Baked Eggplant Patties
RECIPE - Baked Eggplant Patties The Vegetarian Librarian www.veglib.com 1 large eggplant 1 cup olive oil (approximately) 1 cup breadcrumbs 1/2 tsp sea salt + 1 Tbs 1/4 tsp garlic powder fresh ground pepper Peel eggplant in stripes longways, leaving some of the skin on. Remove ends and cut in 1" slices. Place slices in a strainer, cover with about a tablespoon of sea salt and let drain for about a half hour to remove bitterness. Preheat oven to 400 degrees. In a shallow bowl, combine breadcrumbs, 1/2 tsp salt and spices. Place eggplant slice in breadcrumb mixture, cover evenly and tap off any extra breading. Place on a well oiled cookie sheet. Repeat until all are covered with breading. Drizzle with olive oil and bake for 15 minutes. Remove pan from oven, flip patties, drizzle with a little more oil and bake for another 15 minutes. If slices still aren't crisp to your liking, flip the patties again and bake for another 5 minutes. Great with pasta or for sandwiches!

Because most people are intimidated by this vegetable, how to pick a ripe one, and what to do with it once they get it home. But first I want to share with you the health benefits of this vegetable. Eggplants contain a potent antioxidant that protects cell membranes from damage. Studies have shown that it protects the lipids or fat of our brain cell membranes which protects us from free radicals that can alter how our cells communicate with messenger molecules. Its that same phytonutrient that gives eggplant its color. Eggplant may help you sleep better since it contains tryptophan. Eggplant contains many heart healthy nutrients such as fiber, folate, Vitamins B 3 & 6 along with magnesium and potassium. Other healthy phytochemicals in eggplant were studied in their effect in lowering cholesterol. Animal studies showed that when eggplant juice was given, blood cholesterol was lowered, and blood flow improved due to the walls of the blood vessels relaxing. And as an added bonus, just 1 cup of cooked eggplant is only 28 calories. So when choosing an eggplant you want to look for ones that are firm and feel heavy for their size. I'm Sonia, and today we'll be preparing a dish with a very Mediterranean flavour: Eggplant(Aubergine) Parmesan. Let's take a look at the ingredients we'll be using: • 1400ml/6 cups of tomato puree • Extra virgin olive oil • One small onion • Two cloves of garlic • Table salt • Fresh basil leaves • 1.5kg/3lbs eggplant/aubergine • Coarse or kosher salt • 300g/11oz of a firm, savoury Italian cheese suitable for melting • 150g/1 cup grated parmesan cheese • Some canola or vegetable oil for frying the eggplant OK. Let's begin preparing our eggplant parmesan! First slice the eggplant into slices about a centimetre (a little less than a half inch) thick. Now in a sieve resting over a bowl, form layers of the eggplant slices, sprinkling a pinch of coarse salt between each layer. Finish off with another pinch of salt and cover the whole thing with a plate and something to weigh it all down. By doing this, the water that's naturally in the eggplant will drain out into the bowl. The eggplant needs to drain for about an hour and a half. The aubergine is a vegetable that belongs to the solanaceous or potato family, and which is known scientifically as Solanum melongena. It is an herbaceous plant although the stems, with their lignified woody tissue tend to make it resemble a small tree or bush. It is cultivated as an annual. The aubergine plant possesses a very strong deep root system. The stems are strong, hairy and thorny with a determined growth rate when referring to creeping shoots or an indefinite growth rate when talking about straight, erect stems. The main stem includes short internodes which fork out into secondary stems, which then divide at the leaf axils. The leaves are positioned alternately along the stem. They have a long stalk and are large, complete and oval in shape with thorny nerves. The underneath part of the leaves are covered with a greyish down. The flowers tend to droop and can appear either by themselves or in clusters of 3 to 5 flowers. They possess between 5 and 7 green sepals and the same number of elongated violet petals. The stamens have highly developed anthers which are yellow in colour and are situated under the stigma, which makes direct fertilization difficult. The fruit is an egg-shaped or bulbous berry which is black, purple, white or white-tinged purple or green with small yellow seeds. Gaji namul is a sidedish made with eggplants. It's a very traditional Korean vegetarian dish. Hope you like it! Full recipe: www.maangchi.com Ingredients: 3 medium sized Asian eggplant, 2½ tbs soy sauce, 1 chopped green onion, 2 cloves of garlic, ½ tbs of roasted sesame seeds, ½ tbs of sesame oil, 1 ts of hot pepper flakes 1. Cut 3 medium sized Asian eggplants into 2 or 3 pieces. Then cut each piece in half lengthwise 2. Pour 2 cups of water into a steamer, and place the pieces of eggplant inside. Bring to a boil for 15 minutes over high heat. 3. Turn the heat off and move the cooked eggplant to a bowl. Set it aside to cool down. 4. After the eggplant has cooled, drain the liquid from the bottom of the bowl. 5. Tear each piece of eggplant lengthwise with your fingers, and put the strips into a large bowl. 6. Add these seasonings to the bowl: 2 cloves of minced garlic, 1 ts of hot pepper flakes, 1 chopped green onion, ½ tbs sesame seeds, 2½ tbs soy sauce, and ½ tbs sesame oil. 7. Mix it all together with your hand. Serve with rice as a side dish.
