Dasik (Tea confectionery) is a type of Korean traditional dessert, mainly made by grain powder and honey. 다식을 만들어서 먹은 역사는 굉장히 오래되었는데요, 흑임자 다식은 유중림(1705~1771)의 ‘증보산림경제’에 처음으로 나타난 후 역사 문헌에 가장 많이 등장한 다식이라고 합니다. The history of making and eating Dasik has been very long. It is said that black sesame dasik was the most common dasik that appeared in historical literature. The black sesame dasik appeared for the first time in a book called ‘Jeungbo sallim gyeongje’ written by Yu Jung-rim (1705-1771). - 재료 - 흑임자 100g, 꿀, 녹두 녹말, 천연 색소(쑥 가루, 단호박 가루, 치자 가루, 백년초 가루, 자색 고구마 가루) - What you need - Black sesame 100g, honey, mung bean powder, natural color powder(mugwort powder, sweet pumpkin powder, purple sweet potato powder) 1. 흑임자 가루에 꿀을 소량 섞어 20분간 쪄줍니다. Add honey to black sesame powder and steam it for 20 minutes. 2. 꿀을 섞어 한 덩어리로 만듭니다. 방망이로 찧어 기름을 낸 후 기름종이로 제거해줍니다. Mix the honey and make it a dough. Pound black sesame powder until you can see the oil. Remove oil with oil paper. *꿀의 양은 흑임자 가루의 상태에 따라 달라지기에 정확한 계량을 하지는 않았습니다. 반죽이 될 정도로 넣어주면 됩니다. 은근히 꿀이 많이 들어갑니다. The amount of honey depends on the condition of the black sesame powder, so I did not measure it accurately. Add honey until the powder just holds together. You need lots of honey than you expect. 3. 1번과 2번 과정을 3~4번 반복하는 게 좋습니다. (저는 두 번만 했습니다.) It is recommended to repeat steps 1 and 2 3 to 4 times. (I only did it twice.) 4. 녹두 분말(녹말)에도 꿀을 소량 섞어 덩어리를 만들어줍니다. Mix a small amount of honey with mung bean powder (starch) to make a dough. * 녹두 분말은 곱게 갈려 있지 않은 경우가 있으니 믹서기에 한번 갈아서 쓰시면 좋습니다. The mung bean powder may not be finely ground, so it is recommended to use it after grinding it in a blender. 5. 흑임자 반죽과 녹말 반죽은 냉동실에 보관합니다. 냉동 보관 한 흑임자와 녹말 다식 반죽은 사용하기 한두 시간 전에 해동하여 사용하면 됩니다.
