Heston's pulled pork with cabbage slaw - Waitrose
bit.ly - "Enjoy my slow cooked pulled pork with cabbage slaw this summer. I'm going to leave you in the capable hands of Otto to take you through the recipe" - Heston Blumenthal. The key to this recipe is the slow cooking of the pork shoulder steaks in the braising liquid, which will turn it into a lovely, thick, smoky barbeque sauce. For that, the first thing we're going to do is make the spice rub. I'm going to take some ground ginger, paprika, mustard powder and salt. I'm just going to quickly mix this and then save part of it to rub on the steak and part of it for the braising liquid. Now to begin the braising liquid, heat up a pan, a little bit of oil, add finely sliced shallots. Now the shallots have lightly caramelised, I'm going to add the garlic. The reason I didn't add this at the beginning is it will turn the garlic quite bitter if you cook it for too long. To this, I'm going to add some muscovado sugar, tomato ketchup, chicken stock, some cider vinegar, a little bit of golden syrup for sweetness. Also tomato passata, tamarind paste, then a little bit of the spice mix that I made earlier. The rest is going to go to rub the steaks. Finally some Worcestershire sauce. So this has been simmering now for about 15 minutes. All the flavours have developed so I'm going to remove it off the heat and blitz it using a hand blender to make it as smooth as possible before I put the steaks in to braise. Delia's trofie pasta Liguria recipe -- Waitrose
bit.ly - Delia's truly ingenious and delicious combination of small pasta, new potatoes and green beans. And like most Italian cooking, it is packed with flavour and simple to prepare at home. 1. First, heat some pasta bowls ready for serving. Then, in a large saucepan, heat 2.25 litres salted water and bring it up to a good fierce boil. Add the pasta, stir once and let it boil briskly for 10 minutes without a lid. 2. Meanwhile make the pesto. Put the basil, garlic, pine nuts and olive oil together with some salt into the goblet of a food processor and blend until you have a smooth purée. Then transfer the purée to a bowl and stir in the grated Pecorino Romano. 3. Next, trim the beans and cut each one into three. Wash and slice the potatoes next, leaving the skins on; they need to be about 3-4mm thick. After the pasta has been cooking for 10 minutes, throw in the beans and potatoes. Now give the ingredients another stir and bring the water back to boil, then set the timer for 8 minutes. 4. After that drain the pasta, potatoes and beans in a colander, not completely, as they need a little water still clinging to them. Then tip everything back into the saucepan, add the pesto sauce, and stir it pretty niftily to give everything a good coating. Serve in the hot pasta bowls with the extra Pecorino Romano in a bowl to sprinkle over. A good accompaniment would be some salad leaves sprinkled with a little extra virgin olive oil and some freshly squeezed lemon juice. For more ...

We fund community projects to help farm workers and their families because Waitrose believe in treating people fairly. The Cape Peninsular has the perfect climate for growing lemons and each pack you buy contributes to the foundation fund. To make Heston's easy and delicious lemon tart start by zesting and juicing three or four lemons, add beaten eggs, caster sugar and butter. Stir the mixture until it thickens. Use Waitrose all-butter pastry for the tart casing and cook it first without the filling. Once the pastry is cooled carefully pour in the lemon filling and put it in the fridge for half an hour, to an hour and it's ready.
