Exploring China: A Culinary Adventure Episode 1
China - the superpower the world fears, but few really know. Ken Hom, the godfather of Chinese cuisine, and Ching-He Huang, leading chef of the contemporary generation, together undertake an epic 3000-mile culinary adventure across China - not only to reveal its food, but its people, history, culture and soul. They begin in Beijing, the imperial capital for 800 years. It is a city where tradition and innovation sit side by side, and where quintessential Chinese dishes - noodles, dumplings and Peking duck - are being showcased with a new culinary confidence. As well as cooking for world-class chefs in the fiery kitchens of the city's most celebrated restaurants, Ken and Ching visit the homes of ordinary Beijingers to learn traditional cooking methods. And in a break-away from the city, they travel to the forgotten village of Chuandixia, where ancient traditions are being celebrated and preserved.

The dish is named after Ding Baozhen , a Qing Dynasty official. Born in Guizhou, Ding served as head of Shandong province and later as governor of Sichuan province. Ding Baozhen was born in Guizhou Province in southwest China. He hired more than ten chefs for his family during his career as an official in Shandong Province. He liked to introduce stir-fried chicken blocks, his most favorite dish to his important guests. Later he became the governor of Sichuan, brought the recipe there and he mixed it with the spicy cooking style of southwest China. He had improved the dish so much and he still liked the dish to be tasted by guests to the governor house. It was strongly welcomed; therefore, someone in the house stole the cooking method and introduced to restaurants. Also, Kung Pao had once been the official title given to Ding Baozhen by the Qing imperial court, so that the stir-fried chicken dish was named after him. Alina Wang, host of "Discovering China" will introduce you to the vast tapestry of traditional Chinese culture. This week you'll be finding out about Confucius, China's most famous philosopher. You'll also be taken to Taipei to hear the judges debrief the chefs who made it through to the semi-finals of NTD's culinary competition. And Margaret trey will talk to Shen Yun dancer William Li about Classical Chinese Dance. It is hard to talk about the values of traditional Chinese society, without mentioning Confucius. Now Ben Hedges takes a look at the story of China's most revered philosopher. After the recent preliminary rounds of NTD's Chinese Culinary Competition in Taipei, Taiwan, the chefs who made it through got a special treat, a forum with the judges about what to expect in the semi-finals and finals, on New York's Times Square. NTD television is a proud media sponsor of Shen Yun Performing Arts and some of Shen Yun's performers have been contestants and winners in NTD's Classical Chinese Dance competitions.
