Our Man In Panama: Part Five
Upon returning home to Toronto after an action packed five days in Panama City, I look back fondly upon the many lunches and dinners that I somehow managed to fit into so few hours.
Panama City is an extremely exciting place these days, with so many wonderful restaurants offering an enormous selection of steadfastly traditional through to avant garde takes upon Panamanian cuisine.

Isla Palenque, Panama | The Island Interns | Kotowa Coffee Tour
You've never taken a more important coffee break in your life.
To read the Island Interns' account of their coffee tour, visit http://amble.com/ambler/category/islandinterns
On a lush mountainside in Panama's Chiriqui province, the Kotowa coffee estate stands as a testament to Panamanian history, sustainable agriculture, and superior coffee. It's a heady brew, and one that owner Ricardo Koyner's family has been perfecting for 4 generations over the last 100 years.
Purveyors of fine coffee commend Koyner on his dedication to keeping his family's time-honored traditions of sustainability alive in every roast. The Kotowa coffee farm and adjacent factory are renowned for producing some of the most sipworthy java on the planet -- ranking #4 among the world's best coffees -- as well as for high yields and uncompromising quality, which can be difficult for an organic producer to achieve year after year. But for someone who takes coffee as seriously as Ricardo Koyner, showing respect for the environment is an intrinsic part of the growing process.
Anyone who takes a tour at Kotowa leaves with the flavor of fine coffee lingering on their tongue and words of praise lingering on their lips. One TripAdvisor reviewer recalled the experience as "a lesson in how a big, successful business can also be incredibly environmentally and socially responsible."
Sustainable Stats at Kotowa:
1 liter of water used per pound of coffee produced (most other mills use up 10-20 liters of water per pound of coffee produced)
All byproducts of milling (pulp, wastewater) go into the production of organic fertilizer used on Kotowa coffee farm
Hand in hand with respect for the environment is the Kotowa commitment to respecting the local community. "With housing, triple pay, and schooling for the kids, it's easy to see that excellent labor incentives lead to excellent products," says Island Intern Ben Brown of his experience touring the Kotowa coffee farm.
At Kotowa, visitors receive a fresh cup of welcome from everyone involved in making the world's best coffee found in Panama: the Koyners, the harvesters and coffee mill workers, and the local tour outfitters. Naturally, everybody takes a great deal of pride and pleasure in bowling over visitors with the potent blend of Panamanian history, sustainable farming techniques, and exquisite coffee varieties to be experienced at Kotowa.
Although they have only lived in Panama since 1998, the Dutch duo of Terry and Hans van der Vooren know Panama like it has always been their home, and they certainly share it with others as if that were the case.
"We love to show off the wonders of Panama's nature, and it's always a joy to see the reaction of somebody who discovers the excellence of Panamanian coffee," the van der Voorens say on their website.
This husband-and-wife team runs Coffee Adventures, a local touring outfitter in Boquete that operates Kotowa coffee tours in addition to offering other adventure touring options in the area, including birding tours of the nearby Sendero de los Quetzales.
Their 3-hour Kotowa coffee tour takes you on a journey from on-the-tree coffee fruits to in-your-cup specialty joe. You'll spend the entire final hour of this touring option inside the charming historic mill (the oldest coffee mill in Panama!) basking in the aromas and flavors of several varieties of Kotowa's world-renowned coffee.
Consider yourself warned. With a memorable coffee tour such as this one, you may leave Kotowa a coffee snob -- as well as a connoisseur of one-of-a-kind travel experiences.
To plan your tour, email Hans & Terry van der Vooren at info@coffeeadventures.net.

