Tomato Okra Recipe
ingredients:
1 lb OKRA (whole pods)
1 medium ONION (chopped)
1 cup TOMATO PUREE (or 2 chopped tomatoes)
2 Tbsp OLIVE OIL
1 tsp MUSTARD SEEDS
1 Tbsp CORIANDER POWDER
1 tsp CHILI POWDER
1 Tbsp white wine VINEGAR
SALT and PEPPER (to taste)
¼ cup WATER
directions:
Heat olive oil on medium heat and add onions. Cook for 1 minute and add mustard seeds. Add coriander and chili powder and continue sautéing onions for another minute. Stir in the tomato puree. Add salt. I like using puree because it's thick and sweet and acts like a gravy. You can substitute fresh chopped tomato instead if you prefer a thinner consistency. Add fresh okra.
Fresh! Buy okra that's bright green and firm, not soft and bendy. Small okra pods are best—1" to 2". Okra won't stay pretty in the fridge for too long, so use soon after buying (1-2 days). Trim the stems, but not too much—you don't want to cut into the pod and release the watery goo. I say goo, but not in a bad way. Okra is a dry climate vegetable and stores a lot of moisture in its pod—it's a kinda gooey moisture—that's why cut okra is often used in soups and gumbos as a thickener.
Mix the okra into the tomato gravy. Add vinegar and continue sautéing another minute. The tomato and vinegar will cut the "slickness" of the okra. Add ¼ water, cover pan and reduce heat to low. Let simmer for 5 minutes.
And that's it. Add pepper and adjust salt as needed and serve—I find it's a perfect side dish for blackened fish.

Okra Soup with Ogbono Ingredients
Okra 500g
Ogbono 1/2 cup
Palm Oil 3 cooking spoons
Assorted beef and fish (Mackerel)
Crayfish: a handful
Stock cubes: 2
Pepper and Salt (to taste)
Onions: 1 small bulb
Tips for cooking Okra Soup
1. Cut the Okra, don't blend it. This is so that the Okra soup will not be mushy when done. Okra soup is very slimy and blending the Okra makes is even more slimy.
2. Cook the Okra for only a few minutes so that the Okra will look green and appetising when you serve the dish. The more you cook the Okra, the more they change from green to dark brown and the Okra soup look unappetising.
Okra Soup goes well with all nigerian fufu recipes.

Pickled Okra
I made some homemade pickled okra. Added habanero peppers for a fire flavor... Here's the recipe:
GARLIC OKRA PICKLES
3 lbs. fresh whole okra pods, 3 to 4 in.
3 c. water
1 c. white vinegar
1/4 c. pickling salt
2 c.cloves garlic, minced
2 or 3 Chile peppers
Thoroughly wash the fresh okra; drain well. Pack the okra pods into hot clean pint jars, leaving 1/2 inch head space.
In a sauce pan combine the water, white vinegar, pickling salt and minced garlic. Bring the mixture to boiling. Pour the hot liquid over the okra pods in the jars, leaving 1/2 inch head space.
Prepare jar lids according to the manufacturers directions. Wipe jar rims, adjust lids. Process in a boiling water bath for 5 minutes. (Start timing when the water returns to boiling.) 4 pints

Recipe for making fry okra with shrimp, as it's done in the Caribbean. Using a recipe from a Guyanese friend, for what they call shrimps with fry ochro and is very popular in Guyana. I also noticed that there are similar recipes for cooking okra with shrimp in the Southern States of America.

Yeah it's kinda long, so if you have no interest in cooking okra it's probably not for you. Hey if you think this one is long just wait for my "Giant Pot Of Soup" video which I'll *Eventually* get posted:) I could make em shorter but I feel when you're doing a how-to vid you need make them a little longer to explain things properly. Not that there's all that much to explain here, LOL.
