In this video, you'll learn how to make tamales from scratch. Authentic tamales are essentially steamed cornmeal dumplings filled with flavorful fillings, like pork, beef, and chicken. Tamales arrive like a gift in a corn husk or banana leaf; maybe that's why they're a Christmas tradition. You'll learn all about traditional tamale fillings, like braised pork and beef, and get a glimpse of the endless variations, such as chicken, roasted vegetables, cheese, beans, or seafood. We'll show you all the tools you'll need to make them, including a Dutch oven, a large steamer, tongs, and spoons. Making tamales from scratch takes some time. To get started, you'll learn how to slow cook you're your meat with traditional seasonings and spices. You'll see how to prepare the husks to make them pliable, then you'll learn how to make the tamale masa, the cornmeal mixture that's essential to making tamales. You'll discover how to tell if your masa dough is moist enough. Then learn how to wrap up your tamales, combining the filling and the masa dough. Then see how to steam tamales in a steamer. Make a lot of tamales and freeze them; we'll show you how to wrap them up for storage. Tamales Masa Spreader ("Extendedor de Masa" in Spanish) is fast & easy to make tamales. Just one stroke for a perfect spread to make one tamale in each corn husk. We are thankful for family! A tamale (Spanish tamal, from Nahuatl tamalli) [1]is a traditional Mexican dish of Mesoamerican origin, namely from the Aztec empire, which was soon widespread by Spanish conquistadores throughout their other colonies of what is now Latin America, consisting of steam-cooked corn dough (masa) with or without a filling. Tamales can be filled with meats, cheese (post-colonial), and sliced chilis or any preparation according to taste. Tamales are generally wrapped in corn husks or plantain (post-colonial) leaves before cooking, depending on the region from which they come. Tamales have been shown to originate in Mesoamerica as early as 5000 to 8000 BC. [2] They owe their existence to the process of Nixtamalization. Aztec and Maya civilizations as well as the Olmeca and Tolteneca before them used tamales as a portable food, often to support their armies but also for hunters and travelers. There have also been reports of tamale use in the Inca Empire long ...

Roasted Peppers and Corn Tamales
Tucked away in a nondescript section of downtown Beaverton— a stones throw from Portland, Oregon— there's a small, cozy restaurant that is known for their Central American cuisine. It's aptly named Gloria's Secret Cafe', where El Salvadorian native Gloria Vargas prepares her signature tamales. As Vargas explains in the video, it's not that hard to make authentic tamales, and true to her word, she shows us just how to do it. Making Tamales In Oaxaca Mexico
In a Mexican village located on the coast of Oaxaca local women traditionally prepare tamales for a birthday celebration The woman whose birthday it is works with her daughter in law and her sister in law. In the background you can hear the radio intermixed with "sounds of the campo" including children doing their English class homework. When new banana leaf is needed, one woman steps from the shelter to harvest some leaves from a banana tree. The chickens to be future tamales scurry the ground. As the birthday woman continues to assemble what will be 500 tamales, her grandson plays mañanitas, the traditional Mexican birthday song on the instrument he is learning in school.
