Dolma is a family of stuffed vegetable dishes in the cuisines of the former Ottoman Empire and surrounding regions such as Russia, Middle East and the Caucasus and Central and South Asia. Perhaps the best-known is the grape-leaf dolma. Common vegetables to stuff include onion, zucchini, eggplant, tomato and pepper. The stuffing may or may not include meat. Meat dolmas are generally served warm, often with garlic yogurt sauce; meatless ones are generally served cold, though meatless dolma are eaten both ways in Iran.The history of Dolma is not extensively documented.
Dolma is a verbal noun of the Turkish verb dolmak, 'to be stuffed', and means 'stuffed thing'.
Dolma is a stuffed vegetable, that is, a vegetable that is hollowed out and filled with stuffing. This applies to courgette, tomato, pepper, eggplant, and the like; stuffed mackerel, squid, and mussel are also called dolma. Dishes involving wrapping leaves such as vine leaves or cabbage leaves around a filling are called sarma though in many languages, the distinction is usually not made. Sarma is derived from the Turkish verb sarmak which means 'to wrap'. Other variants derive from the Turkish word for 'leaf', yaprak.
Dolma cooked with olive oil without minced meat is sometimes called yalancı which means 'liar' or 'fake' in Turkish.It is 'fake' because it does not contain meat.
Different types of dolma
In some countries, the usual name for the dish is a borrowing of dolma or yaprak (meaning 'leaf' in Turkish), in others it is a calque, and sometimes the two coexist with distinct meanings: Albanian: japrak; Arabic: محشي maḥshi ('stuffed'), محشي ورق عنب (maḥshī waraq 'inab, 'stuffed grape leaf'); Persian: دلمه dolma; Greek: ντολμάς dolmas (for the leaf-wrapped kind) and γεμιστά yemista 'stuffed'; Kurdish: dolma (دۆلمە), yaprakh (یاپراخ). In Aleppo, the word يبرق yabraq refers to stuffed vine leaves, while محشي maḥshī refers to stuffed cabbage leaves and stuffed vegetables.
Some Armenian linguists have proposed that dolma, which is pronounced tolma in Armenia, is borrowed from the Urartian word for grape vine, toli, which would make dolma a derivative of tolma which in turn comes from toli. This proposal has not been adopted by other linguists.

Its not that difficult to make, depending how many servings you are making. This is a traditional middle eastern Dolma recipe. Mom's Chaldean Dolma - Recipe - How to make The Best Stuffed Grape Leaves on Planet Earth!
This is my Mom's own recipe for making Chaldean Dolma. It is the greatest you will ever eat period! I love it and can eat it everyday for the rest of my life.
But no matter how you like it, this is a great starting point for making some great Dolma. Dolma pretty much means stuffed grape leaves/vegetables. It's the word we use for this dish.

Ingredients
Filling/Stuffing/Forcemeat
3 Cups of Rice (Moistened & Cleaned with Water)
3 Pounds of Ground Round Beef
4 Cans of Tomato Paste (6 oz.)
1 can of Diced Tomatoes (14.5 oz.)
3 Chopped Yellow Onions
1 1/2 Chopped Heads of Garlic
4 Tablespoons of Salt
2 Tablespoons Mixed Spices (Baharrat Mid-Eastern Spice)
1 Tablespoon Semaghh (?Red? Mid-Eastern Spice) Seasoning
1 Teaspoon Garlic Seasoning
1 Teaspoon Citric Acid (Lemon Douzi)
Vegetables for Filling
Bag of Grape Leaves
8-10 Large Yellow Onions
3-4 Cubanelles (Large Peppers)
2-3 Squash
1 package of Celery (16 oz)
Very Basic Cooking Instructions
1. Prepare Onions & Other Vegetables
2. Thoroughly Mix Together Filling Ingredients
3. Stuff Grape Leaves, Onions & Other Vegetables
4. Place in Large/Deep Cooking Pot
5. Add 2 Cups Water, 1 Cup Lemon Juice, 1 Tablespoon Salt, & 1 Tablespoon Lemon Douzi (Citric Acid) to pot
6. Cook For 1 to 1 1/2 hours
7. Enjoy
