www.permies.com Kimmo, of "at wits end homestead" in Victor, Montana, shows us his technique for making cottage cheese. And then he uses the whey from the cottage cheese to make ricotta cheese. He uses milk straight from the cow, adds some rennet and lets it sit for five hours. This makes for a really sweet cheese. After the cheese chunks are sorta diced, he puts it all in a bigger pot to warm it a bit. About 90 minutes later he strains it so he has cottage cheese and whey. He boils the whey, adds apple cider vinegar and PRESTO! he has ricotta cheese. The rest of the whey will be for feeding the pigs. music by Jimmy Pardo

Ricotta, Rapini and Bacon Pasta Serves 4 1 lb (140 g) short pasta like rigatoni, orecchiette or fusili 4 slices bacon 1 medium white onion cut into a large dice 1 bunch rapini, also known as broccoli rabe, ends cut and full stalks chopped into 1 inch (2.5 cm) lengths 1 cup (230 g) fresh ricotta fresh grated lemon zest (optional) salt and pepper to taste Boil a big pot of water with salt and throw pasta in. Time for four minutes less than suggested cooking time. Put a large heatproof serving bowl in the oven at the lowest heat setting. In a skillet, fry up bacon until crisp, remove from pan and drain onto paper towels, chop or crumble into half inch pieces. Leave about 2 tablespoons (30 mL) of bacon fat in pan, discard the rest. Ingredients: 1/2 gallon whole milk 1 teaspoon kosher salt 3 Tablespoons lemon juice Bring the salt and milk to a boil over medium low heat, then lower heat to a bubble. Add the lemon juice and in 2 minutes you have your cheese ready to strain. For added flavor you could add (when the cheese is still warm) some olive oil, fresh herbs and/or more salt. This makes 2 cups of cheese .... about 1 pound (470 grams) Keeps for 4 days in the refrigerator.
