Hervé This
Hervé This is recognized as the father of molecular gastronomy and has been studying the science of food for over 25 years. Superstar chefs Ferrán Adrià, Moto, Wylie Dufresne and others who wow diners with their foams, emulsions, frozen gasses and very slowly cooked creations have all been influenced by his work.
In this video This invites us into his lab at the Collége de France in Paris, where he explains his interest in studying food chemistry, performs an experiment with mayonnaise and explores the more romantic side of our relationship to cuisine. He says he is not interested in cooking, taste or in nutrition; he's only interested in the science.

Sometimes things just spiral out of control, you make a track solely to use as a club tool, something to liven up your own sets. But then a couple of friends hear it and start asking for it so you give it to them too and the next thing you know it's become one of the anthems of 2010.
Ok it helps if you're one of the most respected house producers in the UK and your friends just happen to be Norman Cook and Annie Mac, but still despite all the best planning some of the biggest success are the most unexpected.
The track we're referring too is of course Hervé's massive 'Together' which makes spine tingling use of the chorus to Primal Scream's original Balearic classic 'Come Together', throwing in some of Hervé's trademark heavyweight bass and beats for full effect.
Since 'Screamadelica' was itself exploring the, then, new art of the remix to provide a 'Sgt Pepper's for the E Generation' this remake is just one logical step on and Hervé's nod to the UK originators of the art like Weatherall and The Orb.
Following a very limited release last year has now been completely re-recorded, replayed and remixed by some of the best around including DJ Fresh and C.R.ST. With a new generation of clubbers looking back to those early Halcyon days of Acid House and Rave, Hervé has skilfully produced a bona fide acid house anthem for 2011.

Comment obtenir une viande tendre ? Comment rattraper une mayonnaise qui a tourné ? Pourquoi la mayonnaise prend-elle? Que se passe-t-il quand on déglace une viande? Quelle différence entre une glace faite au congélateur ou celle figée quasi-instantanément avec de l'azote liquide?
Ces questions techniques sont mieux résolues quand elles bénéficient des résultats de la science.
La discipline scientifique nommée "gastronomie moléculaire" explore les pratiques et les transformations culinaires, cherchant les mécanismes des phénomènes qui surviennent lors de l'activité culinaire. Chaque connaissance nouvelle produite par cette discipline est l'occasion de transferts technologiques et d'applications pédagogiques.
Nul besoin pour cela d'équipement de laboratoire coûteux ou d'être un génie, un peu de passion, de patience et quelques bonnes idées suffisent amplement, comme en témoigne l'inventeur de la gastronomie moléculaire : Hervé This.

Hervé This est physico-chimiste INRA dans le Laboratoire de chimie analytique UMR 1145 et professeur à AgroParisTech à Paris. Il est directeur scientifique de la Fondation Science & Culture Alimentaire (Académie des Sciences).
Il est conseiller scientifique de la revue Pour la Science, animateur des Séminaires « Groupe d'étude des précisions culinaires » INRA/Collège de France/ESCF, membre du Comité éditorial de l'Actualité chimique, Société Française de Chimie; membre (fondateur) du Groupe Chimie et Société, Maison de la chimie; secrétaire de la Section « Alimentation humaine » de l'Académie d 'agriculture de France; membre du Conseil scientifique du Palais de la Découverte (section chimie); président du Comité Pédagogique de l'Institut des Hautes Etudes du Goût.
« Et si l'on se demandait comment enseigner la cuisine ? J'ai proposé - et j'y crois qu'il est bon de le répéter - que la cuisine est du lien social, de l'art, et de la technique. Logiquement il faudrait donc enseigner (1) le lien social ; (2) l'art (culinaire) ; (3) la technique.
Le plus facile, c'est évidemment la technique. Dans ce champ, il y a d'abord des gestes, lesquels provoquent des transformations. Ces transformations sont parfois compliquées, mais je propose ici quelques idées simples pour mieux comprendre ce que l'on fait. »

René Villard, dit Hervé Vilard, né le 24 juillet 1946 à Paris est un auteur-compositeur-interprète français.
Biographie :
Il grandit dans un orphelinat et dans plusieurs familles d'accueil dans le Berry, avant d'être adopté tardivement par Daniel Cordier.
Il débute sa carrière au début des années 60 aux côtés de Michelle Torr et Christophe avec lesquels il partira en tournée. Il est surtout connu pour la chanson Capri c'est fini, qui fut le tube de l'été 1965.
Parmi ses autres succès, on peut citer Fais-la rire, Mourir ou vivre, Sayonara, Les Anges du matin, Les enfants ont besoin d'amour, Champagne, Elle était belle, L'Idiot, T'es pas Dietrich, Pour la retrouver, La vie est belle, le monde est beau, Rêveries, Je l'aime tant, Mamma Mia, Venise pour l'éternité, Dans le cœur des hommes, et surtout les trois tubes Nous, Reviens et Méditerranéenne, composés par Toto Cutugno.
Didier Barbelivien, Michel Fugain, Danyel Gérard, Ernest Salfati , Jacques Revaux, entre autres ont composé pour Hervé Vilard au fil des ans.
Il a chanté les poèmes de Aragon, Marguerite Duras, Maurice Fanon, Ionesco, Prévert, Bernard Dimey et Jean Genet.
En 2010, Hervé Vilard fait partie de la Tournée Âge tendre et Têtes de bois saison 5, au côté notamment de Stone, Eric Charden, Michelle Torr, Sheila, Alain Turban...
