FD Sonoma: Tilt-Shift Formula Drift
Formula Drift made its yearly stop in Sonoma, California last weekend. I've been looking forward to this event, simply because I live less than an hour away and I had a guaranteed bed to sleep in. Upon my arrival, I found that I was not on the list for media, since KP Race and Victor Moore were unable to attend, my credentials were void. So I made the best of my bad luck and decided that if I couldn't get the really close action shots, I would take a few steps back and shoot a different perspective. The next morning, I drove down to Borrowed Lenses in San Carlos and rented a tilt shift lens. Over the past few months, my interest in these lenses has grown quite a bit and when I saw Mister Geoff Pitts from Thunder Drift taking photos with one for FD Las Vegas, I knew I had to try it. Fate truly couldn't have presented me with a finer opportunity. :: Joe Ayala

Roasting a Thanksgiving turkey can sometimes be a difficult affair. In this video, Williams-Sonoma culinary expert Amanda shows you how to take the guess work out of roasting a Thanksgiving turkey. Before you begin the roasting process, it is important to place the rinsed, dried and seasoned turkey at room temperature for about an hour. Once this has been done, place it on a roasting pan and put it in the oven. If you are stuffing your turkey, it is a good idea to cover the breast part of the turkey with an aluminum foil so that it roasts evenly. If you are not stuffing your Thanksgiving turkey, you should roast it breast side down. Take out the turkey every 30 minutes for basting. It is important to close the oven door when you are basting the turkey, as an open oven door can considerably lower the oven temperature and prolong the cooking time. Continue basting at regular intervals till the turkey is roasted evenly. You can use a probe thermometer or an instant read thermometer to monitor the roasting process. Alternately, you can use the knife and cut into the thickest portion near the thigh to check the quality of the roast. If the knife runs clear of all the juices, the roasting is done. Use turkey lifters to place the roasted turkey on a carving board and cover with an aluminum foil for 20 minutes to let the juices get evenly absorbed. In this interesting video from Williams-Sonoma, you get to see how to brine a turkey and how brining turkeys is ideal for ensuring a flavorful and moist dish. Williams-Sonoma Culinary Expert Amanda guides every step of the way. The brining process uses salt for providing extra moisture and is useful when you have to roast the turkey for a long period of time. If you are using a liquid brine, you can submerge the turkey for 24-36 hours. The advantage of a liquid brine is that it allows every small portion of the turkey to absorb the salt water, leaving behind a juicy, extra flavorful taste that is not very salty. You can either dissolve salt in water or use a brine mix of salt and spices. A mix for brining turkeys involves first boiling a gallon of water and then adding the brine mix and stirring so that the salt dissolves completely. Bring the brine mix to room temperature before you submerge the turkey. To brine the turkey, you first rinse the turkey and use a brining bag. Fill the bag with the mix. Close the bag to prevent excess air entering in. You can refrigerate the bag. Flip the turkey once or twice in 24-36 hours. Later, discard the brine and rinse the turkey. Dry the bird. You are now an expert in brining turkeys and ready for the perfect turkey recipe!