Panama City, Panama | The Island Interns | Manolo Caracol: A Fine-Dining Food Adventure
To read Island Intern Ben Brown's review of the dining experience at Manolo Caracol, visit http://amble.com/ambler/category/islandinterns/
Amble's favorite restaurant in Panama City may also be the darling dining spot of other Panama travelers, but probably for reasons all their own - the eclectic Manolo Caracol is always bringing something new to the table, and every visitor leaves with a unique experience in concept dining.
It's a great place to stop in frequently, because the menu always changes to feature the freshest seafood available and the best in-season local produce. The décor is equally varied, a mixture of religious artifacts, funky accoutrements, and whichever fine art installation has most recently captivated owner Manolo Madueño.
Although the variables keep things interesting at Manolo Caracol, there are a number of constants you can rely on when you come for the prix-fixe dining experience at this Casco Viejo institution. For one, the restaurant boasts an impressive wine list and their superb service makes every dinner guest feel like they're in the home of an old friend. If you have dietary restrictions or allergies, you're certain to be accommodated by the dedicated culinary artists at Manolo Caracol.
Whatever unpredictable array of delights Manolo and executive chef Dany Suaya have been cooking up all day, your meal arrives in a parade of beautifully-presented plates, all featuring high-quality natural and organic ingredients from local farmers and fishermen.
Your place setting includes standard utensils as well as a pair of chopsticks, so you know you're in for a culinary experience that reflects Panama's privileged location at the crossroads of East and West. The food at Manolo Caracol takes off from the traditional cuisine of Panama with plenty of kick and fun flavor-play while remaining authentically Panamanian in the sense that it blends tradition and innovation - making this restaurant the perfect complement to the surrounding historic district.
If you walk up to Manolo Caracol as the sun is setting over Panama City, you're likely to find Chef Dany sitting outside in front of the restaurant, sharing a bottle of wine with friends and dinner guests as they wait for the dining room to fill. In the casual atmosphere of Manolo Caracol, you'll never feel underdressed, but you also won't feel out-of-place if you don your best to step out after dinner for a taste of Panama City's vibrant nightlife. The sequence of delectable dishes you've just enjoyed is the perfect preparation for exploring Casco Viejo, a unique place that - like a meal at Manolo Caracol - offers a surprise around every corner.

Rising Tide 6 - New Orleans Food - Continuity and Change
These are fascinating times for food culture in New Orleans. The years following the Katrina flood have seen much upheaval and loss but also innovation and rebirth. Boosters frequently boast that there are now more restaurants open in the city than there were before the storm, but the food scene in New Orleans encompasses much more than just a number of operational businesses. While the industry is certainly a key component of the city's economic health, New Orleanians consider their cuisine a core component of their familial and civic identity. Meanwhile, spurred by trends in popular culture, more American cities can lay legitimate claim to first-class dining scenes. How do such trends affect the way we think about food in New Orleans? During a time of rapid change, are the elements that make New Orleans unique being preserved? And what innovations are occuring here that continue to set us apart as a world class culinary destination? Our panel of New Orleans food writers and professionals will address these issues as well as other challenges and rewards of cooking and eating in a city long defined by its love of both tradition and creativity.
Todd Price - Freelance writer, featured contributor to the Times-Picayune, former food editor at Offbeat Magazine, columnist at New Orleans Living Magazine, contributor toZagat Survey New Orleans, Fodor's New Orleans, blogger at A Frolic of My Own, author of several local dining guides including a New Orleans' Best Bars iphone app.
Peter Thriffley and Rene Louapre - Food columnists at Offbeat Magazine, authors of popular New Orleans food blog Blackened Out.
Chris Debarr - Chef at Green Goddess, formerly of The Delachaise, long time New Orleans "excitable chef" blogger
Adolfo Garcia - Chef & Owner: RioMar, La Boca, a Mano, Gusto, High Hat Cafe, Ancora Pizzaria. From Chef Garcia's bio, "Growing up in New Orleans, Adolfo Garcia was keenly aware of both the city’s culinary reputation as well as dishes his ancestors enjoyed. His family is Panamanian and they loved to travel and explore other cultures. Garcia studied history at the University of Texas, and chose to pursue his passion for gastronomy. Garcia graduated from the prestigious Culinary Institute of America. After stages in high-end London, Madrid, and NYC restaurants, he returned to New Orleans eight years later inspired to cook from an historical perspective. He was ready to introduce traditional dishes, albeit ones wholly new to the city.
Alex del Castillo - Chef and owner of Taceaux Loceaux Alex and Maribeth Del Castillo are among the pioneers in bringing the gourmet food truck trend to New Orleans and leveraging social media tools like Twitter and Facebook to promote it. They've recently added a permanent location taking over the kitchen at Chickie Wah Wah music club.
