Here is a basic brine recipe that you can use for chicken, pork, turkey and other meats. This brine is a simple combination of salt, sugar, and water and is great at adding both flavor and moisture to meats. Brined meats are also usually more tender. Brine Turkey or Chicken
Here is a very simple and easy brine recipe that is based off of Alton Browns. I left out the candied ginger as it is expensive for a little spice bottle of it. This is so easy and adds tons of juicy flavor to turkey and chicken (or probably any type of bird) no matter how you cook it (smoking, oven, deep frying, etc). www.foodnetwork.com For the brine: * 1 cup kosher salt * 1/2 cup light brown sugar * 1 gallon vegetable stock * 1 tablespoon black peppercorns * 1 1/2 teaspoons allspice berries * 1 gallon heavily iced water Combine the vegetable stock, salt, brown sugar, peppercorns, allspice berries, and candied ginger in a large stockpot over medium-high heat. Stir occasionally to dissolve solids and bring to a boil. Then remove the brine from the heat, cool to room temperature, and refrigerate. Early on the day or the night before you'd like to eat: Combine the brine, water and ice in the 5-gallon bucket. Place the thawed turkey (with innards removed) breast side down in brine. If necessary, weigh down the bird to ensure it is fully immersed, cover, and refrigerate or set in cool area for 8 to 16 hours, turning the bird once half way through brining. -Note: I normally don't turn the bird half way through brining. I've tried the brine turning the turkey/chicken and not turning it and can't tell the difference. The bird is always completely submerged so I simply don't turn it.

Buttermilk Brine For Chicken & Turkey I heart this buttermilk brine SO FREAKIN MUCH!!! If you have never brined whole chicken or turkey before then trust me, you will want to start. A brine is simply a mixture of ingredients that you soak your meat in prior to cooking. There are dry brines and wet brines. I like wet brines better. Brines can add flavor to the meat depending on what spices you add, but most importantly it makes the meat super juicy and tender. Many people brine their whole poultry using salted water or broth (since it's cheaper) but I always prefer good ol buttermilk. (It's only like $3-$4 a gallon and so worth it IMO) Apple juice is also a very popular liquid to brine in. I think buttermilk makes the absolute best brine for chicken and turkey. Not only does it add richness to the meat but it naturally tenderizes it to fall-off-the-bone perfection. So here is one of my all time favorite brines to use on Thanksgiving turkeys. It creates a bird that is ridiculously moist and juicy and has a subtle seasoned taste that doesn't overpower the natural taste of the meat which means it pairs up great with just about any gravy or dressing. Don't let the hot sauce in this brine recipe scare you. Your bird WON'T come out tasting anything like hot sauce. Recipe: How to brine turkey and other poultry Brining is a process that uses a salt solution to tenderize poultry, whether it's turkey, chicken, or Cornish hen. It helps break down connective tissue to make the bird more tender, and adds flavor, moisture and great taste. These instructions are for a 12- to 14-pound bird. If your bird is larger or smaller, adjust the quantities appropriately. Gather your ingredients and supplies: * 16-18 quart container * 2 gallons of water * 4 cups of salt * 4 cups of sugar * 2 ounces of bourbon (more if you like) * 3 cups of ice 1. Add two gallons of water to any container that is large enough to allow the entire turkey to be immersed. (You'll need a container whose capacity is approximately 16 to 18 quarts.) I use brines all the time for lean white meats like chicken and pork. And while a basic brine is great, you can be pretty creative and go outside the box. Here is a brine recipe with some additional flavors that I think bring some great added value to pork. Instead of using all water, go ahead and use some apple juice. And I also use some basic aromatics, like onion, carrot and garlic to add some complexity to the flavors. Make sure you give you pork a good 6+ hours in the brine. New video has been released that shows the formation of a brinicle on the ocean floor. Essentially an underwater icicle, the brinicle, or "finger of death," freezes everything in its path. The temperature of this sinking brine, which was well below 0C, caused the water to freeze in an icy sheath around it. Where the so-called "brinicle" met the sea bed, a web of ice formed that froze everything it touched, including sea urchins and starfish.
