Thanksgiving and Chemistry: What's the connection?
Why do people eat mashed potatoes on Thanksgiving Day but not mashed paper towels? That’s not such an odd question from a chemistry standpoint because potato and paper are almost as similar as two peas in a pod in terms of the carbohydrates they contain.
For the answer to that and other topics that could spark dinnertime conversation on Thursday, the American Chemical Society (ACS) is offering an addition to the holiday menu: A special video on the chemistry of Thanksgiving.
The program features Diane Bunce, Ph.D., recipient of the ACS Helen Free Award for Public Outreach, who discussed the topic in a demonstration at The Catholic University of America (CUA) in Washington, D.C. Bunce is a professor of chemistry at CUA and associate editor for Chemical Education research for ACS’ Journal of Chemical Education.
The video, produced by the ACS Office of Public Affairs, focuses on traditional Thanksgiving foods, including topics such as:
• How does the pop-up timer in a turkey work?
• Why do muffins rise, even when made without yeast?
• Which antacids neutralize the most stomach acid?

YES every article you have read in commercial magazines tell you the difference between "clean carbs" and "dirty carbs"... So here's the facts broken down! I am going to go ahead and practice everything I preach for you guys as well! DO NOT WORRY about what TYPE of carbohydrates will cause fat gain and which will keep you lean! ALL carbohydrates will be recognized by the body and utilized in SAME WAY! Units of energy in the form of glucose! Listen.. Every Carbohydrate CHANGES it's rate of absorption and insulin response with every bit of protein and fat you add to it!! A fast acting carb can suddenly slow wayyyy down to spiking very little insulin by simply adding some fat to it! Peanut butter to your bread! Some carbs WILL spike more insulin than others,it's true.... But that's what's so great!!! INSULIN DOES NOT CAUSE FAT GAIN as long as you are NOT exceeding your daily caloric maintenance! As long as you are are not EXCEEDING the amount of carbohydrates you need daily? Your Lypolysis (Fat Breakdown Process) will continue to balance yout lipogenesis (Fat Storing process) and you will not have to worry about gaining an ounce of fat :) At least not from carbohydrates! There are a million ways to break a $20 bill... It can come from as many coins, little or big bills as you want it to.. As long as there is MODERATION.. you are not running out of a certain bill or type of coin by making up all $20 out of it.. And you do not EXCEED more than $20 given back .. Your register <b>...</b>
