Video 5 Home Canning Whole Meals; Chili and Stew and Meat Sauces
You will learn how to make and home can whole meals; chili, stew and meat sauces, in this fifth video of the series. The video podcasts are to be used with detailed instructions and recipes on CanningUSA.COM If I Can, You Can! video podcasts are ten to twelve minute instructions for each canning method. The first being the easiest, beginning with jam and infused fruit, moving into the second which teaches how to preserve fruit in syrup and how to can homemade pie filling. The third teaches how to home can delicious, ripe and red summer tomatoes whole, diced or in your favorite tomato sauce! The fourth podcast shows how to can vegetables and soups and the fifth is about canning chili, stews and meat sauces. As an added bonus, we'll finish off the series with podcast six, teaching how to can homemade pâtés, meatloaf and fish.

If not, you are welcome to send me a PM (private message). Many people are intimidated by the idea of canning their own meats. This fear is unfounded -- canning meat is, IMO, one of the easiest things to can, especially using the raw pack method. In this video, I will show you how I take advantage of sales and put meat away for my family at a discount. If you are canning beef, you will be amazed at how tender and juicy the pressure canning process makes those less-tender (and less expensive) cuts. My favorite cut of meat to can are Round Steaks and London Broils (on sale of course). Besides saving you money, canned meat can also be a time saver -- as the meat is already cooked, whipping up a quick casserole takes only the time to assemble the ingredients and heat it up. Another advantage of canning meat is, you can do it any time of the year, including the winter when it's cold outside and it feels good to be in the kitchen working over a hot stove! : ) And if (okay, WHEN) inflation takes over, buying chicken breasts at a dollar a pound now (as I just did) and preserving them for later when they are $3 a pound is a great return on your investment so to speak. I have been filming the Skyliners on an incredible exploration into the world of free flight.
Tancrède, Julien, Seb and Antoine are pioneers in ‘highlining’ - a vertiginous combination of climbing, slackline and tightrope walking.
We travelled from our home in Chamonix to our training ground in the Verdon gorge, testing the limits for our ultimate goal...
We rigged highlines on the skyscrapers of Paris, and finally came to the spectacular cliffs and fjords of Norway.
Months of training led the Skyliners team to attempt their dream of complete freedom... the freedom of flight !

Iceland, Eyjafjallajökull - May 1st and 2nd, 2010
So I saw all of these pictures of that volcano in Iceland nobody can pronounce the name of, so I figured I should go and do something that is not news footage but something more cinematic. But the flights to get over took forever as expected (somewhat). 4 days after leaving I finally made it, but the weather was terrible for another 4. Just before leaving it got pretty good for about a day and a half and this is what I managed to get.
Wish I had more time. I missed all the cool Lightning and the Lava of the first eruption. But I figure this will just be a trial run for another day.
I am of course accepting sponsors to send me back there for more please...!! haha

Many people are taking up gardening, and an excellent way to preserve the harvest is by canning. Canning is easier than you may think, and can be a fun project for the entire family. When food is exposed to air, its also exposed to bacteria that can cause the food to spoil. Boiling food in a glass canning jar kills bacteria that may have come in contact with the food, and also creates an air tight seal to prevent new bacteria from getting into the jar, allowing food to stay fresh and edible longer. Following are instructions for canning tomatoes, one of the most popular of home-canned foods, but many other fruits, vegetables and meats can be preserved following similar steps. To begin make sure you have all equipment necessary for canning. Make sure the jars, lids and bands are not damaged. Wash the bands, lids and jars and set in a pot that is 180 degrees until the jars are ready to be used. Be sure to not let the water boil. Remove jars and lids when they are ready to be used. Fill the canner half full with water and put on the stove to a hot simmer of 180 degrees. As you begin to start canning there are a few simple steps to follow. For tomatoes wash, drain and place in a basket rack. Lower into a pot of boiling water for about 30-60 minutes or when the skins start to crack. Remove the tomatoes and immediately place in a pan of ice to help the cooling process. Once cool, peel away the skin and remove the cores. Depending on your preference you can keep the tomatoes ...

Canning Dill Pickles
Katzcradul demonstrate her method of canning dill pickles. DILL PICKLES About 6 pounds of cucumbers washed in cold water and covered with ice for approximately 2 hours. Place in each quart jar: 1/2 teaspoon whole pepper corns 1/2 teaspoon whole mustard seed 1/2 teaspoon whole dill seed 1/4 teaspoon celery seed 1/4 teaspoon crushed red pepper flakes (optional) 1 fresh dill sprig 1/2 fresh jalapeno (optional) 3 whole cloves garlic Brine: You will need approximately 1 1/2 cups brine per quart jar. 8 cups water 6 cups distilled white vinegar 3 tablespoons pickling salt Heat brine over medium heat. Stir until salt is dissolved. Place pickles, spices, grape leaf , dill sprig and garlic into jar. Force as many cucumbers into the jar as possible. Ladle hot brine over cucumbers to within 1" of the rim of the jar. Force air bubble out of the jar by running a butter knife around it. Wipe the rim of the jar with a dry paper towel. Place hot lids and bands on, screwing down finger tight. Process in a boiling water bath for 15 minutes. Remove to counter lined with a towel. Let sit undisturbed for 24 hours. Wipe jars, label and store in a cool place for at least 30 days. Any unsealed jars should be stored in the refrigerator.
