Vietnam ~ Black Pepper Harvest
In Vietnam, farm processing to obtain black pepper is mostly manual, with a few farmers using mechanical threshers to separate the berries from the stalk. After sun-drying, the pepper is winnowed to remove stalks, light berries and foreign matter, before selling to collectors, local traders and processors. Farmers sell their pepper, which usually requires further cleaning and drying, at collection centers or ex-farm. Processors prepare black pepper for export, with mechanized processing facilities, handling and packaging equipment and adequate storage facilities. Black pepper is cleaned and light berries are removed to meet specific standards. Some processors also undertake steam-treatment and market black pepper with low bacteria counts. Vietnam has become the world's largest producer and exporter of pepper. Although pepper has been grown in Vietnam for over 150 years, it is only from 1992/93 that it has played a significant role in the international market as producer and exporter. The unprecedented boom in prices during 1998, when the FOB price of black pepper exceeded US$4.00 per kg., motivated farmers in Vietnam to pay more attention to pepper cultivation. This dramatic increase has not only made Vietnam a major player in the pepper industry but has also impacted on world pepper supply and consequently, the price in international markets.

Sixteen years with the magazine, that's pretty awesome. And you have come up with a really delicious recipe called black pepper kettle corn. Now we've all had kettle corn at country fairs but you've incorporated black pepper so you've got a really nice blending a contrast of flavors here. Totally, the really nice thing about it and the thing that's really interesting is that it hits all of the really high snack notes. It's crispy, it's salty, it's a little sweet, and there's a peppery kick. So how do we get started? Well first we've combined the popping corn and canola oil in a nonstick pot. Now you're using canola oil, do you prefer using canola oil over vegetable oil? Well canola oil is very predictable; you know what the flavor is you know exactly what you're getting. With vegetable oil it could be a blend of safflower or sunflower, corn oil. It could be a big mix of different things. I like canola oil because not only is it very consistent but it also only has one gram of saturated fat per tablespoon which makes it really super heart healthy. Operating since the 17th century, the market is situated near the historic Delhi Red Fort, on the Khari Baoli Road adjacent to Fatehpuri Masjid at the western end of the Chandni Chowk, and over the years has remained a tourist attraction, especially those in the heritage circuit of Old Delhi. Pepper has been used as a spice in India since it was introduced by South East Asia people in prehistory. Pepper is native to South East Asia and has been known to Indian cooking since at least 2 BCE. J. Innes Miller notes that pepper was grown in southern Thailand and in Malaysia. Peppercorns were a much-prized trade good, often referred to as "black gold" and used as a form of commodity money. On the other hand, the term "peppercorn rent" refers to a token payment made for something that is in fact being given. The ancient history of black pepper is often interlinked with (and confused with) that of long pepper, the dried fruit of closely related Piper longum. The Romans knew of both and often referred to either as just "piper". In fact, it was not until the discovery of the New World and of chili peppers that the popularity of long pepper entirely declined. Onion Bell Pepper Minced Garlic Cornstarch Oyster Sauce Soy Sauce All Recipes Stir Fry INGREDIENTS: 1 teaspoon beef bouillon granules 1 cup boiling water 2 tablespoons cornstarch 1/3 cup soy sauce 1 pound boneless sirloin steak, cut into thin strips 1 garlic clove, minced 1 teaspoon ground ginger 1/4 teaspoon pepper 2 tablespoons vegetable oil, divided 1 large green pepper, julienned 1 cup sliced carrots or celery 5 green onions, chopped into 1 inch pieces Hot cooked rice DIRECTIONS: 1.Dissolve bouillon in water. Combine the cornstarch and soy sauce until smooth; add to bouillon. Set aside. 2.Toss beef with garlic, ginger and pepper. 3.In a large skillet or wok over medium-high heat, stir-fry beef in 1 tablespoon oil until cooked as desired; remove and keep warm. 4.Heat remaining oil; stir-fry vegetables until crisp-tender. Stir soy sauce mixture and add to the skillet; bring to a boil. Cook and stir for 2 minutes. Return meat to pan and heat through. Serve over rice.
