flour 75g - Ground Almonds 1/2 teaspoon - Baking Powder 1/2 teaspoon - Baking Soda Try a square tin, it's easier to cut the slices. I've never eaten classic English Christmas cake, it looks wonderful, especially when heavily decorated, but the flavours are just too strong & almost bitter (depending on the recipe) I much prefer a sweeter treat. I've always felt that I've been missing out though, it does look so festive, then along comes Ms Lawson, with her modern, magical wand, and hey presto, I can eat Christmas cake ;-) Some people call this her chocolate Christmas cake, which it isn't really, the classic recipe doesn't have that much chocolate, but is lovely & subtle, you could add more, but be careful; I do add more Tia Maria, and let the fruit steep at least over night. I've served this at a couple of afternoon Christmas parties, with all ages in attendance, and it went down a treat, with almost nothing left at the end! The only difference is that I decorate it completely differently. Nigella's is totally impractical, and actually doesn't look that good, here's what I do... Mix <b>...</b>

Tia Maria
Tia Maria is a coffee liqueur made originally in Jamaica using Jamaican coffee beans. The main flavor ingredients are coffee beans, cane spirit, vanilla, and sugar, fermented to an alcoholic content of 31.5% (alcoholic content as sold has been reduced to 20%).
The drink was invented by Dr. Evans in Jamaica just after World War II. He invited acquaintances from the Country Club in Kingston to try various formulas at his lab until the final version was accepted.
According to legend, the history of Tia Maria started in the 17th century, in the days when colonial wars brought chaos to the Caribbean. During this period, a young woman, owner of a Jamaican plantation, was forced to flee with her chambermaid. In the chaos, her chambermaid just had the time to take her mistress's most treasured possessions, including a pair of black pearl earrings and an old manuscript containing the secret recipe for the family liqueur. In gratitude and in memory of her faithful "Aunt" Maria, the young noblewoman named this dark liqueur "Tia Maria".
The Tia Maria' brand was bought by the industry giant Pernod Ricard through their Malibu-Kahlúa International subsidiary in 2005, for distribution in France. It was sold to Illva Saronno in 2009.
It can be consumed pure and with ice, but is also frequently used as an ingredient for cocktails, with coffee, or in desserts (such as the layered liqueur-whipped-cream-and-cookie confection known as Tia Maria torte). It may also be mixed with milk and ice.
Popular cocktails containing Tia Maria include the terry, which combines the spirit with orange juice, and Jamaican coffee, featuring both Tia Maria and Myers's Rum. The New Year's Levee punch served by several Officers' Messes and Sergeants' Messes including that of the Ontario Regiment in Canada, is called "Moose Milk" and combines Tia Maria with eggnog and spices. Elvis Costello's song "The St. Stephen's Day Murders" refers to a drink made from Tia Maria and "that drink made from girders".
