Cubed radish kimchi (kkakdugi)

A type of kimchi made with cubed radishes. Korean radish (mu or muwoo in Korean) or daikon is used to make this kimchi.
Ingredients:
Korean radish (or daikon), salt, sugar, fish sauce, hot pepper flakes, green onions, garlic, ginger.
Directions:
Peel 4 pounds of Korean radish (or daikon).
Rinse in cold water and pat dry.
Cut it into ¾ to 1 inch cubes. Put into a large bowl.
Add 2 tbs salt, 2 tbs sugar, and mix well.
*tip: If you like your kkakdugi sweeter, add 1 or more extra tbs of sugar.
Set aside for 30 minutes.
Drain the juice from the radish into a small bowl.
Add 2 tbs minced garlic (about 5-6 cloves garlic), 1 ts minced ginger, 4 stalks of chopped green onions, ¼ cup fish sauce, 2/3 cup hot pepper flakes, and ⅓ cup of the juice from the radish.
*tip: The amount of hot pepper flakes you use depends on your taste; use ¼ cup hot pepper flakes for a mild version. For a vegetarian version, replace fish sauce with soy sauce.
Mix it up well until the seasonings coat the radish cubes evenly, and the radish looks juicy.
Put the kkakdugi into a glass jar and press down on the top of it to remove any air from between the radish cubes.
You can eat it right away, and then store it in the refrigerator. Or you can let it ferment by keeping it outside of the refrigerator for a few days. When it starts fermenting, little bubbles may appear on top the kkakdugi and it'll smell strong & sour. Then put it in the refrigerator.
Kkakdugi goes with kongnamulguk (soybean sprout soup) and ox bone soup.

Time lapse radish seeds sprouting, top and roots growing
Time lapse sequence shot using Pentax K110D and Harbortronics DigiSnap 2100 set to take a frame each 14 minutes 24 seconds. The time lapse spans 9 days. Two 90 watt compact floresecent lights where used for both the camera shooting light and the grow lights. The lights were set on a timer for 18 hours on and 6 off (for the health of the plants). The jump in the video is the 6 hour gap in the darkness. Amazing how fast the radishes grew. Music by Roland White - Gaieté Acadienne [CD-Trying to Get to You]. Hope you enjoy.

Ingredients:
Korean radish (or daikon), salt, vinegar, hot pepper flakes, sugar, garlic, green onion, sesame seeds.
Directions:
1. Peel a radish and cut it into thin matchsticks.
2. Put 3-3½ cups of radish matchsticks into a large bowl.
3. Add 1 tbs kosher salt and mix it by hand. Set aside for 5 minutes.
4. Squeeze out any excess water from the radish strips.
5. Add 2 cloves of minced garlic, 1 stalk of chopped green onion, 1 tbs vinegar, 2 ts hot pepper flakes, and 2 ts sugar.
6. Mix together by hand until well combined.
7. Add 1 ts roasted sesame seeds and mix it up a bit more.
Transfer it to a serving plate and serve it with rice.

Big Cover Crop Radishes--Are they good or not so good?
It seems like marketing companies like to show the "State Fair" Radishes in their sales pieces..."my radish is bigger than their radish" kind of marketing. Well, are the "State Fair" radishes that good? Are they "better" than the longer, smaller tubers? In this video you'll see what I found in a field in NW Ohio on 11/11/2010. Japanese Daikon Radish Patch
Emilys great aunt shares the bounty of her daikon radish patch. Daikon play an important role in Japanese home cooking and is used in soups and many side dishes. Daikon can grow very large and farmers in Japan will often grow daikon during the summer and autumn which reflects the important role this jumbo radish plays in the Japanese diet.
Viewers may be wondering why Emilys great aunt is wearing a motorcycle helmet while harvesting her daikon. I had previously been filming a spider I found in her field when she rode by on her scooter and stopped to say hi. Being the generous person she is she could not leave without giving me some goodies from her field. I later tried to share the daikon bounty with our neighbors only to find that Emilys great aunt had already made her rounds and given Daikon to everyone. Our family will therefore be happily eating daikon with every meal for the next week.

Spicy radish and beef soup

This soup is another recipe which is very delicious and easy to make. When you boil this soup, the aroma is irresistible. : )
I filmed this video recipe with Mina when I visited Copenhagen, Denmark for my Gapshida project.

We made a huge portion for our meetup party that night, and everybody who came to the party enjoyed the soup and asked for the recipe.
Ingredients:
Beef (brisket or skirt steak), white radish (or Korean radish or daikon), hot pepper flakes, fish sauce, sesame oil, garlic, green onions, ground black pepper, salt
Directions (for 2 servings):
cooking time: 1 hour
1. Cut 250 grams of radish (about 2 cups) into pieces 1 inch x 1 inch and ⅛ inch thick (2.5 cm x 2.5 cm and 0.3 cm thick). Put into a pot.
2. Cut 250 grams of beef brisket into bite sized chunks and put it into the pot.
3. Add 1 tbs hot pepper flakes, 2 tbs fish sauce, 1 tbs sesame oil, 1 ts salt, 2 cloves of minced garlic. Mix it well with a spoon.
4. Add 5 cups of water. Bring to a boil over high or medium hight heat with the lid closed for about 20 minutes.
*tip: when the soup starts boiling (After 10-13 minutes), skim off any fat or foam that floats to the surface of the soup
5. Lower the heat over medium heat and cook for another 30 minutes.
6. Chop 3 stalks of green onions and add it to the soup.
7. 1 minute later, turn off the heat. The soup is done!
Serve with rice.

Radish Recipe
Radish Recipe, peppery, crunchy radishes are a real spring treat. This healthy radish recipe are an easy way to add spice to your lunches and dinners.
Ingredients -
2 radish
1 tomato
1 tbsp garlic
2 green chillies
1/2 tsp red chilli powder
1 tsp turmeric powder
2 tsp coriander powder
2 tbsp oil
Salt to taste
Preparation -
Heat the oil.
Add garlic, tomato, radish, turmeric powder, salt, red chilli powder, green chillies, coriander powder and mix well.
Add green peas, kasuri methi and mix well.
Add water and cook for sometime.
Serve hot.

Korean Food: Radish Kimchi (깍두기)
Main Ingredients
1 Korean Radish (5 Cups)
2 Green Onions
1 Tbsp Salt
Sauce Ingredients
1 Tbsp Sweet Rice Flour
½ Cup Water
4 Tbsp Red Pepper Powder
3 Tbsp Fish Sauce
1 Tbsp Minced Garlic
1 Tbsp Sugar
½ Tbsp Ginger
½ Tbsp Salt
Yield: ½ Gallon
Korean radish kimchi (kkak-do-gi=깍두기) is one type of Kimchi made with Korean radish. Serve this kimchi with rice, soup and other Korean side dishes.
* I only tried Korean fish sauce to make kimchi, so I recommend you to use Korean fish sauce. Other types of fish sauce might work. If you try another type, let me know the results.
* If you don't have sweet rice flour, you can use normal flour instead, but sweet rice flour is definitely better than normal flour for kimchi.
* Leave the kimchi outside for a day after you make it, then put it in the refrigerator for several days before you serve it. (at least 5 days, depending on your refrigerator temperature.)
