Ingredients:
1 large egg
4 tbsp milk
200g butter (for melting)
200g golden syrup
85g treacle
85g soft brown sugar
250g self-raising flour
1 tbsp ground ginger
100g medium oats
Instructions:
Preheat your oven to 150°C (300°F) and grease a baking tin or line it with parchment paper.
In a saucepan, melt the butter over low heat.
Add the golden syrup, treacle, and soft brown sugar to the melted butter. Stir the mixture until everything is well combined and the sugar has dissolved. Allow it to cool slightly.
In a large mixing bowl, beat the egg and then gradually add the milk while continuing to beat.

YORKSHIRE PARKIN | Sticky Ginger Parkin | British Recipe #gingercake #yorkshireparkin #gingerparkin
This bold and robust ginger parkin is made the traditional Yorkshire way, with steel cut oats, ginger pieces, and black treacle (molasses) that produce this deliciously sticky and chewy cake.
Unlike most everyday baking recipes, this is unusual in that the flavors and texture improve with time...so be prepared to bake this and then WAIT around 3 days before it reaches peak state!
The Parkin has its roots in both Yorkshire and Lancashire. The Yorkshire Parkin recipe historically uses black treacle/molasses and the Lancashire version is lighter and uses golden syrup. In this recipe, I have opted to use both although it is heavier on the molasses.

YORKSHIRE Parkin TRADITIONAL POPULAR Cake
Yorkshire Parkin is a traditional British cake, particularly popular in Northern England. It's known for its moist, sticky texture and rich, spiced flavor. Its history stretches back to the medieval period.
I will substitute oatmeal with rolled or quick oats in today's video for convenience. While this changes the texture, it's a common modification when oatmeal isn't readily available.
The earliest versions of Parkin date back to medieval times when oatmeal was a staple ingredient in the diet of the poor. Spices were a luxury, so early Parkin was likely much plainer than today's versions.
Over time, as ingredients like treacle (molasses) and ginger became more readily available and affordable, they were incorporated into the recipe. This transformed Parkin into a richer, spicier cake...

Parallel parking steps
Step-1. Find the right parking Spot.
Step-2. Align the rear bumper of your car to the rear bumper of the front car. Make sure your car is parallel 2 feet from the side of the parked car.
Step-3.Turn your wheels all the way to the right and back up until you can see the back car's license plate.
Step-4. Straighten steering wheel and back up until the front of your car passes the bumper of the first car.
Step-5. Turn your wheel all the way to the left and roll backwards until you are behind the car.
Step-6. Straighten the wheel and center the car.

Cut the parkin into squares or slices and serve. It's often enjoyed with a cup of tea. The flavors tend to develop and improve if you can resist eating it all on the first day.

INGREDIENTS

1 teaspoon all spice
¼ teaspoon nutmeg
¼ teaspoon salt
¼ cup golden syrup or corn syrup
⅔ cup black treacle or molasses
¾ cup brown sugar
½ cup butter
¼ cup crystallized ginger, finely chopped
1 egg, lightly beaten
2 tablespoons milk
DIRECTIONS:
1. Preheat oven to 300°F (150°C). Grease an 8” x 8” baking tin.
2. Measure out the steel cut oats and put through a food processor to break down. The oats should not be a flour and some chunks should remain.
3. Add all the dry ingredients into a large mixing bowl and combine: flour, oats, ginger, nutmeg, all spice, salt, and baking powder.
4. In a small saucepan add in butter, brown sugar, black treacle/molasses, golden syrup/corn syrup. Stir until the butter and sugar have melted, making sure not to boil. Then remove from the heat and allow to cool for 5 minutes.
5. Pour the warm sugar mixture into the dry ingredients, and stir until combined. Then stir in the crystallized ginger pieces, the egg, and milk.

This bold and robust ginger parkin is made the traditional Yorkshire way, with steel cut oats, ginger pieces, and black treacle (molasses) that produce this deliciously sticky and chewy cake.
Unlike most everyday baking recipes, this is unusual in that the flavors and texture improve with time...so be prepared to bake this and then WAIT around 3 days before it reaches peak state!
The Parkin has its roots in both Yorkshire and Lancashire. The Yorkshire Parkin recipe historically uses black treacle/molasses and the Lancashire version is lighter and uses golden syrup. In this recipe, I have opted to use both although it is heavier on the molasses.
INGREDIENTS
1½ cups steel cut oats (pulsed in food processor)
¾ cup all purpose/plain flour
1½ teaspoons baking powder
2 teaspoons ginger powder
1 teaspoon all spice
¼ teaspoon nutmeg
¼ teaspoon salt
¼ cup golden syrup or corn syrup
⅔ cup black treacle or molasses
¾ cup brown sugar
½ cup butter
¼ cup crystallized ginger, finely chopped
1 egg, lightly beaten
2 tablespoons milk
DIRECTIONS:
1. Preheat oven to 300°F (150°C). Grease an 8” x 8” baking tin.
2. Measure out the steel cut oats and put through a food processor to break down. The oats should not be a flour and some chunks should remain.
3. Add all the dry ingredients into a large mixing bowl and combine: flour, oats, ginger, nutmeg, all spice, salt, and baking powder.
4. In a small saucepan add in butter, brown sugar, black treacle/molasses, golden syrup/corn syrup. Stir until the butter and sugar have melted, making sure not to boil. Then remove from the heat and allow to cool for 5 minutes.
5. Pour the warm sugar mixture into the dry ingredients, and stir until combined. Then stir in the crystallized ginger pieces, the egg, and milk.

Welcome Friends! Welcome to Sunday morning and the old cookbook show. Today we're going to do a recipe out of the Five Roses Flour Cookbook, and this is a little bit different than the other Five Roses Cookbooks that
we've used so far. This one is from 1915, so right at the beginning of World War one, and it is also very much a community cookbook. It says right here at the front carefully chosen from the contributions of over 2,000 successful users of Five Roses Flour throughout Canada. So these are recipes that have been submitted to the cookbook and you really can tell that because, the recipe we're going to do today which is a Parkin, there are four parking recipes on this page. Each one a little bit different each one that would reflect the differences in family taste.
Ingredients:
1 pound coarse oatmeal
½ pound lard
½ pound cooking sugar
2 tsp mixed spice**
1 pound all purpose flour
1 pound molasses
2 tsp ground ginger
1 tsp baking powder
Juice of one lemon
3 eggs
Milk to stiffen (¼ - ½ cup)
Method:
Mix well and bake in a slow oven in dripping tin.
But I’ll give you a little more…

I will substitute oatmeal with rolled or quick oats in today's video for convenience. While this changes the texture, it's a common modification when oatmeal isn't readily available.
The earliest versions of Parkin date back to medieval times when oatmeal was a staple ingredient in the diet of the poor. Spices were a luxury, so early Parkin was likely much plainer than today's versions.
Over time, as ingredients like treacle (molasses) and ginger became more readily available and affordable, they were incorporated into the recipe. This transformed Parkin into a richer, spicier cake.
