Many people are taking up gardening, and an excellent way to preserve the harvest is by canning. Canning is easier than you may think, and can be a fun project for the entire family. When food is exposed to air, its also exposed to bacteria that can cause the food to spoil. Boiling food in a glass canning jar kills bacteria that may have come in contact with the food, and also creates an air tight seal to prevent new bacteria from getting into the jar, allowing food to stay fresh and edible longer. Following are instructions for canning tomatoes, one of the most popular of home-canned foods, but many other fruits, vegetables and meats can be preserved following similar steps. To begin make sure you have all equipment necessary for canning. Make sure the jars, lids and bands are not damaged. Wash the bands, lids and jars and set in a pot that is 180 degrees until the jars are ready to be used. Be sure to not let the water boil. Remove jars and lids when they are ready to be used. Fill the canner half full with water and put on the stove to a hot simmer of 180 degrees. As you begin to start canning there are a few simple steps to follow. For tomatoes wash, drain and place in a basket rack. Lower into a pot of boiling water for about 30-60 minutes or when the skins start to crack. Remove the tomatoes and immediately place in a pan of ice to help the cooling process. Once cool, peel away the skin and remove the cores. Depending on your preference you can keep the tomatoes ...

Growing BIG Vegetables using Compost Tea
When you maximize the soil potential, you maximize the plant potential. - 46 lb celery - 18 lb carrots - 35 lb cabbage - 60 lb swiss chard - 35 lb zucchini - 40 potatoes from 1 plant Healthy plants resists bugs and slugs from eating them. Plants that don't have to spend energy fighting off pests and diseases can focus all their resources on growing bigger. And if you maximize the soil's potential, it will maximize the plant's potential. Feed the soil, not the plant. Using compost tea to deliver the nutritional equivalent of 500 lbs of compost. All the micro-organisms in the soil are stimulated to such a high point that they give the plant the maximum food for it's production. And more food for the soil means bigger, tastier, healthier veggies. In fact, they are ultra healthy, as measured by their brixx level, which is the amount of plant sugar they contain. In the grocery store, most plants have a Brixx level of between 6 and 10. These plants weigh in at a whopping 20, which means they taste more than twice as good, and are not stringy. Yukgaejang g is korean soup made with beef and vegetables. It's hot and spicy. Koreans love this soup especially in the winter time. full recipe: www.maangchi.com Ingredients: 1 Lb of beef brisket, half an onion, water, 12 green onions, 5 cups of bean sprouts, fern brakes (kosari), 1 stalk of celery, garlic, hotpepper flakes, sesame oil, vegetable oil, salt, soy sauce, and black pepper Directions: 1. In a big pot, add beef brisket, 14-15 cups of water, and half an onion, then boil it for 40-50 minutes over high heat. 2. Cut the green onions, celery, and fern brakes (kosari) into pieces about 7 cm in length. Put them all into a big bowl. 3. Put 3 tbs hotpepper flakes, 1 tbs of sesame oil, 1 tbs of vegetable oil, 1 tbs soy sauce, 1 tbs of salt, and some grounded black pepper into a small bowl and mix it. This is your hotpepper oil sauce. 4. Put the hotpepper oil sauce into the vegetables mixture and mix them all up. 5. When the beef is well cooked, take it out and set it aside to cool down. 6. Add the mixture of vegetables and hotpepper oil sauce into the boiling beef stock. Boil it for 20-30 minutes. 7. Slice the beef thinly and add it into the boiling soup. Cook it about 5-10 minutes more. Serve with rice. Enjoy it!

>This short film is an exploration of the aesthetic of life and degradation.
Five years ago, I installed an ant colony inside my old scanner that allowed me to scan in high definition this ever evolving microcosm (animal, vegetable and mineral). The resulting clip is a close-up examination of how these tiny beings live in this unique ant farm. I observed how decay and corrosion slowly but surely invaded the internal organs of the scanner. Nature gradually takes hold of this completely synthetic environment.
The ants are still alive : the process will continue…

www.maangchi.com Dakjjim is braised chicken with vegetables. Dak (닭) is chicken and jjim (찜) is a cooking term for "braise" or "steam." So dakjjim is also called jjimdak. There are a few different versions of jjimdak in Korean cuisine, depending on the region it comes from and the ingredients used. The popular Andong jjimdak is a special dish from the city of Andong. This dakjjim recipe that I'm introducing to you to today is Andong style, which so many people have requested. I'll post a hot and spicy dakjjim (called dakbokkeumtang or dakdoritang) recipe someday in the future. Ingredients for 4 servings: Chicken thighs, starch noodles, soy sauce, oyster sauce, rice syrup (or corn syrup), dark brown sugar, vegetable oil, dried red peppers, potatoes, garlic, cucumber, green onions, carrot, white mushrooms, onion, green chili peppers, red chili peppers, ground black pepper, sesame oil, and sesame seeds. Total preparation time: 50 mins to 1 hour. Directions: Prepare chicken and noodles: Trim the excess fat from 3 pounds of chicken thighs (or breasts or wings) and cut them into bite-sized pieces (1 inch x 2 ½ inches). Rinse the chicken in cold water and soak it for a few minutes. Drain and set aside. Soak 100 grams (3.5 ounces) of starch noodles in cold water. Make sauce: Combine ¼ cup soy sauce, ¼ cup oyster sauce, ¼ cup rice syrup (or corn syrup), and 1 tbs dark brown sugar in a bowl. Set aside. Prepare vegetables: Cut 3 peeled medium sized potatoes into 1½ inch thick ...
