The fresh fruit is prepared and dried in simple solar driers by 120 producer groups in rural areas: these groups buy fruit from over 800 farmers and employ about 500 labourers. Fruits of the Nile currently operates to FairTrade standards and, through rigorous training, monitoring and quality control, is converting the whole supply chain to organic production. It is hoped that organic certification will expand the export markets for Fruits of the Nile, since all in the supply chain and the business are keen to increase production.

It has a wider array of nutrients, and it has water and so it has fiber and water, so it is more filling. It is going to fill you up, and you will ultimately eat less. Whereas dried fruit it is easier to overeat because it is so concentrated. If you think of two handfuls of raisins, think how many calories you would eat, and you would not probably eat that many grapes if you think of those raisins blown up into their original grape form. So you are just going to more easily overeat with dried fruits. But if you are careful of the portion, they could be a good option, and one benefit over fresh fruits is that dried fruits are not as perishable, so they can stay on the shelf a long time. So when you run out of fresh fruits, you have the dried fruits there. The fresh fruits do lose some of their vitamin C and some of their B vitamins in the drying process, so the dried fruits will have a much lower content of vitamin C and B vitamins, whereas the fresh fruits will have that. So that is one downside. But they have concentrated minerals. Especially there is a lot of iron in dried fruits - that is one benefit to the dried fruits. It really just depends - I would definitely have a variety: I would have fresh fruits and dried fruits on hand. For more on the recipe, check out mimicooks.com 1 ½ cup rice 1 Medium diced onion 4 Tablespoons Cooking oil ½ cup dried apricots ¼ cup raisins-any color ½ cup walnuts Salt, Black Pepper, Allspice, Cardamom Water OR Broth Almonds for garnish -Wash and drain the rice - Slice the Apricots, wash and drain - Wash the Raisins and Walnuts. Drain - Sauté the onion in oil until it becomes golden in color - Add the rice; stir around to mix well with the onions and oil - Add the spices - Add the apricots, raisins and walnuts - Keep stirring to mix well and feel that water has evaporated from the rice mix - Add hot water, cook on high heat for few minutes, cover and continue cooking on low heat until the rice is fluffy and cooked - Garnish with almonds and serve hot. You may serve it next to green salad or plain yogurt.
