Sustainable seafood and integrated fish farming in China
The story is about 'Integrated Fish Farming', using traditional methods that have been adapted to modern circumstances, and opportunities to apply these as a low ecological footprint fish farming model. It shows two families: The Ma family farms fish and works with other families that farm silkworms, while the Wang family farms both fish and silkworms themselves and then sells the raw silk for production of finished silk products in the village. Both families live and work in a village in China where the fish/silkworm cycle is the typical fish-farming practice, and where fish and silk are the major cash products. The cycle works like this: silkworms are fed on leaves of the mulberry tree which grows around fish ponds. The waste from Mulberry and silk worms provides some feed for the fish and the Fish waste fertilises the dykes and the mulberry - creating an integrated farm ecosystem with a low ecological footprint. This type of system is widely used in China, and the sum total of carp production on farms like this is more than 10 million tons per year, which is more than the total amount of fish produced by any other nation. Full recipe is at www.maangchi.com Hot spicy jjamppong (1 serving) Ingredients Noodles for jjamppong, as well as... for stock: 10 dried anchovies, 3 shiitake mushrooms, a handful of dried kelp (1/3 cup), half a medium size onion meat and seafood: ¼ cup of pork, 3 large shrimp, 4 mussels, a few pieces of squid vegetables and seasoning: garlic, ginger, vegetable oil, oyster sauce, fish sauce, hot pepper flakes, ground black pepper, onion, carrot, green onions, leeks, white mushrooms, bamboo shoots. Let's start! First step: make stock 1. Pour 7 cups of water into a pot. Add 10 large dried anchovies (after removing heads and guts), a handful of dried kelp, half a medium sized onion, and 3 dried shiitake mushrooms. 2. Boil it for 10 minutes over high heat. Then lower the heat to low-medium and boil for 30 minutes more. Then set it aside Second step: make mixture of hot pepper flakes and vegetable oil 1. In a small bowl, mix 1½ tbs of hot pepper flakes and 1 tbs of vegetable oil. *tip: The reason we make this mixture is to prevent the hot pepper flakes from floating in the soup when it boils. There are a number of variants of this dish, according to different places and seasons... but the absolute essentials are mussels and clams, to which you can add for example scampi, squids, shrimps and baby cuttlefish. It's a classic dish of Italian cuisine and should be made in the winter and summer when the main ingredients are of top-quality and at their freshest. Fresh fish might cost a bit more, but you'll be compensated with a fantastic dish. Let me put on my apron and we can start! First of all, prepare the fresh pasta dough, so combine the flour with the eggs and a pinch of salt and knead until you have a dough like this, wrap in cling film and let it rest in a fresh place for at least half an hour. If you want to see the videorecipe, look for "fresh egg pasta" on the Yellowsaffron channel or download the iphone application. And now, move on to the other preparation, the ravioli filling, so add no more than one tablespoon of oil and a crushed clove of garlic to a pan, and sauté until golden brown. Meanwhile, in a food processor, combine... the salmon, cut into pieces, and the shrimps. Then pulse until coarsely chopped.. small pieces should still be visible. It's ok... now sauté in the pan... for a few minutes. I have a confession to make! I am not a crab nor shrimp person... UNLESS it's in GUMBO!! A lot of people don't know that about me. I actually grew tired of a lot of seafood during a family reunion in Baton Rouge, LA. I swear everyday we ate crab, shrimp, catfish( I still love catfish), and etc. I couldn't stand the stuff for almost 10 years. Once in a while I'll crave some fried shrimp, but it's very rare that I eat crab.There are thousands of recipes for gumbo. This recipe is mine. I find it easy and affordable. The secret to my gumbo? CHICKEN WINGS. I add chicken wing parts( not the tips) to my gumbo and this adds so much flavor. The chicken itself is so tender when the gumbo is done its falling of the bone and in my opinion, the chicken is the best part. I also add chicken broth to my gumbo( I prefer low sodium chicken broth). Chicken flavor goes a long way. I also add okra. I'm an okra lover, but if you're not you can skip out. When making gumbo I like to keep it as simple as gumbo can possibly be. I have no need for oysters, and crawfish, and prawns, and etc. I stick with my basic ingredients, and I have never had any complaints. If you are a beginner, I suggest watching the video below a few time BEFORE actually cooking this dish. One step could mess up the whole pot( especially if you mess up the roux) and you will have to start over again, so be careful, and stay close to your pot.
