Quick, Simple & Tasty - Try it! Recipe Here... 350g - Chopped Dried Soft Prunes 250g - Raisins 25g - Currants 175ml - Honey 125ml - Tia Maria or similar favourite 2 Oranges - Zest & Juiced (I use less, 2 can make it soggy & too orangey) 1 teaspoon - Mixed Spice 2 tablespoons - Good Quality Cocoa 175g - Softened Unsalted Butter 175g - Dark Muscovado Sugar 3 - Free-Range Eggs, Beaten 150g - Plain flour 75g - Ground Almonds 1/2 teaspoon - Baking Powder 1/2 teaspoon - Baking Soda Try a square tin, it's easier to cut the slices. 300 Degrees F/ 150 Degrees C for around 2 hours. You can slightly alter the flavour elements of this recipe, it's quite forgiving, just keep the quantities about the same to avoid issues. To protect the top of the cake from burning even further, you can insert a disk of greaseproof paper in the top, make it a little larger than the tin, snip it a cm or so around the edges, and it will happily hover above the cake - as long as your oven is not too hot and you don't forget the cake's in the oven, this shouldn't be necessary. Heat the mixture until it reaches a very gentle boil (remember lots of delicate ingredients in there), stirring the mixture as the butter melts. Let the mixture simmer for 10 minutes; remove the saucepan from the heat and leave to stand for 30 minutes. ** Advice for Making Christmas Cake ** This is one of the most difficult recipes we introduced, so please follow the instructions thoroughly. The measurements and whipping time for the batter is critical to make a sponge cake. If the whipping time is not accurate, the sponge cake will become flat. Using a scale to measure the ingredients is absolutely necessary. Please turn on the English caption for the video (click CC button) and follow every single steps. It even explains how many times you need to scoop the batter with a spatula and this process is essential. The ingredient list is described below and we recommend using cake flour instead of pastry flour. Kirsch (cherry brandy) is optional. Baking time depends on various factors like the size of round pan, type of oven you use and so on. I recommend keeping your eyes on the cake while baking. If the height of sponge cake is not enough, you might want to bake another sponge so that your Christmas cake will have 3 or 4 layers. Recipe #2 in my Christmas baking series: Dark Fruitcake 3 cups all purpose flour 2 tsp baking powder 2 tsp ground cinnamon 1 tsp salt 1/2 tsp ground nutmeg 1/2 tsp ground allspice 1/2 tsp ground cloves 16 oz (2 1/2 cups) mixed candied fruits and peel 15 oz package (3 cups) raisins (any kind: I use sultana the cheap kind) 8 oz package (1 1/3 cups pitted whole dates snipped) 8 oz (1 1/3 cups) red and green or red and green candied cherries, whole. 1 cup slivered almonds 1 cup pecan halves 1/2 cup chopped candied pineapple 4 eggs 1 3/4 cups packed brown sugar 1 cup orange juice 3/4 cup butter or margarine melted and cooled 1/4 cup molasses (light or dark) Grease three 8x4X2 inch loaf pans. Stir together flour, baking powder, cinnamon, salt, nutmeg, allspice and cloves. Add fruits and peels, raisins, dates, cherries, almonds, pecans, pineapple; mix well till coated. Beat eggs until foamy, add brown sugar, orange juice, butter or margarine and molasses, beat till combined. Stir into fruit mixture. Turn batter into pans, filling each about 3/4 full. Bake in a 325 F oven for one hour or till cakes test done. Cool thoroughly, remove from pans. Wrap in wine, brandy or fruit juice moistened cheesecloth (I use cherry brandy). Overwrap with foil. Filmed at the Waitrose Cookery School: www.waitrose.com 'Now that you've made the best and easiest cake ever, let's see the easiest way to ice it. 'Make sure you've first fed the cake with brandy, and now comes the creative bit. 'Start by melting about a tablespoon of apricot jam with a tablespoon of brandy. Then give it a good stir to make a glossy, sticky glaze for the top of the cake. 'After that, brush it all over the surface of the cake and this is what will make the marzipan and icing stick. 'First, the marzipan. Soften it with your hands, and then lightly dust the surface with icing sugar. Now roll it out, giving it quarter turns to make a round. 'Then cut a circle with the base of the cake tin and place this over the cake. Now repeat all of this with the icing, rolling it to whatever thickness you like. Then brush the top of the marzipan with more glaze, and place the icing on top. 'Next, take a large snowflake cutter and cut out a shape from one side of the icing. Gently remove the shape from the top of the cake, exposing the marzipan beneath. Now cut another snowflake on the other side of the cake. 'Brush with a little more of the glaze, then gradually, using a teaspoon, fill the cut-out snowflakes with little silver balls just to give it a bit of sparkle. And don't worry if one or two escape.
