Brunswick stew is a traditional dish, popular in the American South, associated with squirrel meat. The origin of the dish is uncertain, but it is believed to have been invented in the early 19th century by a plantation cook named Danny Mears.[where?] Two states compete for originating it, in addition to claims of a German origin.
Recipes for Brunswick stew vary greatly, but it is usually a tomato-based stew, containing various types of lima beans/butter beans, corn, okra, and other vegetables, and one or more types of meat. Claims of authenticity call for squirrel, opossum or rabbit meat, but chicken is most commonly used in modern versions. Some versions have a distinctly smoky taste. Eastern North Carolina Brunswick Stew has potatoes, which thickens it considerably. Eastern Virginia Brunswick Stew tends to be thinner, with more tomato flavor and less smoky flavor.
The stew essentially resembles a very thick vegetable soup with meat. The key distinguishing factor between soup and Brunswick stew is the consistency. Brunswick stew must be thick; otherwise, it would be vegetable soup with meat added. Most variations have more meat and vegetables than liquid.

I'll start by saying that I'm sure there are several ways to cook Brunswick stew out there. However different they are I'm sure they are great stews, don't you wouldn't be making them. I didn't get into the exacts on the stew because I know they are different around the country and even here in Georgia. This is just a generalization of what to expect from a stew in my neck of the woods. Hurricane Matthew kept us from hunting camp, so I canned the Brunswick Stew.
Never made it to hunting camp, due to hurricane Matthew were only about 40 miles from the Georgia coast. Miss Jane and I will be eating Brunswick stew for a LONG time. Chuck will get some!!

A 4th of July Cookout cooking Brunswick stew and pork butt roasts. We started out having to split some wood for the cookout with the log splitter and then we get down to cooking the Brunswick stew in the big ol cast iron pot and then start cooking the pork butt roasts on the homemade grill....

Recipe: Ingredients 1 Large Onion 2 Big cans of diced tomatoes 1 Regular can of tomatoes 2 cans of cream corn 2 cans of whole kernel corn 1 can early peas Bag of potatoes 1 Boston Butt Instructions: Cook the Boston Butt in the oven or in water on the stove top till it’s done. Let it cool then chop up the Boston butt. Chop the onion up & put them together in a big pot. Open up your cans of tomatoes pour them all over the meat & onions. Open up the cream corn and pour it in. When you open up the whole kernel corn, drain off the juice first, then add to the pot. When you start cooking it altogether make sure you put it on low & keep stirring to keep it from scorching. Let it cook for a while...
