Tomato, Basil and Cheddar Soup -- Lynn's Recipes
Lynn demonstrates how to make a delicious Tomato, Basil and Cheddar Soup perfect for a cold winter day. Pair with a grilled cheese sandwich and you have a great lunch or dinner. 2 (28 ounce) cans of diced tomatoes 1 yellow onion, chopped 2 cloves garlic, chopped 1 teaspoon olive oil 2 cups vegetable broth 1 cup plain Green yogurt 1 cup cheddar cheese, grated ½ cup basil, chopped and loosely packed 2 teaspoons oregano 1 teaspoon sugar Salt and pepper to taste Over medium heat, add the olive oil to a large pot. Add the chopped onion and allow to cook until tender, about 3-4 minutes. Add the chopped garlic and cook for an additional 2 minutes. Pour in the two cans of tomatoes (juice and all) and the vegetable stock. Stir in the basil, oregano, sugar, and salt and pepper. Place the lid on the pot and allow to simmer 10 minutes. Stir in the Greek yogurt and cheddar cheese until well blended. Use either an immersion blender or food processor to puree the soup, if you desire a smooth texture. Garnish with chopped basil and grated cheddar cheese, if desired. In this Why Would You Eat That?, the boys help the office beat the winter cold (albeit in the parking lot) with khash. Khash is a traditional dish not only in Armenia, but in various countries in Eastern Europe, Central Asia & the Middle East. It's made of boiled down cow hooves & served it with vodka. The main ingredient in khash is cow's feet, but people take a lot of time and care to remove all the hair and clean those feet up. It's quite a process to get all the gelatin out of the hoof! The feet are soaked to remove dirt and general stinkiness and then boiled overnight until a thick broth forms and the meat has separated from the hooves. It may sound gross but did you know Jello was made from hooves as well? So you probably have eaten hooves yourself more than you'd like to admit! Though when making khash, other fun parts of the cow like head and intestines are often used as well. It tastes pretty bland by itself, so people usually season khash with lemon, salt and vinegar. www.maangchi.com Ingredients (for 2-3 servings): 2 cups of chopped kimchi ½ pound of pork shoulder (or pork belly), cut into bite sized pieces 2 Tablespoons of hot pepper paste 5 cups of water 2 stalks of green onions, chopped 1 package of tofu (14 ounces:396 grams), cut into bite sized cubes Directions: Combine the kimchi, hot pepper paste, kimchi juice, pork, and sugar in a heavy bottomed pot. Add water and bring to a boil over hight heat and cook for 30 minutes. Add tofu and lower the heat to medium low. Cook for another 10 minutes. Add green onion and remove from the heat. Serve hot with rice and a few more side dishes if desired.

We brought in special guest host BC Hoffman of Recipe wars to teach our wonderful Food Deconstructed viewers how to cook a beautiful, easy 5-course meal using just a blowtorch. First up, Torch-Roasted Red Bell Pepper Soup with charred corn. It's beautiful and creamy, with just a touch of heat, and is the perfect refreshing cold soup to start off a decadent meal. 4 large red bell peppers 1 tablespoons unsalted butter 1/2 cup chopped onion 1 tsp cayenne pepper 2 tsp crushed red pepper flakes 2 cloves minced garlic 2 Tbsp tomato paste 2 cups chicken stock 1 cup heavy cream 1 tablespoons chopped fresh cilantro leaves s and p 1 Tbsp cornstarch 1 cup sweet corn kernels, lightly roasted with blow torch Slice the peppers in 1/2 remove stems, seeds, and gums.. torch skin side up until the skin turns black and blisters. Remove and immediately place in a small paper bag or plastic container with a tight lid. Place in the freezer for 10 minutes; this will loosen the roasted skin. Remove peppers and rub off the black skin with your fingers. set aside. Saute butter, onions, and garlic until sweating to the oldies in a soup pot. Add torched peppers, tomato paste, and chicken stock. Bring to a low boil, reduce the heat, and then simmer for 10 minutes. Stir in the heavy cream, cilantro, cayenne, red pepper ...

Saute over med heat with olive oil 2 leeks roughly chopped 2 ribs chopped celery roasted vegetables 1 tbsp apple cider vinegar 4-6 cups veggie broth full.sc 1 handful chopped kale Blend with Immersion blender to your liking. Top with fresh parsley Add salt and pepper to taste

We're back with another installment of Don's Cook Nook, this time featuring the Ross family chicken soup recipe! This is a staple in our house in the colder months. Recipe Card on Pinterest - pinterest.com Chicken Soup Note: Recipe from Suzanne & Don Ross Makes a Large Pot of Soup Base Ingredients: 1 "Roaster" Chicken (4-5 lbs) 1 Bunch Celery 1 or 2 Medium Onions 1 Large Bunch Parsley 2 Packages Fresh Dill Salt & Pepper Pick your favorite veggies: Carrots Broccoli Cauliflower Green beans Turnips/Rutabaga Parsnips Leeks Rinse chicken and place in a large stock pot (we use a 12 quart size). Sprinkle generously with salt and pepper. Add chopped celery, onion, parsley, and dill. Cover with water, filling pot about ¾ full. If you are adding leeks you can add the tops at this time. Bring to a boil and cook covered loosely for 1 hour. Remove chicken and any stray bone or pieces of skin (and the leek tops). Place chicken on cutting board to cool. Turn down heat but keep the broth close to a boil. Meanwhile, chop up your favorite veggies into bite size pieces. Wait until your chicken is almost cooled, and then turn the heat back up to high.
