Whether you call it Canadian bacon or back bacon like we do in Canada, this is a delicious and simple way to transform pork loin into a tasty treat!
For the cure, percentages are based on meat weight. It's easiest to measure in grams, just for math. For example, the cure is .25%, so if your loin is 1000g, the calculation is 1000x.0025%, which equals 2.5g of cure. Weigh your meat, run a little math for the percentages, and you're good to weigh out all your ingredients.

Easy to make and so much better than store-bought, this homemade Canadian Bacon recipe will go HAM on your breakfast routine. We rubbed two trimmed pork loins with a homemade curing blend made with maple syrup. After the loins cured for 6-7 days, we smoked them to perfection in an electric smoker.
For this recipe, you'll need:
7 LB – Center Cut Pork Loin, trimmed
8 g – Pink Cure
80 g – Kosher Salt
32 g – Sugar
½ Cup – Pure Maple Syrup
5 TB – Chicken and Waffle Wing Rub or any sweet BBQ rub

What you will need to make this Homemade Bacon recipe:

1 Pork loin (4-6lb roast)
4 cups water (boiled)
4 cups Ice Water
1.5 tbs Prague Powder #1 curing salt - (see link above)
1/2 cup or less depending if you want it less salty
1 cup brown sugar
1/2 cup Canadian Maple syrup
2 tbs garlic
1 tbs black pepper
1 tsp cloves
1 tsp coriander seeds
1 Large Ziplock bag
***HOW TO MAKE THIS RECIPE***
Canadian Bacon Recipe Step #1
First you will need to prepare a liquid curing brine to transform your pork loin into fresh bacon. Take all your ingredients above except your pork loin and place it into 4 cups of water to boil in order to dissolve the salts. Once the salts are dissolved, add in the remaining 4 cups of ice water. This should be enough to bring your boiled water down to a chilled tempreture.
Canadian Bacon Recipe Step #2
Next, once your curing brine is chilled you are going to place your pork loin into a ziplock bag and pour in your curing brine. close the bag up tight while trying to remove as much air as possible. Next you are going to place it in a bowl (to avoid potential leaks) and place it in the fridge for 4-5 days. Each day make sure to flip your bag.
Canadian Bacon Recipe Step #3
After 4 days your pork loin will be fully cured and ready to be smoked. Take our your cured pork loin and rinse off any bits of the brine then place it in a bowl of cold water for 1-2 hours. This will help remove some of the saltiness and give it a more balanced taste. Once that is done, take out your cured pork loin and dry it using paper towel and let it sit open to the air while you get your grill set up for smoking.
Canadian Bacon Recipe Step #4
Once you have your grill set up indirect for smoking you are going to place the cured pork loin on the grill opposite the coals and begin smoking using your favourite hardwood about 225 degrees for around 2 hours or until the internal tempreture reaches 145 degrees. Once your internal tempreture reaches 145 degree take it off the grill and let rest until cool.
Canadian Bacon Recipe Step #5
After it has cooled you are now ready to slice it up and begin to feast. (note: if you leave it in the fridge for a few days it will allow the smoke to distribute throughout the bacon a bit more.)

Whether you call it Canadian bacon or back bacon like we do in Canada, this is a delicious and simple way to transform pork loin into a tasty treat!

Whether you call it Canadian bacon or back bacon like we do in Canada, this is a delicious and simple way to transform pork loin into a tasty treat!
For the cure, percentages are based on meat weight. It's easiest to measure in grams, just for math. For example, the cure is .25%, so if your loin is 1000g, the calculation is 1000x.0025%, which equals 2.5g of cure. Weigh your meat, run a little math for the percentages, and you're good to weigh out all your ingredients.

2% kosher or pickling salt (no additives)
.5% fresh ground black pepper
NOTE: You can't really 'over-cure' with time in this equilibrium cure method. I let this sit for four weeks, so I could get maximum penetration of the seasonings. You could easily go half that time and still have it totally cured...I just wasn't in a rush. 😁
I smoked mine (on the smoker setting) in my Pit Boss for 2 hours with Vermont Castings competition blend pellets. Then, raised the setting to 200F for 1.5 hours, then back to smoke setting until the internal temp hit 140F.
Let cool, then loosely tent in fridge overnight, then slice and package! Smoking process/time and wood selection can vary based on your equipment and preferences. :)

That is, until Alda's National Security Advisor Stuart Smiley (Kevin Pollak) happens to catch a segment on the news about a brawl at a Canadian hockey game that began when local American sheriff Bud Boomer (John Candy) made a remark about Canadian beer. This incident gives Smiley the notion to make the public believe that Canada is their new enemy. Determined to demonstrate the mighty power of America to the Canadians, Boomer gets a group of equally angry fellow Americans together to cross the border and perform the most serious of all Canadian crimes -- littering. However, the invasion is foiled and Boomer's numerous blunders threaten to turn a fabricated war into a real one. Written, directed, and produced by Michael Moore, Canadian Bacon takes lighthearted jabs at the differences between the U.S. and Canada, while also satirizing America's obsession with its military strength. The film features John Candy in his last complete screen performance.

For this recipe, you'll need:
7 LB – Center Cut Pork Loin, trimmed
8 g – Pink Cure
80 g – Kosher Salt
32 g – Sugar
½ Cup – Pure Maple Syrup
5 TB – Chicken and Waffle Wing Rub or any sweet BBQ rub
